SIMPLE MEAT LOAF

- In a small bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into a loaf and place in an 8-in. square baking dish coated with cooking spray., Bake, uncovered, at 350° for 40-50 minutes or until no pink remains and a thermometer reads 160°. Serve with additional ketchup if desired.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
- In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
- Bake at 350 degrees F (175 degrees C) for 1 hour.

- Preheat oven to 350°F. Reserve 1/4 cup of the steak sauce. Mix remaining 1/4 cup steak sauce with all remaining ingredients until well blended.
- Shape into 9x5-inch loaf in greased 13x9-inch baking pan.
- Bake 1 hour. Brush with reserved steak sauce; bake an additional 15 minutes or until meatloaf is cooked through. Let stand 10 minutes before cutting into 8 slices to serve.

Steps:
- put all ingredients in a large bowl and mix with your hands (it's easier,and mixes better than a spoon).
- If mixture is to wet add more bread crumbs,if to dry add more milk.
- Line a 13 x 11 baking sheet with foil.
- Form meat into a loaf on pan.
- cover meat wih ketchup and spread evenly over meat.
- Lay bacon over the loaf and wrap underneath.
- bake in 350 degree oven 45 minutes to 1 hour.
- Serve with garlic mashed potatoes.

Steps:
- preheat oven to 350.
- crush crackers.
- beat egg.
- combine all meat loaf ingredients.
- mould into a log shape.
- place into a deep oblong roasting pan (with lid).
- Surround meat loaf with patatoes and carrots.
- cover with 1 can of tomato soup and all of tomato juice.
- Cover and bake for 1 hour.
- Remove lid.
- add second can of tomato soup, directly on top of meat loaf.
- Return to oven, without lid, and bake another 1/2 hour.
- Enjoy!
- The next day, I make a second meal of the leftovers, by cutting up meat in chunks (leave meat,patatoes and carrots in the sauce) and serve over rice or pasta.
- OPTION: I sometimes add a handful (1/4 cup) of basmati rice to the mixture before cooking.

MEATLOAF FOR TWO
Filled with spices and aromatics then topped with a spicy harissa ketchup glaze, this is not your average meatloaf.

- Preheat the oven to 350 degrees F (180 degrees C). Line a small baking sheet with parchment paper.
- Heat the oil in a medium nonstick skillet over medium-high heat. Add the onions, season with salt and cook, stirring occasionally, until softened, about 5 minutes.
- Meanwhile, combine the ketchup and harissa in a small bowl.
- Put the beef, lamb, breadcrumbs, milk, beaten egg, cilantro, mint, coriander, cumin and paprika in a large bowl. Season with salt and pepper.
- Add the sauteed onions and using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf.
- Pour the ketchup-harissa glaze on top of the meatloaf and spread all over until the sides and top are coated. Bake the meatloaf until the edges have browned, about 45 minutes.
- Allow the meatloaf to rest for at least 15 minutes before cutting and serving.
BETTER THAN MOM'S MEATLOAF
My mom's classic meatloaf was lacking in flavor and the topping was way too sweet. This "better than mom's" version still has lots of old-school appeal but has been kicked up a notch with a rich and savory flavor, plus we said goodbye to the sugary sweet topping. Sliced meatloaf leftovers make the best sandwiches. I like mine with mustard, cheese, and grilled onions!

- Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 9x5-inch loaf pan with cooking spray.
- Combine onion, bell pepper, milk, eggs, garlic, 2 tablespoons ketchup, parsley, 3 teaspoons Worcestershire, thyme, and Dijon in a large bowl and mix well. Stir in bread crumbs. Add ground sirloin, salt, and pepper; mix until just combined. Form mixture into a loaf shape and fit into the prepared pan.
- Combine remaining ketchup with balsamic vinegar and remaining 1 teaspoon Worcestershire in a small bowl. Mix until well combined and spread over the top of the meatloaf.
- Bake in the preheated oven until an instant read thermometer inserted in the center reads 160 degrees F (71 degrees C), about 1 hour. Let stand for 10 minutes before slicing and serving. The longer it sits, the easier it will be to slice.

OLD-FASHIONED MEATLOAF FOR TWO
Steps:
- 1. Preheat the oven to 350°F. Place the chuck, onion, parsley, 2 tablespoons of the chili sauce, the Worcestershire, salt, and pepper in a bowl. Toss together lightly.
- 2. Form the meat into a 5-inch by 3-inch oval loaf in a small baking pan. Spread the remaining tablespoon of chili sauce all over the surface of the meatloaf. Bake for 30 minutes, or until cooked through. Do not overbake.
