TURKEY SLIDERS WITH SWEET POTATO "BUNS"

- In a large skillet, cook bacon over medium heat until crisp; drain on paper towels. Discard all but 2 tablespoons drippings. Set skillet aside. Combine bacon with next 8 ingredients until well mixed; cover and refrigerate at least 30 minutes., Preheat oven to 425°. Cut sweet potatoes into 20 slices about 1/2 in. thick. Place slices on an ungreased baking sheet; bake until sweet potatoes are tender but not mushy, 30-35 minutes. Remove slices; cool on a wire rack., Heat skillet with reserved drippings over medium-high heat. Shape turkey mixture into slider-sized patties. Cook sliders in batches, 3-4 minutes on each side, taking care not to crowd skillet. Add a pinch of shredded cheddar after flipping each slider the first time. Cook until a thermometer reads 165° and juices run clear., To serve, place each slider on a sweet potato slice; dab with honey Dijon mustard. Cover with a second sweet potato slice. Pierce with toothpick.

- In a small bowl, combine turkey, red onion, green onions, egg, hamburger seasoning, Worcestershire sauce and cumin, mixing lightly but thoroughly. Shape into twelve 1/2-in.-thick patties. Grill burgers, covered, over medium heat or broil 4 in. from heat 3-4 minutes on each side or until a thermometer reads 165°., Top with cheese; grill, covered, 30-60 seconds longer or until cheese is melted. Mix mayonnaise and mustard; spread on roll tops. Layer roll bottoms with burger, lettuce and onion. Replace tops.

Few things delight young cooks as much as kid-sized food. These zesty turkey sliders, served with baked potato wedges, are a perfect fit for little hands -- and little appetites. Baking the burgers and "fries" in the oven gives them a healthier spin (plus no spattering grease!). Just make sure a grown-up handles the pans.

- Preheat oven to 425 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss potatoes with oil and arrange in a single layer. Bake on top rack until tender, about 30 minutes, flipping halfway through. Season with salt.
- Meanwhile, form turkey into 8 small patties and place on a parchment-lined baking sheet. Sprinkle with chili powder and season with salt and pepper. Bake on bottom rack until cooked through, 10 to 12 minutes. Place cheese on burgers, return to oven, and bake until cheese is melted, 1 minute. Serve sliders on brioche with lettuce, tomato, ketchup, and mustard, alongside potatoes.

- Measure potatoes into a medium size mixing bowl. Add beaten eggs and mix thoroughly. Add pancake mix and dill and stir to combine. Allow mixture to sit for 5 or 10 minutes. Take a teaspoonful of the cream cheese and roll into small ball about the size of a marble. Using hands, take just enough of the potato mixture to totally surround the cream cheese ball and form into a ball, gently applying just enough pressure to hold potato mixture together. - Spray a 12x17 baking sheet with oil spray. Spread the shredded potatoes evenly on baking sheet. Bake for 10 minutes. Using a flat spatula flatten potatoes firmly against sheet and bake for 10 more minutes. Then broil on low for 5 minutes or until hash browns are lightly browned and crispy.
- Make 12 thin square pork patties. Season both sides of the patty with seasoned pepper. Using a griddle or non-stick pan, brown patties over medium heat for about 4 minutes on each side. Place cooked patties on paper towels and top each with two small squares of Havarti cheese.

- Mix together in a bowl one 20 oz. package of Simply Potatoes Southwestern Style Shredded Hash Browns, one 16 oz of package of ground turkey, and one egg in a mixing bowl. Mix by hand and form into 10 round balls, and then flatten into patties for grilling or frying in a non-stick pan.
- Preheat grill or non stick pan on medium high heat. Cook 5 to 8 minutes on each side until golden brown, top each pattie with one slice of favorite sliced cheese,( i use swiss or cheddar cheese) let cheese slightly melt, remove from pan and place on bun and serve.

- Pull apart the rolls, or slice them if they aren't already sliced. If you are slicing them yourself, slice the tops off the whole sheet of rolls at the same time and carefully set them aside until ready to use.
