SUGEE/SEMOLINA COOKIES
This a very OLD Singaporean/Eurasian (caucasian mixed with asian blood) cookie recipe. I have tweeked it a little to suit my family's taste. Hope you guys enjoy it.

Steps:
- GREASE baking trays lightly with butter and preheat oven to 180 °C.
- Cream butter, sugar and essence until light.
- Sift in flour.
- Add in semolina and ground almonds to combine well into a dough.
- Pinch off pieces and roll into small balls and place on prepared trays.
- Press with a fork.
- Brush lightly with egg white and press two almond strips in the centre of each pressed out dough.
- Bake in a preheated oven for 13 to 14 minutes or until cookies turn golden.
- Leave on the tray for 1 to 2 minutes.
- Remove onto a wire rock to cool.
CHEWY SUGAR COOKIES
This version of the sugar cookie has a slightly crispy edge and a super chewy center--thanks to increasing the sugar and baking at a higher temperature. Roll the cookies in colored sugar instead of granulated for a sparkly upgrade.

Steps:
- Position oven racks in the top and bottom thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment paper.
- Whisk together the flour, baking powder and salt in a small bowl.
- Beat the sugar and butter with an electric mixer on medium-high speed in a large bowl until light and fluffy, about 4 minutes. Add the vanilla and egg and beat to incorporate. Add the flour mixture in 2 batches and beat on medium-low speed until incorporated.
- Put some sugar in a small bowl. Scoop heaping tablespoonfuls of the batter, roll them into balls and coat in the sugar. Arrange the balls on the prepared baking sheets about 2 inches apart. (There will be additional batter for a second batch.)
- Bake until the bottoms and edges are barely golden brown, 12 to 14 minutes. Let the cookies cool for a few minutes on the baking sheets, then transfer them to a wire rack to cool completely. When the baking sheets are cool, repeat with the remaining batter. The cookies can be stored in an airtight container for up to 3 days.
SUGEE COOKIES ( OLIVE OIL )
This Sugee Cookie receipe uses OLIVE OIL which is much more healthy than ghee ( and cheaper too) Smells like butter and sweet!

Steps:
- Sieve flour, sugar, baking powder into a big bowl.
- Add vanilla essence and olive oil gradually.
- Mix well. Knead the dough a few times.
- A soft dough is formed.
- Roll into small balls ( use a teaspoon).
- Insert 1pc chocolate chip.
- Place into ungrease muffin cups.
- Bake 170 C or 350 F for 15-20min.
- Note: Don't grease the muffin cups. You will get burnt cookie bottoms.
- Some cookies might have a little crack on the surface.

- In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extracts. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. - In large bowl, beat softened butter and granulated sugar with spoon until well mixed. Stir in flour until moistened, using hands to mix if needed (dough will be crumbly). Knead 5 to 10 times or until dough is smooth.
- Divide dough in half; shape each half into a log, 5 inches long by 2 inches in diameter.
- Spread 2 tablespoons of the nonpareils or decorating sugar on plastic wrap; roll one log in nonpareils to cover. Repeat to cover remaining cookie log in nonpareils. Wrap dough logs tightly with plastic wrap. Refrigerate about 1 hour 30 minutes or until firm.
- Heat oven to 350°F. Unwrap 1 of the dough logs; cut into 1/2-inch slices. On ungreased cookie sheet, place slices 2 inches apart, reshaping if necessary.
- Bake 12 to 14 minutes or until edges are set. Cool 2 minutes; remove from cookie sheet to cooling rack. Unwrap remaining dough log, and repeat slicing and baking. Cool completely, about 40 minutes.
- To make Powdered Sugar Icing Drizzle: In small bowl, mix powdered sugar and 2 teaspoons of the milk until well blended. If too thick to drizzle, add additional milk, 1/4 teaspoon at a time. Tint with food color. Drizzle over tops of cooled cookies. Sprinkle with nonpareils or decorating sugar. Let stand about 1 hour or until drizzle is set.

- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

- In an electric mixer fitted with a paddle attachment, cream ghee confectioner's (icing) sugar, essence, and salt on medium speed for 5 minutes. Change to a dough hook attachment, add the flour, and knead into a soft dough. Leave covered for 4 hours.
- Using a teaspoon, scoop a heaped teaspoon portion of dough and roll between your palms into a ball, each the size of a marble. Place on the baking tray, spaced well apart. Using a small fork, make impressions by pressing lightly on the centre of each ball, and sliding the fork away from the centre to prevent sticking. (For round-shaped cookies, roll into balls, and press lightly in the centre with your finger).
- Bake for 20 - 25 minutes, until cookies turn lighter in colour. Transfer to a cooling rack. When completely cooled, store in airtight containers.
