2 cups whole milk
1 cup heavy cream
5 ounces bittersweet chocolate, chopped (about 1 cup)
2 tablespoons light-brown sugar
1/4 teaspoon freshly grated nutmeg

Steps:

  • Warm milk and cream in a medium saucepan over a medium-low heat. Add chocolate. Whisk until melted and combined. Add sugar, and whisk until dissolved. Continue to warm mixture until thick, about 5 minutes. Whisk in nutmeg.

I was messing around in my kitchen one day and was craving hot cocoa. Since I only had dark chocolate on hand, I used that, and for a festive touch added cinnamon. Pour into a mug and top with whipped cream or marshmallows, if desired. Serve hot.

1 cup whole milk
1 ½ teaspoons brown sugar, or to taste
2 ounces dark chocolate (such as Moser Roth® 85% Dark Chocolate), or to taste
1 tablespoon heavy whipping cream, or more to taste
1 pinch ground cinnamon, or more to taste

Steps:

  • Heat milk in a saucepan over medium heat until just before boiling, 3 to 4 minutes. Add brown sugar and stir until dissolved, about 1 minute. Stir dark chocolate into milk until melted, 2 to 3 minutes. Remove saucepan from heat and stir cream and cinnamon into milk mixture.

1 inch cinnamon stick
2 teaspoons dark unsweetened cocoa
2 teaspoons sugar
2 teaspoons warm water
1/4 teaspoon pure vanilla extract
1 dash chili powder (optional)
8 miniature marshmallows

Steps:

  • In a mug, combine the cocoa powder, sugar, and water.
  • Heat the milk and the cinnamon stick until slightly bubbling.
  • Remove the cinnamon stick and add the milk to the mug.
  • Combine and add the vanilla extract and slight dash of chili.
  • Top with mini marshmallows.

This is done in your crock pot. It's one of those set it and forget it recipes that always welcome us home in the very nicest way.

4 cups half-and-half or 4 cups light cream
4 cups milk
2 cinnamon sticks
1 (12 ounce) package bittersweet chocolate pieces or 1 (12 ounce) package two 6-ounce packages bittersweet chocolate, chopped
1 tablespoon vanilla
marshmallows (optional)

Steps:

  • 1. In a 3- to 4-quart slow cooker, combine half-and-half, milk, and cinnamon sticks. Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2-1/2 to 3 hours.
  • 2. Remove and discard cinnamon sticks. If necessary, skim "skin" from surface; discard. Stir in chocolate pieces; whisk until chocolate is melted and smooth. Stir in vanilla. Serve immediately or keep warm, covered, on warm setting or low-heat setting for up to 2 hours. If desired, float marshmallows on top of individual servings. Makes 12 (3/4-cup) servings.

1 quart milk (may use soy, almond, cow, rice milk)
1/4 cup unsweetened cocoa
1/4 cup sugar
2 ounces dark chocolate, finely chopped (or semi sweet chocolate)
2 teaspoons pure vanilla extract

Steps:

  • In 2-quart saucepan, heat milk to simmering over medium heat.
  • With wire whisk, stir in cocoa, sugar, chocolate, and vanilla. Heat mixture 3 minutes or until chocolate melts, stirring occasionally.
  • Pour into warm mugs to serve.

  • Prepare Hot Dark Chocolate as above, but add 1 cinnamon stick (3 inches long) to milk in step 1.
