STRAWBERRIES AND CREAM POPS
We transformed vanilla pudding into a frozen layered treat sweetened with strawberries and honey.

Steps:
- Place paper cups in rectangular pan. Make pudding as directed on box for pudding, using milk. Spoon about 1 1/2 tablespoons pudding into each cup.
- In blender, place strawberries and honey. Cover; blend on high speed 30 seconds or until pureed. Pour strawberry mixture over top of pudding, dividing evenly among cups. Spoon about 1 1/2 tablespoons pudding over strawberry mixture.
- Cover each cup with foil; insert stick through foil into each pop. Freeze 2 hours or until firm. To serve, remove from cups.

Steps:
- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and egg whites. Cool completely.
- Line cookie sheet with waxed paper. In large bowl, beat powdered sugar, cream cheese, butter and jam with electric mixer on medium speed until blended. Crumble cake into cream cheese mixture; mix well. Stir in dried strawberries. Shape into 2-inch balls; place on cookie sheet. Freeze until firm. When cake balls are firm, transfer to refrigerator.
- Spoon about 2 tablespoons melted red candy into pink candy; swirl gently. Remove several cake balls from refrigerator at a time. Dip tip of 1 lollipop stick about 1/2 inch into melted candy and insert stick into 1 cake ball no more than halfway. Dip each cake ball into swirled candy to cover; tap off excess. (Spoon more red candy into pink candy as needed.) Poke opposite end of stick into foam block. Sprinkle with pink sugar. Let stand until set.

- Pulse strawberries with sugar and 1/3 cup water in food processor until pureed, with some chunks of berries remaining. Pour half of mixture into a bowl.
- Pulse remainder until smooth. Stir puree into mixture in bowl. Pour into 3-ounce molds or plastic cups, insert sticks or wooden spoons, and freeze until solid, at least 8 hours.

Steps:
- In blender, blend all ingredients about 1 minute until smooth.
- Pour into eight 3-ounce, wax-coated paper cups. (Like Dixie Cups).
- Place in shallow pan and insert a wooden popsicle stick or plastic spoon into the center of each.
- Freeze until firm, about 4 hours.
- After pops are frozen, they can be transferred to a reclosable plastic bag for freezer storage.
- To release pops from cups, dip briefly into hot water up to rim of cup.

SKINNY FROZEN STRAWBERRY BITES RECIPE
Steps:
- In a blender combine the pecans, coconut, honey and olive oil until fully combined and at a desired crust texture.
- Spray a mini cupcake tin with non-stick cooking spray.
- Press the pecan mixture into each individual hole of the tiny cupcake tin.
- Clean blender and add your strawberries.
- Blend until it is a smooth liquid-like smoothie.
- Pour the blended strawberries into a small bowl and fold in the Greek yogurt.
- Fold until it is fully combined.
- Spoon the strawberry mixture on top of the pecan crust until it reaches the top. Do not let it bubble or pour over, because it will make them tricky to get out, or make them look not as cute.
- Place the pan in the freezer and freeze for 30 minutes to an hour.
- Once they are frozen, spoon the Skinny Frozen Strawberry Bites out of the pan or go around the edges with a knife to pop them out.
- Serve immediately and enjoy!

- Preheat oven to 400°F. Line a cookie sheet with parchment paper. Place the strawberries onto the cookie sheet and roast for 25 minutes, stirring half way.
- Allow the strawberries to cool slightly before placing in blender. Pulse 2 to 3 times– enough so the strawberries become pureed but some chunks remain.
- In a medium bowl, whisk together remaining ingredients. Scoop 1 tablespoon of strawberry puree into each popsicle mold, then fill it 1/2 way up with the “cream.” Dollop 1/2 tablespoon of puree on top, then fill nearly to the top with the cream. Finish with another 1/2 tablespoon of puree on top. Fit with popsicle stick and freeze for at least 4 hours, preferably overnight.
