Take a jar of tomato sauce, beef mince, mozzarella cheese and a baguette and you have this speedy supper - serve with basil

500g pack lean beef mince
350g jar tomato and chilli pasta sauce
1 baguette
2 x 125g balls mozzarella , drained and torn
small handful basil , torn

Steps:

  • Heat a large frying pan and crumble in the mince. Fry over a high heat for 8 mins until completely browned. Pour in the tomato sauce and leave to bubble, uncovered, for 15 mins until thickened. Taste and season if you need to.
  • Heat the grill. Cut the baguette in half lengthways, then cut the halves into 2 pieces. Place the bread, cut-side up, on a baking tray and grill for 2-3 mins until lightly toasted. Remove from the grill and divide the mince between the pieces. Scatter over the torn pieces of mozzarella.
  • Grill for 3-4 mins more, until the cheese is bubbling and golden. Scatter with the basil and serve with a salad, if you like.

1/3 cup purchased black bean dip
1 cup shredded Monterey Jack cheese with jalapeño peppers (4 ounces)
Salsa and guacamole, if desired

Steps:

  • Heat oven to 425°. Cook beef in 10-inch nonstick skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in taco seasoning mix.
  • Place pizza crust on ungreased cookie sheet. Spread evenly with bean dip. Spoon beef over bean layer. Sprinkle with cheese.
  • Bake 8 to 10 minutes or until cheese is melted. Cut into wedges. Serve with salsa and guacamole.

1 pound lean ground beef (90% lean)
1 medium onion, chopped
1/4 cup chopped green pepper
1 jar (14 ounces) pizza sauce
3 ounces sliced turkey pepperoni (about 50 slices), chopped
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
6 hamburger buns, split
6 tablespoons shredded part-skim mozzarella cheese

Steps:

  • In a large nonstick skillet, cook the beef, onion and pepper over medium heat until meat is no longer pink. Drain if necessary. Stir in the pizza sauce, pepperoni and herbs. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Spoon 2/3 cup beef mixture onto each bun; sprinkle with cheese. Place on a baking sheet. Broil 3-4 in. from the heat for 1 minute or until cheese is melted. Replace tops. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. ½ medium onion, diced
1 medium red bell pepper, diced
2 cloves garlic, minced
2 cups beef broth
¾ cup ketchup
1 teaspoon prepared yellow mustard
2 tablespoons brown sugar
1 teaspoon salt
½ teaspoon ground white pepper
2 dashes Worcestershire sauce
1 pinch cayenne pepper, or to taste
1 large egg
1 tablespoon water
1 (14.1 ounce) package refrigerated pie dough for a double-crust pie
6 slices Cheddar cheese

Steps:

  • Heat a large skillet over medium heat. Cook and stir ground beef and onion in the hot skillet until browned and crumbly, 7 to 8 minutes. Add bell pepper and garlic; cook and stir until tender, 2 to 3 more minutes.
  • Add 1 cup beef broth, ketchup, mustard, brown sugar, salt, pepper, Worcestershire sauce, and cayenne pepper; bring to a simmer. Add remaining 1 cup broth and reduce heat to low. Simmer until mixture becomes very thick, 30 to 45 minutes. Taste and adjust for salt, pepper, and cayenne as needed.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Whisk egg and water together in a small bowl.
  • Roll out both pie crusts on a lightly floured surface and cut out six 5-inch circles. Place a slice of Cheddar cheese in the center of each circle and top with Sloppy Joe mixture.
