SLOW COOKER BBQ APPLE CIDER PULLED PORK
Pulled pork made in a slow cooker with apple cider. One of the best and easiest pulled pork recipes I've ever used. Serve in a sandwich, or as desired.

Steps:
- Place pork into the bottom of a slow cooker and pour cider over the meat until it is covered. Add brown sugar and cinnamon, making sure they're in the cider and not on the sides of the slow cooker.
- Cover and cook on Low until pork shreds easily, 7 to 12 hours.
- Transfer pork carefully to a plate or bowl, being careful it doesn't fall apart in the cider. Shred using 2 forks. Stir in barbecue sauce.

- Stir celery, onion, barbeque sauce, ketchup, water, garlic powder, chili powder, salt, and pepper together in a slow cooker. Place roast into the mixture.
- Cook on Low for 7 hours (or High for 5 hours). Shred the meat with two forks and stir into the liquid; cook for 1 hour more.

- Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.
- Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices.
- Spread the inside of both halves of hamburger buns with butter. Toast the buns, butter side down, in a skillet over medium heat until golden brown. Spoon pork into the toasted buns.

- Prepare the dry rub and truss the pork. In a small bowl mix together the salt, pepper, paprika, and cinnamon. Truss your pork along its length (on your own or ask your local butcher) using kitchen twine, leaving approximately 2-inches between each section. Sprinkle the dry rub over the entire surface of the pork and use your fingers to rub into the pork, coating evenly.
- Prepare the dressing. In a medium mixing bowl whisk together the whole grain mustard, dijon mustard, apple cider vinegar, sugar, salt, pepper, and grapefruit juice. Season with additional salt and pepper, to taste. Set aside.

- Whisk all ingredients together in a medium saucepan set to medium heat. Bring to a boil, then reduce heat to low. Cook for 30-45 minutes, whisking occasionally, until sauce has thickened. Remove from heat. Pour sauce into a re-sealable jar or container. Refrigerate until ready to use. Sauce will continue to thicken as it cools.
- Place pork into your slow cooker. Rub brown sugar and Tony Chachere's No Salt Seasoning Blend all over pork. Cover and cook on High heat setting for 4 hours. Flip pork over after first 2 hours.Remove pork to cutting board, and shred using 2 forks. Return shredded pork to slow cooker. Mix with remaining juices and barbecue sauce. Cover and cook on Low heat setting for 15 minutes, or until warmed.
- Using a slotted spoon, spoon about 1/2 cup of pork mixture on bottom half of each bun. Cover with top half of each bun. Pork mixture can be kept warm on Low heat setting up to 2 hours; stir occasionally.
