I bake my family-favorite fall cake to usher in this abundant season. It looks so luscious that eating one piece is nearly impossible. -Jamie Jones, Madison, Georgia

8 ounces cream cheese, softened
1/4 cup sugar
1 large egg
CAKE:
1-3/4 cups sugar
1 cup canola oil
3 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/4 teaspoon baking soda
2 cups chopped peeled tart apples
1 cup shredded carrots
1/2 cup chopped pecans, toasted
PRALINE ICING:
1/2 cup packed brown sugar
1/4 cup butter, cubed
2 tablespoons 2% milk
1/2 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/4 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a small bowl, beat cream cheese and sugar until smooth; beat in egg. , For cake, in a large bowl, beat sugar, oil and eggs until well blended. In another bowl, whisk flour, baking powder, cinnamon, salt and baking soda; gradually beat into sugar mixture. Stir in apples, carrots and pecans., Transfer half of the batter to prepared pan; layer with cream cheese mixture, then remaining batter. Bake 50-60 minutes or until a toothpick inserted in cake portion comes out clean. Cool 10 minutes before removing to a wire rack to cool completely., For icing, in a large saucepan, combine brown sugar, butter and milk; bring to a boil. Cook and stir 1 minute. Remove from heat; whisk in confectioners' sugar and vanilla until smooth. Drizzle over cake. Sprinkle with pecans.

With the onset of cooler temperatures and autumn just around the corner, my thoughts turn to the fruit of the bountiful harvest season--apples! This particular recipe is not only a contest winner, but has garnered rave reviews, including "awesome," "new family-favorite" and "best apple cake EVER." The cream cheese and carrots are welcome additions that add to the cake's moistness, and the caramel icing only enhances the apple flavor. If nuts aren't your ingredient of choice, omit the pecans and try sprinkling coconut over the cake before the icing sets. Either way, one melt-in-your-mouth bite later, you'll understand why fall is known as the season of abundance.

Steps:

  • In small bowl, beat cream cheese and 1/4 cup sugar until smooth. Beat in 1 egg; set aside.
  • In large bowl, beat oil with remaining sugar and eggs until well blended. Combine the flour, baking powder, cinnamon, salt and baking soda; gradually beat into oil mixture until blended. Stir in apples, carrots and pecans, if desired.
  • Transfer half of apple batter to greased and floured 10" fluted tube pan; layer with cream cheese mixture and remaining apple batter.
  • Bake at 350 degrees for 50-60 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely.
  • In large saucepan, bring brown sugar, butter and milk to boil. Cook and stir for 1 minute. Remove from heat; whisk in confectioner's sugar and vanilla until smooth. Immediately drizzle over cake. Sprinkle with pecans and/or coconut, if desired, before icing sets up.

3/4 cup butter or 3/4 cup margarine, melted
1 1/2-2 cups sugar (I used 1.5C, and it's not super sweet. I think 2C would very good)
2 medium eggs or 2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk (I reconsitituted dried buttermilk)
1 1/2 cups applesauce
1/2 teaspoon salt
2 teaspoons baking soda
1/3 cup unsweetened cocoa
Your choice of icing or frosting.

Steps:

  • Preheat oven to 350 degrees and oil a 9x13 baking dish. With a mixer or whisk, combine sugar and melted butter. Add eggs and vanilla extract. Beat well until creamy. Beat in applesauce and buttermilk/yogurt/sour milk. Add salt, baking soda, cocoa, and flour. I sifted all of the dried ingredients onto parchment paper, then added it slowly to my mixer while it was stirring. This helped inhibit clumps from forming. Otherwise, mix it for a couple of minutes to make it smooth (200 strokes if mixing it by hand). Pour batter into oiled baking dish. Bake for 35-45 minutes or until a toothpick comes out clean. Allow to cool before spreading icing on top.
