3 lb beef chuck roast (trimmed of excess fat*)
1 tablespoon vegetable oil
6 French rolls or hoagie buns
12 slices provolone cheese
1/3 cup reduced sodium soy sauce
1 cup Coke (NOT diet)
2 10.5 oz. cans beef consommé **
1/4 cup dried minced onions
1 tablespoon beef bouillon
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
1 bay leaf

Steps:

  • Heat vegetable oil over medium high heat in a cast iron skillet. Using two forks or tongs to hold roast, sear on all sides until lightly browned. Add to slow cooker and top with all remaining Slow Cooker ingredients.
  • Cook on LOW for 4 hours then remove roast to a cutting board. Thinly slice roast across the grain. Place sliced meat back in slow cooker and continue to cook on LOW for 1-2 additional hours.
  • When ready to serve, remove roast and strain fat from broth for dipping.
  • Split rolls and line the bottoms on a baking tray. Top each half with beef followed by 2 slices cheese. Bake at 350 degrees F or until cheese is melted. Serve with reserved au jus.

1-1/2 teaspoons onion powder
1-1/2 teaspoons garlic powder
1/2 teaspoon Creole seasoning
1 carton (26 ounces) beef stock
12 whole wheat hoagie buns, split
6 ounces Havarti cheese, cut into 12 slices

Steps:

  • Cut roast in half. Mix onion powder, garlic powder and Creole seasoning; rub onto beef. Place in a 5-qt. slow cooker; add stock. Cook, covered, on low 8-10 hours or until meat is tender., Remove beef; cool slightly. Skim fat from cooking juices. 2 Tablespoons olive oil
1 can beef consommé
1 can beef broth
1 onion (sliced)
1 Tablespoon soy sauce

Steps:

  • Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.
  • Place the roast into the slow cooker. Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce.

1 cup beef broth

1 can beer (I like a dark beer)
1 yellow onion (diced)
6 hoagie rolls
2 tablespoons butter
12 slices Provolone Cheese

Steps:

  • In a large dutch oven, or if you have an aluminum insert for your slow cooker add the canola oil and heat on high.
  • Add the Kosher salt and pepper to your chuck roast.
  • Brown on both sides aggressively (3-5 minutes on each side).
  • Don't move the beef before flipping (this lets the meat get a deep crust).
  • In a slow cooker add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer and onions.
  • Cook on low for 6 hours.
  • Remove the meat and slice thickly.
  • To assemble, butter your hoagie rolls and toast.
  • Top with provolone cheese.
  • In a small bowl add a cup of the liquid from the slow cooker and dip the sandwich in the bowl.

21 ounce condensed French Onion Soup (2 10.5 ounce cans)
10.5 ounce can Beef Consommé
2 cloves garlic (minced )
1 tablespoon Worcestershire sauce
8 sandwich or hoagie rolls
8 slices provolone cheese

Steps:

  • Place the roast in crockpot. Pour the soup and consomme over the top and then add garlic and Worcestershire sauce.
  • Cover and cook on low for 8 hours or high for 4 hours. (For the most tender beef, cook on low)
  • For the dipping sauce, once beef is done cooking, remove 3 cups of the juice from the crockpot and place in small saucepan. Turn heat to medium and bring to a boil. Reduce heat and let cook for about 10 minutes or reduced by about half.
  • Preheat oven to 350°F.
  • Transfer the beef to a plate or cutting board and cut into thin slices or shred with a fork.
  • Open sandwich rolls and lay out on a baking sheet, place meat on each roll and top with provolone cheese. Cover with foil and bake for 5 minutes or until cheese is melted and rolls are slightly toasted.
  • Serve immediately with the dipping sauce on the side.

These are yummy sandwiches for those that like roast beef and French onion soup. It is mainly on the slow cooker, but it requires a bit of prep on the stove, too.

5 tablespoons olive oil, divided
2 large onions, thinly sliced
3 tablespoons butter, divided
1 teaspoon white sugar
½ teaspoon salt
3 cloves garlic, minced
9 tablespoons water
¼ cup dry vermouth
2 ½ cups beef stock
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon fresh thyme
1 bay leaf
¼ teaspoon ground black pepper
3 pounds rump roast
salt and ground black pepper to taste
8 French rolls, split
1 (6 ounce) package grated Gruyere cheese

Steps:

  • Heat 3 tablespoons olive oil over medium heat in a large, deep pot. Add onions and toss to coat with oil. Cook, stirring often, until softened, about 15 minutes. Add 1 tablespoon butter. Cook and stir until onions start to brown, about 15 minutes more.
  • Stir sugar and 1/2 teaspoon salt into the onions in the pot. Continue to cook, stirring once halfway through, until onions are well-browned, 10 to 15 minutes more. Mix in garlic and cook for 1 minute more.
  • Stir 3 tablespoons of water into the pot, scraping bits from the bottom. Let simmer for 3 minutes; repeat with an additional 3 tablespoons water. Simmer for 3 minutes more and repeat. Add vermouth; scrape bits from the bottom and sides of the pot. Cook for 4 minutes more. Add stock, Worcestershire sauce, soy sauce, thyme, and bay leaf. Simmer for 10 minutes; do not boil.   • Trim any excess fat from the rump roast. Sprinkle all sides with salt and pepper. Heat remaining 2 tablespoons olive oil in the pot over high heat. Cook the meat, holding it down with tongs, until browned on all sides, about 10 minutes. Transfer meat carefully to the slow cooker. Spoon the soup over the meat so that it is topped with a few onions. Cover and cook on Low for 4 hours.
  • Remove meat from the slow cooker. Slice it diagonally and return slices to the slow cooker. Continue to cook on Low for 2 hours more.
  • Preheat the oven to 350 degrees F (175 degrees C). Spread rolls with remaining 2 tablespoons butter; place face-down on a baking sheet.
  • Bake rolls in the preheated oven until beginning to brown, 8 to 10 minutes. Remove from the oven, flip, and sprinkle with Gruyere cheese. Set oven rack about 6 inches from the heat source and turn on the oven's broiler. Broil rolls until cheese is slightly bubbly and lightly browned, 2 to 4 minutes.

2-3 pound beef chuck roast or rump roast
3 cups low sodium beef broth
1/4 cup worcestershire sauce
2 tablespoons extra virgin olive oil
2 yellow onions (quartered and thinly sliced)
3 cloves of garlic (minced)
1 bay leaf
salt/pepper
4-6 rolls (nothing too soft or it will fall apart once dipped)
8-12 slices cheese (provolone, swiss, havarti or monterey jack)

Steps:

  • Liberally salt and pepper your roast.
  • In a large glass measuring cup, combine the beef broth and worcestershire sauce and set aside.
  • In a large cast iron skillet, dutch oven or in your Instant Pot in sauté mode, heat oil on medium-high heat, add the meat and sear on all sides until each side has a nice brown crust formed. Transfer meat into your slow cooker (if using) OR remove the meat from your Instant Pot and continue.
  • Reduce the heat to medium, and in the same pot you browned the meat in, add the sliced onions and cook for 5 minutes, adding more oil if necessary. Add the chopped garlic and cook for an additional minute or two. Pour a couple tablespoons of the beef broth mixture into the pot with the onions and using a wooden spoon, scrape up all the browned bits from the bottom of the pan (this will add lots of flavor).

1 tablespoon oil (olive oil, vegetable oil, or canola oil work well)
8-12 hoagie buns (if you place A LOT of meat in each bun you'll easily get 6 sandwiches. We got 10-12)
Provolone cheese
1/3 cup reduced sodium soy sauce
1 cup Coke
3 1/4 cups reduced sodium beef broth
1 tablespoon beef bouillon (or 3 cubes crushed)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground pepper
pinch thyme
1 bay leaf
1/3 cup dried minced onions

Steps:

  • In a large skillet set over medium high heat, heat the oil. Sear the roast on all sides until browned, about 2 minutes each side. Place the seared roast in the slow cooker.
  • Add the remaining ingredients to the crock pot: soy sauce, coke, beef broth, beef bouillon, garlic powder, onion powder, oregano, salt, pepper, thyme, bay leaf, and dried minced onions.
  • Cook on low for 4 hours.
  • Remove roast from slow cooker and place on a cutting board. Cut the roast into thin slices. Return the sliced meat to the slow cooker and cook on low for another 1-2 hours. (I cooked ours for 1.5 hours).
  • Remove bay leaf. Strain the fat from the broth. You'll use this broth for dipping.
  • Preheat the oven to 350°F. Line the hoagie rolls on a baking sheet. Place the buns in the oven for 5-6 minutes or until toasted. Then add meat to one side of the bun and then place 1-2 slices of provolone cheese atop the meat. Place the meat covered hoagies back in the oven until cheese is melted.
  • Remove from the oven. Serve with the reserved au juice.

I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

4 lbs bottom round beef roast
1 (1 1/4 ounce) envelope onion soup mix
1 (19 ounce) can progresso French onion soup (not condensed soup)
1 (12 ounce) can beer
3 beef bouillon cubes
1/4-1/2 teaspoon fresh coarse ground black pepper
salt
10 kaiser rolls (or your favorite hard rolls)
provolone cheese (optional)

Steps:

  • Place roast in 4.5 - 6 quart slow cooker.
  • Sprinkle with onion soup mix and then pour onion soup and beer over it.
  • Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
  • Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
  • Remove meat and slice or shred; return to slow cooker and cover.
  • Turn to low and let meat soak up the juices until ready to serve.
  • Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.

3 lb chuck roast
2 tbsp olive oil
1 sweet onion, peeled and sliced thin
3 garlic cloves, crushed and peeled
3 cups beef stock
1/4 cup dry red wine
2 tbsp dijon mustard
1 tbsp Worcestershire sauce
1 tsp kosher salt
1 tsp black pepper
5 sprigs of fresh thyme
1 bay leaf
8 long rolls
1 cup shredded Swiss cheese

Steps:

  • Trim the excess fat from the chuck roast. Season liberally with salt and pepper.
  • Heat the olive oil in a large skillet over high heat.
  • Add the chuck roast to the pan and cook for 4-5 minutes until brown. Flip the roast over and brown on the opposite side, approximately 4-5 minutes. Continue to flip and cook the roast until all sided are browned.
  • Transfer the roast to the slow cooker.
  • Place the onions and garlic on top of the roast.
  • Whisk together the stock, wine, mustard, Worcestershire sauce, salt and pepper. Pour the stock mixture over the beef. Add the thyme and bay leaf.
  • Cover and cook on high for 4 hours or low for 6 hours.
  • When the roast is fork tender, transfer to a serving platter.
  • Skim the excess fat from the top of the stock mixture with a spoon.
  • Arrange the beef in long rolls and top with cheese. Serve the sandwiches with bowls filled with stock (au jus).

These French Dip Sandwiches are one of our favorite slow cooker beef recipes! Perfect party food or for meal prepping during the week!

3 - 4 pound boneless chuck roast
2 tablespoons olive oil
1 tablespoon butter
Kosher salt, black pepper, garlic powder, steak seasoning and flour for seasoning the beef
2 (10.5 ounce) cans of condensed french onion soup
1 cup water
1 bay leaf
1 fresh sprig of rosemary
24 slices of provolone cheese (can substitute mozzarella if desired)
6 sub rolls

Steps:

  • Add the oil and butter to a large skillet over medium-high heat. Season the chuck roast generously on both sides with salt, pepper, garlic powder and steak seasoning. Dust the beef lightly in flour, tapping off any excess flour.
  • Add the chuck roast to the skillet and sear for 4-5 minutes on both sides until a brown crust forms.
  • Remove the chuck roast from the skillet and place it into the basin of your slow cooker. Pour in the french onion soup along with 1 cup of water. Add the rosemary and bay leaf and then cover the crock pot and turn on low for 8 hours or on high for 4-5 hours. This will depend in the size of your roast, a larger chuck roast will take a little longer to become tender.
  • Preheat the oven to 400 degrees.
  • Remove the beef from the slow cooker onto a board to cool slightly. Shred the beef with two forks and return to the slow cooker with the juice. Set the slow cooker on high, uncovered for 30 minutes.
  • Open up the sub rolls and add 2 slices of provolone cheese to each side. Place in the oven to lightly toast the rolls and melt the cheese, about 5-7 minutes.
  • Remove the rolls from the oven and add the shredded beef to each roll. Drain most of the juice during this step, as the rest of the au jus will be used for serving.
  • Serve the sandwiches with the au jus from the slow cooker on the side for dipping.

2 lbs. thin sliced Roast Beef (see notes)
2 (1 ounce each) packets Brown Gravy Mix (*I prefer McCormick Brand - IGNORE THE PACKET INSTRUCTIONS)
2 (1 ounce each) packets Au Jus Sauce Mix (*I prefer McCormick Brand - IGNORE THE PACKET INSTRUCTIONS)
5 cups cold water
1 large yellow onion, cut in half, and sliced thin (OPTIONAL) (see notes)
6 to 8 Hoagie or Submarine Rolls/Buns
Provolone or Swiss Cheese, sliced (*or any cheese of your choice)
butter, for spreading on the buns for serving (optional)

  • In a large bowl, or in your slow cooker, add your cold water and gravy packets and whisk it together so there are no lumps. There will be extra sauce/liquid after cooking, you can use this extra au jus for dipping!
  • Add your roast beef to the slow cooker. Separate each slice of roast beef as you add it to the slow cooker so it will cook and heat evenly.**If you have a smaller slow cooker, it will look super full of meat. After adding all of the roast beef, press the meat in to the gravy mixture so it is mostly covered. The meat shrinks a bit and settles in the sauce as it cooks!
  • Add your sliced onion to the meat and gravy/sauce if you are adding onions. If adding peppers add them as well.**If you are adding mushrooms, wait and add them to the slow cooker the last 5 minutes of cooking time.
  • The meat just needs heated through and given time to soak up the savory flavor of the gravy and au jus. Cook the roast beef on low for 4-6 hours. (Mine never needs 6 hours and is always done after 4 hours or less). Or on high for 2-3 hours. Using tongs, gently stir the meat half way through cooking if you can. (Not super important but if you can, do it!)
  • When you are ready to eat, set your oven to BROIL at 450°. Slice your rolls in half. Spread some butter on each half of the roll and top with your cheese ( I always use at least 2 slices). Let the rolls broil for a few minutes until the cheese is melted to your liking. Watch them closely so they don't burn!**This is optional. You do not have to broil your buns in the oven to melt the cheese! You can just slice your buns, add the cheese and top it with the roast beef!
  • Once the cheese is melted, add the meat and onions (optional) to each sandwich. Get a small dish of the au jus sauce for dipping if desired!
  • This French Dip can be stored in an airtight container in your fridge for about 3 days and can be reheated in your microwave!

You no longer need to run to the nearest sandwich shop for a quality french dip! Remake this flavorful sandwich at home easy in a slow cooker.

5 lb chuck roast
2 tbsp canola oil
1 tsp kosher salt
½ tsp coarsely ground black pepper
1 cup beef broth
1 tbsp Worcestershire sauce
1 can beer
1 diced yellow onion
6 hoagie rolls
2 tbsp butter
12 slices provolone cheese

Steps:

  • In a large dutch oven or in the aluminum insert of the slow cooker, add the canola oil and heat on high.
  • Add the Kosher salt and pepper to the chuck roast.
  • Brown on both sides aggressively for 3 to 5 minutes on each side.
  • In a slow cooker, add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer and onions.
  • Cook on low for 6 hours.
  • Remove the meat, then slice them thickly.
  • Butter the hoagie rolls and toast.
  • Place the thickly sliced chuck roast on the rolls, and top with the provolone cheese.
  • In a small bowl, add a cup of the liquid from the slow cooker.
  • Dip the sandwich in the bowl of liquid, and enjoy!

This makes a delicious French dip sandwich, perfect for the working mom! Nobody, not even teetotalers, have been able to detect the presence of beer in this recipe, but it adds a wonderful flavor! French fries make a great side dish, and they are good for dipping, too.

4 pounds rump roast
1 (10.5 ounce) can beef broth
1 (10.5 ounce) can condensed French onion soup
1 (12 fluid ounce) can or bottle beer
6 French rolls
2 tablespoons butter

Steps:

  • Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
  • Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.
