- Heat vegetable oil over medium high heat in a cast iron skillet. Using two forks or tongs to hold roast, sear on all sides until lightly browned. Add to slow cooker and top with all remaining Slow Cooker ingredients.
- Cook on LOW for 4 hours then remove roast to a cutting board. Thinly slice roast across the grain. Place sliced meat back in slow cooker and continue to cook on LOW for 1-2 additional hours.
- When ready to serve, remove roast and strain fat from broth for dipping.

- Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.

- Place the roast in crockpot. Pour the soup and consomme over the top and then add garlic and Worcestershire sauce.
- Cover and cook on low for 8 hours or high for 4 hours. (For the most tender beef, cook on low)
- For the dipping sauce, once beef is done cooking, remove 3 cups of the juice from the crockpot and place in small saucepan. Turn heat to medium and bring to a boil. Reduce heat and let cook for about 10 minutes or reduced by about half.

- Heat 3 tablespoons olive oil over medium heat in a large, deep pot. Add onions and toss to coat with oil. Cook, stirring often, until softened, about 15 minutes. Add 1 tablespoon butter. Cook and stir until onions start to brown, about 15 minutes more.
- Stir sugar and 1/2 teaspoon salt into the onions in the pot. Continue to cook, stirring once halfway through, until onions are well-browned, 10 to 15 minutes more. Mix in garlic and cook for 1 minute more.
- Stir 3 tablespoons of water into the pot, scraping bits from the bottom. Let simmer for 3 minutes; repeat with an additional 3 tablespoons water. Simmer for 3 minutes more and repeat. Add vermouth; scrape bits from the bottom and sides of the pot. Cook for 4 minutes more. Add stock, Worcestershire sauce, soy sauce, thyme, and bay leaf. Simmer for 10 minutes; do not boil. Add black pepper. Discard bay leaf. Remove pot from heat and allow soup to cool. Pour into the slow cooker, but don't turn it on.
- Trim any excess fat from the rump roast. Sprinkle all sides with salt and pepper. Heat remaining 2 tablespoons olive oil in the pot over high heat. Cook the meat, holding it down with tongs, until browned on all sides, about 10 minutes. Transfer meat carefully to the slow cooker. Spoon the soup over the meat so that it is topped with a few onions. Cover and cook on Low for 4 hours.
- Remove meat from the slow cooker. Slice it diagonally and return slices to the slow cooker. Continue to cook on Low for 2 hours more.
- Preheat the oven to 350 degrees F (175 degrees C). Spread rolls with remaining 2 tablespoons butter; place face-down on a baking sheet.
- Bake rolls in the preheated oven until beginning to brown, 8 to 10 minutes. Remove from the oven, flip, and sprinkle with Gruyere cheese. - Liberally salt and pepper your roast.
- In a large glass measuring cup, combine the beef broth and worcestershire sauce and set aside.
- In a large cast iron skillet, dutch oven or in your Instant Pot in sauté mode, heat oil on medium-high heat, add the meat and sear on all sides until each side has a nice brown crust formed. Transfer meat into your slow cooker (if using) OR remove the meat from your Instant Pot and continue.
- Reduce the heat to medium, and in the same pot you browned the meat in, add the sliced onions and cook for 5 minutes, adding more oil if necessary. - In a large skillet set over medium high heat, heat the oil. Sear the roast on all sides until browned, about 2 minutes each side. Place the seared roast in the slow cooker.
- Add the remaining ingredients to the crock pot: soy sauce, coke, beef broth, beef bouillon, garlic powder, onion powder, oregano, salt, pepper, thyme, bay leaf, and dried minced onions.
- Cook on low for 4 hours.
- Remove roast from slow cooker and place on a cutting board. Cut the roast into thin slices. Return the sliced meat to the slow cooker and cook on low for another 1-2 hours. (I cooked ours for 1.5 hours).
- Remove bay leaf. Strain the fat from the broth. You'll use this broth for dipping.
- Preheat the oven to 350°F. Line the hoagie rolls on a baking sheet. Place the buns in the oven for 5-6 minutes or until toasted. Then add meat to one side of the bun and then place 1-2 slices of provolone cheese atop the meat. Place the meat covered hoagies back in the oven until cheese is melted.

CROCK POT (SLOW COOKER) FRENCH DIP ROAST BEEF SANDWICHES
I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

- Place roast in 4.5 - 6 quart slow cooker.
- Sprinkle with onion soup mix and then pour onion soup and beer over it.
- Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
- Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
- Remove meat and slice or shred; return to slow cooker and cover.
- Turn to low and let meat soak up the juices until ready to serve.
- Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.
EASY SLOW COOKER FRENCH DIP SANDWICH
Steps:
- Trim the excess fat from the chuck roast. Season liberally with salt and pepper.
- Heat the olive oil in a large skillet over high heat.
- Add the chuck roast to the pan and cook for 4-5 minutes until brown. Flip the roast over and brown on the opposite side, approximately 4-5 minutes. Continue to flip and cook the roast until all sided are browned.
- Transfer the roast to the slow cooker.
- Place the onions and garlic on top of the roast.
- Whisk together the stock, wine, mustard, Worcestershire sauce, salt and pepper. Pour the stock mixture over the beef. Add the thyme and bay leaf.
- Cover and cook on high for 4 hours or low for 6 hours.
- When the roast is fork tender, transfer to a serving platter.
- Skim the excess fat from the top of the stock mixture with a spoon.
- Arrange the beef in long rolls and top with cheese. Serve the sandwiches with bowls filled with stock (au jus).

- Add the oil and butter to a large skillet over medium-high heat. Season the chuck roast generously on both sides with salt, pepper, garlic powder and steak seasoning. Dust the beef lightly in flour, tapping off any excess flour.
- Add the chuck roast to the skillet and sear for 4-5 minutes on both sides until a brown crust forms.
- Remove the chuck roast from the skillet and place it into the basin of your slow cooker. Pour in the french onion soup along with 1 cup of water. Add the rosemary and bay leaf and then cover the crock pot and turn on low for 8 hours or on high for 4-5 hours. This will depend in the size of your roast, a larger chuck roast will take a little longer to become tender.
- Preheat the oven to 400 degrees.
- Remove the beef from the slow cooker onto a board to cool slightly. Shred the beef with two forks and return to the slow cooker with the juice. Set the slow cooker on high, uncovered for 30 minutes.
- Open up the sub rolls and add 2 slices of provolone cheese to each side. Place in the oven to lightly toast the rolls and melt the cheese, about 5-7 minutes.
- Remove the rolls from the oven and add the shredded beef to each roll. Drain most of the juice during this step, as the rest of the au jus will be used for serving.
- Serve the sandwiches with the au jus from the slow cooker on the side for dipping.

French Dip cooked in your slow cooker for the perfect savory roast beef!**This recipe will give you about 6-8 sandwiches, depending on how much meat you put in each sandwich.

- In a large bowl, or in your slow cooker, add your cold water and gravy packets and whisk it together so there are no lumps. Pour the sauce into your slow cooker if you did not mix in your slow cooker.**Ignore the packet instructions for adding water!!! Follow this recipe! There will be extra sauce/liquid after cooking, you can use this extra au jus for dipping!
- Add your roast beef to the slow cooker. Separate each slice of roast beef as you add it to the slow cooker so it will cook and heat evenly.**If you have a smaller slow cooker, it will look super full of meat. After adding all of the roast beef, press the meat in to the gravy mixture so it is mostly covered. The meat shrinks a bit and settles in the sauce as it cooks!
- Add your sliced onion to the meat and gravy/sauce if you are adding onions. If adding peppers add them as well.**If you are adding mushrooms, wait and add them to the slow cooker the last 5 minutes of cooking time.
- The meat just needs heated through and given time to soak up the savory flavor of the gravy and au jus. Cook the roast beef on low for 4-6 hours. (Mine never needs 6 hours and is always done after 4 hours or less). Or on high for 2-3 hours. Using tongs, gently stir the meat half way through cooking if you can. (Not super important but if you can, do it!)
- When you are ready to eat, set your oven to BROIL at 450°. Slice your rolls in half. Spread some butter on each half of the roll and top with your cheese ( I always use at least 2 slices). Let the rolls broil for a few minutes until the cheese is melted to your liking. Watch them closely so they don't burn!**This is optional. You do not have to broil your buns in the oven to melt the cheese! You can just slice your buns, add the cheese and top it with the roast beef!
- Once the cheese is melted, add the meat and onions (optional) to each sandwich. Get a small dish of the au jus sauce for dipping if desired!
- This French Dip can be stored in an airtight container in your fridge for about 3 days and can be reheated in your microwave!

- In a small bowl, mix 1 tablespoon of the olive oil, garlic, Italian seasoning, pepper and salt. Rub the seasoning mixture onto all sides of the roast, then set the roast on top of the onions in the slow cooker. Add the broth, water and Worcestershire sauce to the slow cooker. Cover and cook on low for 8 to 9 hours (if you have to speed things up, you can set it on high for 4 to 4 1/2 hours). I recommend slow cooking it, if time allows- the meat will turn out so much better!
- Toward the end of the slow cooking time, heat the remaining tablespoon of olive oil in a medium skillet over medium-high heat, add the peppers to the pan and saute until the peppers are softened.
- Remove the meat to a cutting board and slice against the grain. Pile the meat onto the sandwich rolls and top with cheese, onions from the slow cooker and sauteed peppers. Serve beef broth from the slow cooker on the side for dipping sandwiches.
