1 package (16 ounces) frozen mixed vegetables, thawed
2 cups frozen cubed hash brown potatoes, thawed
1 envelope onion soup mix

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 5-qt. slow cooker. Stir in the tomato juice, mixed vegetables, potatoes and soup mix. , Cover and cook on low for 8-10 hours.

1 pound lean ground beef (90% lean)
1 medium onion, chopped
2 garlic cloves, minced
4 cups V8 juice
1 can (14-1/2 ounces) stewed tomatoes
2 cups coleslaw mix
2 cups frozen green beans
2 cups frozen corn
2 tablespoons Worcestershire sauce
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. In a 5-qt. slow cooker, combine the remaining ingredients. Stir in beef mixture. Cover and cook on low for 8-10 hours or until the vegetables are tender.

1 (32 fluid ounce) container beef broth, or more if needed
1 pound ground sirloin beef
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can green beans, drained
1 (15 ounce) can peas, drained
1 (14 ounce) can tomato sauce
3 carrots, cut into bite-size pieces
2 potatoes, peeled and cut into bite-size pieces
1 onion, chopped
1 large stalk celery, cut into bite-size pieces
1 clove garlic, minced
1 ½ tablespoons chopped fresh parsley
½ teaspoon celery seed
2 bay leaves
salt and ground black pepper to taste

Steps:

  • Stir beef broth, ground sirloin, corn, green beans, peas, tomato sauce, carrots, potatoes, onion, celery, garlic, parsley, celery seed, and bay leaves together in a slow cooker.
  • Cook on Low for 4 hours. Check for moisture and add broth as needed. Continue cooking another 4 hours. Season with salt and black pepper.

1 pound ground beef
1 onion (chopped)
1 (16-ounce) package mixed frozen vegetables (carrots, cut green beans, lima beans, corn kernels)
3 ribs celery (chopped, including tops)
1 (14.5-ounce) can beef broth or about 2 cups homemade beef stock (preferably low sodium or unsalted)
1 green pepper (chopped)
1 envelope dry onion soup mix
1 (8-ounce) can tomato sauce
1/4 cup barley
1/2 teaspoon freshly ground pepper
2 tablespoons fresh oregano (chopped or 1/2 teaspoon dried oregano)
2 tablespoons fresh basil (chopped or 1/2 teaspoon dried basil)
2 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
1/2 teaspoon paprika
1 bay leaf
1 tablespoon seasoned salt
1 tablespoon soy sauce
1/2 cup fresh (chopped parsley or 2 tablespoons dried parsley)
1 cup macaroni (uncooked)

Steps:

  • Brown the ground beef in a skillet or sauté pan; drain off excess fat. You can reduce fat content even further by placing the beef in a colander and running hot water over it.
  • Put the beef and all ingredients except the pasta into the slow cooker. Add water to within an inch or so of the top of the crock pot.
  • Cover and cook the soup on low for 8 hours. Alternatively, cook the soup on high for about 3 to 4 hours.
  • About 30 minutes before serving, cook pasta in boiling salted water ; add to the crock pot and heat through.
