Slow-Cooker Pulled Pork Stew with Corn image

This easy slow-cooker version of red pozole-a hearty, traditional Mexican soup-turns simple shredded pork and corn into a flavorful stew that's loaded with fresh toppings.

1 can (19 oz) Old El Paso™ red enchilada sauce
1 package (1 oz) Old El Paso™ original taco seasoning mix
2 tablespoons chili powder
2 teaspoons dried oregano leaves
2 teaspoons ground cumin
2 teaspoons salt
1 boneless pork shoulder (3 to 4 lb)
1 carton (32 oz) Progresso™ chicken broth
1 can (28 oz) Muir Glen™ organic fire-roasted crushed tomatoes, undrained
1 can (15.25 oz) whole kernel corn, drained
Sliced radishes, shredded cabbage, diced avocado, crumbled queso fresco, chopped cilantro and lime wedges, as desired

Steps:

  • Spray 5-quart slow cooker with cooking spray. Mix enchilada sauce, taco seasoning mix, chili powder, oregano, cumin and salt in cooker. Add pork shoulder; turn to coat.
  • Cover; cook on Low heat setting 8 to 9 hours or until very tender. Remove pork from slow cooker; when cool enough to handle, shred pork with fork. Remove 1 cup cooking liquid; place in large bowl. Add shredded pork to bowl; toss to coat.
  • Meanwhile, discard remaining cooking liquid; wipe out slow cooker. Spray slow cooker with cooking spray. Add broth, tomatoes and corn; stir in pork. Cover; cook on High heat setting 1 hour 30 minutes to 2 hours 30 minutes or until hot. Serve with remaining ingredients.

1 tablespoon extra virgin olive oil
2 pounds cubed pork stew meat
salt to taste
ground black pepper to taste
garlic powder to taste
2 tablespoons cornstarch, or as needed
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 ¼ cups milk
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning

Steps:

  • Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.

1 pound fingerling potatoes
3 carrots, cut into 2-inch chunks
2 stalks celery, cut into 2-inch chunks
3 cloves garlic, smashed
1 2-inch piece ginger, peeled and grated
1/3 cup all-purpose flour
Kosher salt and freshly ground pepper
3 bay leaves
1 bone-in pork shoulder or pork sirloin roast (2 to 2 1/2 pounds)
1 teaspoon dried thyme
1/2 teaspoon ground allspice
1 14-ounce can diced tomatoes

Steps:

  • Combine the potatoes, carrots, celery, garlic and ginger in a slow cooker. Toss in half of the flour and season with salt and pepper. Scatter the bay leaves over the vegetables.
  • Season the pork generously with salt and pepper, sprinkle with the thyme and allspice and toss with the remaining flour to coat. Place the pork over the vegetables in the slow cooker. Add 2 cups water and the tomatoes, cover and cook on low 8 hours.
  • Discard the bay leaves. Remove the pork roast and slice or pull the meat off the bone into large pieces. Serve in bowls with the vegetables and broth.

1 dollop sour cream or Greek yogurt per serving, optional
crusty bread, optional
fresh chopped parsley, optional
shredded cheese, optional, I recommend Mozzarella or Cheddar
salt to taste, optional
fresh cracked pepper, optional
You can also optionally serve this over pasta, rice, quinoa or egg noodles.
1 pound cooked pork roast, cubed, you can substitute any cooked meat in the same amount if you do not have cooked cubed pork roast
1 32 ounce can diced tomatoes, can substitute canned crushed tomatoes in the same amount
1-2 fresh green peppers, chopped or in slices
1 medium yellow onion, chopped
1 15 ounce can corn, drained
1 15 ounce can red kidney beans, drained, can substitute other similar canned beans
1 teaspoon salt, or amount to taste
1/4 teaspoon fresh cracked pepper, or amount to taste
1 dried bay leaf, optional (adds more flavor)

Steps:

  • Put cubed cooked pork roast, canned tomatoes, chopped green peppers, chopped yellow onion, can of corn, can of red kidney beans into the slow cooker. Cover and cook on HIGH for 4 hours or on LOW for 6 hours. Stir 2 hours into cooking.
  • Serve with a scoop of sour cream or a healthier option, Greek yogurt, crusty bread, shredded cheese, and/or fresh chopped parsley. Salt and pepper to tastes. Enjoy!

1/4 cup cornmeal
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves

15 ounces chili beans, in sauce undrained
14 1/2 ounces diced tomatoes with green chilies, undrained
1 cup chicken broth
2 cups frozen whole kernel corn, thawed

Steps:

  • Place chopped onion and garlic in the bottom of slow cooker.
  • Top with pork.
  • Mix cornmeal, cumin, oregano and salt; sprinkle over pork and mix well.
  • Next, add beans, tomatoes and broth; mix well.
  • Cook on low for 8 to 10 hours or until pork is tender.
  • A half hour before serving, add corn and cook on high.

3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)
1 medium onion, chopped (1/2 cup)
1 carton (32 ounces) Progresso™ chicken broth (4 cups)
2 cups 1/2-inch diced peeled parsnips
1 1/2 cups 1-inch cubes peeled butternut squash
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons Gold Medal™ all-purpose flour
3 tablespoons butter or margarine, softened

Steps:

  • Mix all ingredients except flour and butter in 3 1/2- to 6-quart slow cooker.
  • Cover and cook on low heat setting 6 to 7 hours (or high heat setting 3 to 4 hours) or until pork is no longer pink and vegetables are tender.
  • Mix flour and butter. Gently stir flour mixture, 1 spoonful at a time, into pork mixture until blended.
  • Cover and cook on high heat setting 30 to 45 minutes, stirring occasionally, until thickened. 2 pork tenderloins (1 pound each), cut into 2-inch pieces
1 teaspoon salt
1/2 teaspoon pepper
2 large carrots, cut into 1/2-inch slices
2 celery ribs, coarsely chopped
1 medium onion, coarsely chopped
3 cups beef broth
2 tablespoons tomato paste
1/3 cup pitted dried plums (prunes), chopped
4 garlic cloves, minced
2 bay leaves
1 fresh rosemary sprig
1 fresh thyme sprig
1/3 cup Greek olives, optional
Chopped fresh parsley, optional
Hot cooked mashed potatoes, optional

Steps:

  • Sprinkle pork with salt and pepper; transfer to a 4-qt. slow cooker. Add carrots, celery and onion. In a small bowl, whisk broth and tomato paste; pour over vegetables.
