This vegetable lo mein makes an easy slow cooker meal that is flavorful and versatile.

1/2 cup low sodium vegetable broth
3 tablespoons hoisin sauce (see notes)
2 tablespoons low sodium soy sauce (can substitute with gluten free tamari or coconut aminos)
2 teaspoons honey (can substitute with agave)
1 teaspoon dark soy sauce (can substitute with gluten free tamari or coconut aminos)
1 teaspoon sesame oil
1/2 tablespoon mirin or Chinese cooking wine (Shaoxing or dry Sherry)
1/2 teaspoon red chili pepper flakes (optional)
2 garlic cloves (minced)
1/2 tablespoon fresh ginger (minced)
1 14-ounce package extra firm tofu
1/2 cup matchstick carrots
1 red bell pepper (seeded, thinly sliced)
1 cup snow peas (trimmed)
1/2 cup frozen edamame
2 cups fresh lo mein noodles (or cooked spaghetti noodles (use gluten-free if necessary))
2 tablespoons cornstarch (+ 3 tablespoons cold water)
sesame seeds (optional; for garnish)

Steps:

  • Spray inside of slow cooker with non-stick coating spray.
  • Whisk together all the ingredient for the sauce in the slow cooker. Add minced ginger and garlic. Add the entire block of tofu to the bottom of the slow cooker. Cook on low for 1-2 hours or high for 1 hour flipping halfway through.
  • Meanwhile, prepare noodles according to package directions, set aside.
  • Transfer tofu to flat surface and cut into cubes. Add tofu and remaining vegetables to slow cooker, cover and cook for 1 hour on high.
  • 30 minutes before serving, add noodles into slow cooker. To thicken the sauce, whisk together cornstarch and water in a small bowl and stir into slow cooker. Allow sauce to cook and thicken on high for 30 minutes. Give everything a good stir to combine and coat with sauce.
  • Serve hot and garnish with sesame seeds, if desired.

1 Tbsp dark soy sauce
1 Tbsp oyster sauce
1 Tbsp grated fresh ginger
4 cloves garlic, minced
2 tsp sambal oelek (ground fresh chile paste)
2 tsp sesame oil
drizzle of sriracha sauce
2 lbs. boneless skinless chicken thighs, trimmed of excess fat
2 cups broccoli florets
1 cup snow peas
1 cup shredded carrots
1 red bell pepper, thinly sliced
5 oz can sliced water chestnuts, drained
1 lb. dried lo mein noodles
sesame seeds, for garnish
sliced green onions, for garnish

Steps:

  • Add chicken thighs to bottom of slow cooker insert. Whisk together sauce ingredients and pour over chicken. Cover and cook on LOW for 6-8 hours, or HIGH for 3-4 hours.
  • Remove chicken from slow cooker, shred, then add back to slow cooker with juice and sauce.
  • Add broccoli, snow peas, carrots, bell pepper and water chestnuts, and stir. Cover and cook on HIGH for 15 minutes, or until vegetables are tender.
  • While vegetables are cooking, boil and drain pasta per package directions, then add to crockpot with chicken and vegetables. Stir well, then serve with garnishes, if desired.

1 cup stir-fry seasoning sauce
1 (5-ounce) can sliced water chestnuts, drained
1 medium (1/2 cup) onion, sliced
1 (16-ounce) package fresh stir-fry vegetables (celery, carrots, broccoli and pea pods)
1/2 cup whole cashews, if desired
1 (8-ounce) package lo mein noodles

Steps:

  • Melt butter in 10-inch skillet until sizzling; add chicken pieces. Cook over medium-high heat, stirring occasionally, 5-7 minutes or until chicken is browned.
  • Place chicken into slow cooker. Add stir-fry seasoning sauce, water chestnuts and onion. Cover; cook on Low heat setting 4-6 hours, or High heat setting 2-3 hours or until chicken is tender.
  • Add stir-fry vegetables; stir. Cover; cook on High heat setting, stirring once, 30-40 minutes or until vegetables are crisply tender. Stir in cashews just before serving, if desired.
  • Cook lo mein noodles according to package directions.
  • Spoon stir-fry chicken and vegetable mixture over noodles.

3 cups broccoli florets
2 carrots, julienned
2 stalks celery, diced
1 cup snow peas
1 (5-ounce) can sliced water chestnuts, drained
1 pound spaghetti
1/3 cup reduced sodium soy sauce
3 cloves garlic, minced
2 tablespoon brown sugar, packed
1 tablespoons sambal oelek (ground fresh chile paste), or more, to taste
1 tablespoon oyster sauce
1 tablespoon freshly grated ginger
1 teaspoon sesame oil

Steps:

  • LINE a slow cooker with a Reynolds® Slow Cooker Liner. Open slow cooker liner and place it inside a 5- to 6-quart slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl. WHISK together soy sauce, garlic, brown sugar, sambal oelek, oyster sauce, ginger and sesame oil in the slow cooker. Add pork shoulder, then cover and cook on low heat for 7-8 hours or high for 3-4 hours. REMOVE pork shoulder from the slow cooker and shred the meat before returning to the pot with the juices. 1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
1 pound boneless, skinless chicken breasts
1 head broccoli (stems removed and discarded, florets roughly chopped)
1-2 carrots (julienned)
1-2 red bell pepper (sliced)
1 (4 oz) package sliced mushrooms
1/2 pound spaghetti (cooked separately according to package directions)
Sesame seeds, green onions, cilantro (for garnish)

Steps:

  • Whisk together soy sauce, vinegar, hoisin, oil, chili garlic sauce, garlic powder, ginger, and black pepper.
  • Pour 1/3 into a greased crockpot.
  • Add in chicken and cover.
  • Cook on HIGH 3-4 hours or LOW 6-8 hours.
  • Stir in 1/3 more sauce and all the veggies: broccoli, carrots, red bell pepper, mushrooms.
  • Cover and cook on HIGH for 1 hour.
  • Shred chicken.
  • Stir in remaining sauce and cooked pasta.
  • Taste and re-season, if necessary.
