Dinner was never more beautiful! Let the kids help compose this salad right on the platter before serving.

1 pound small Yukon Gold potatoes
1 (14 ounce) package Hillshire Farm® Smoked Sausage, diagonally cut into 1/4-inch slices
5 ounces mixed salad greens
½ yellow bell pepper, sliced
½ pint grape tomatoes, halved
½ cup Italian vinaigrette

Steps:

  • Bring 3 quarts water and potatoes to a boil. Cook until potatoes are tender, about 10 minutes. Drain and cool.
  • Heat a non-stick skillet over medium-high heat and cook the smoked sausage until browned, about 6-9 minutes. Remove and set aside.
  • Arrange greens on a platter and top with smoked sausage, peppers, tomatoes and sliced potatoes once cool. Drizzle with vinaigrette and serve.

If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

4 cup(s) cooked pasta
2 cup(s) smoked summer sausage, cubed
1 - red bell pepper, roasted
1 - poblano pepper, roasted
1/2 cup(s) diced onion
1 1/2 cup(s) grated cheddar, 2%
1/2 teaspoon(s) black pepper
1 cup(s) sour cream, lite

Steps:

  • Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.
  • Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.

Sausage, Tortellini, and Italian spices come together perfectly in this Sausage and Tortellini Pasta Salad. It's the perfect pasta salad for your next summer cookout or get-together!

8 oz cheese tortellini
4 oz dried bow tie pasta (about a cup)
2 cups chopped Klement's Smoked Polish Sausage (or whichever Klement's Sausage you prefer)
1 cup diced mozzarella cheese
1 cup shredded cheddar cheese
1⁄2 cup chopped bell pepper (your favorite color - I went with orange)
1 cup chopped cherry tomatoes
1 cup sliced black olives
3 tbsp light olive oil
3 tbsp red wine vinegar
3 tbsp grated parmesan cheese
1/2 tsp each of garlic powder, basil and oregano
Salt and pepper to taste

Steps:

  • Cook pasta and tortellini according to package directions. Drain and rinse. Place in refrigerator until cool
  • Add dressing ingredients to a mason jar and shake til combined.
  • Once pasta has cooled completely, add sausage, cheese, vegetables. Toss together until combined.
  • Add half the dressing to the salad and combine. Add additional dressing as needed. (If you make this the night before, the pasta will absorb most of the dressing, so reserve a bit to add just before serving.)
  • Refrigerate until time to serve.

14 ounces smoked cooked sausage
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 tablespoons white wine vinegar
1/3 cup olive oil
1 garlic clove, peeled and mashed
8 ounces uncooked penne pasta, 2 1/4 cups
1 cup frozen green pea, thawed
1 cup finely chopped green onion, with green tops
2 large medium red ripe tomatoes, seeded and chopped
1/2 cup thinly sliced carrot, 1 medium carrot
1/4 cup grated parmesan cheese
1/4 cup fresh basil, julienned
additional fresh basil (to garnish)

Steps:

  • Bring pan with 2 to 3 inches of water to a boil.
  • Turn heat off and add sausage.
  • Immediately cover pan and let sausage stand 15 minutes.
  • Remove sausage to a plate and let cool in the refrigerator.
  • Meanwhile, prepare vinaigrette dressing by mixing dry mustard, salt, pepper, garlic and vinegar together in a small bowl.
  • Slowly whip in olive oil to form an emulsion.
  • Cook pasta according to package directions.
  • Drain.
  • Place in large bowl and toss with 1/4 cup vinaigrette dressing.
  • When cool, slice sausage into thin 1/4-inch slices.
  • Remove garlic clove from vinaigrette dressing.
  • Add sausage, peas, onion, tomatoes, carrots, 1/4 cup basil and remaining vinaigrette to the pasta.
  • Sprinkle top with cheese. Garnish with fresh basil.
