SMOKED TURKEY AND WHITE BEAN CASSEROLE WITH HERBED CRUMB TOPPING RECIPE

- Using a sharp knife, score the turkey pieces about 1/4-inch deep in several places. Place the turkey in a large soup pot or stockpot and add the chicken broth, Essence, cayenne pepper and bay leaves. Add 2 cups of water and bring to a boil. Reduce the heat to a simmer and cook the turkey, covered, until falling-from-the-bones tender, 2 1/2 to 3 hours. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin and bones. Tear the meat into bite-size pieces and set aside. Reserve stock separately. In a large Dutch oven, heat the oil until hot. Add the onions, celery, and bell pepper and cook, stirring, until vegetables are softened, 4 to 6 minutes. Add the garlic and 2 teaspoons of the thyme and cook for 1 minute. Add the beans and 6 cups of the reserved stock (add water if necessary to bring the volume up to 6 cups) and return to a boil. Reduce the heat to a simmer and cook, partially covered, until the beans are tender but still firm enough to hold their shape, about 1 1/2 hours. The beans should be moist but not soupy. (If the beans are too soupy by the time they are tender, strain the beans and return the cooking liquid to the fire until reduced to a thick sauce consistency. Return the reduced cooking liquid to the beans.) Stir the reserved turkey meat into the beans and season with salt and pepper, to taste. Transfer to a large ovenproof casserole dish. Preheat the oven to 375 degrees F. In a small bowl combine the remaining thyme, bread crumbs, Parmesan, parsley, chives, and basil. Add the remaining 1/4 cup of olive oil and stir with a fork until well blended. Season with salt and pepper. Sprinkle the herb-bread crumb mixture evenly over the beans. Bake for 25 to 30 minutes, or until the topping is golden brown and the beans are bubbly around the edges

- Place the beans into a large bowl, fill the bowl with water, and cover the bowl with a cloth. Allow to soak overnight. Drain and rinse the beans.
- Place the soaked beans, turkey legs, onion, and bay leaves into a large soup pot, cover with water, then bring to a boil over medium heat. Reduce heat to medium-low, and simmer for 3 hours. Remove bay leaves, and discard. Remove the turkey legs from the broth, separate the meat from the bones and tendons, and return the meat to the broth. Stir in celery, carrots, diced tomatoes, Italian seasoning, and salt and pepper; simmer until the celery and carrots are tender, about 1 hour. Serve in bowls and sprinkle each serving with about 1 teaspoon of Parmesan cheese.

CHARD AND WHITE BEAN STEW RECIPE

- Bring medium pot of salted water to boil. Cook chard (or any heavier green; no need to precook baby spinach) for one minute, then drain and squeeze out as much extra water as possible. Coarsely chop chard. Wipe out medium pot to dry it, and heat olive oil over medium. Add carrots, celery, shallots and saute for 15 minutes. Add garlic last 3-5 minutes. Add wine (scraping up any bits that have stuck to the pot) and cook it until it reduced by three-fourths. Pour 1 can beans in food processor. Then add broth, 1/2 can tomatoes, a few pinches of salt, freshly ground black pepper. Ladel 2 scoops of broth into food processor. Then add the rest of the tomatoes, beans, thyme and bay leaf. Puree the mixture and add to pot. Bring to boil. Reduce heat to medium-low and simmer for 30 minutes. Add chard and cook for 5 minutes more. Remove bay leaf. Add more broth if you'd like a thinner stew and adjust salt and pepper to taste. Serve with buttered whole grain toast :)

I came up with this recipe to use some leftover smoked turkey without turning it into Tetrazini or using a cream sauce. I used whatever I had on hand at the time. All measurements of ingredients are approximations.

- Cook pasta in boiling salted water until al dente. Drain, do not rinse set aside.
- Saute garlic, onions, green onions and celery in olive oil until limp but not browned about 5 minutes.
- Add mushrooms, cook until liquid has evaporated.
- Add wine to deglaze the pan.
- Add frozen peas, seasoning, parsley, red pepper, salt & pepper. Cook an additional 2 minutes.
- Add turkey and pasta, cook until heated through. Adjust seasoning.
- Drizzle high quality olive oil over dish to taste before serving. (Or leave it out if you do not want the extra fat/calories).

- Preheat oven to 325°. Cook rice according to package directions. Meanwhile, in a large skillet, heat butter over medium-high heat. Add celery, onion and carrot; cook and stir until crisp-tender. Add garlic, salt and pepper; cook 1 minute longer., Add to cooked rice. Stir in parsley and dill. Transfer to a greased 13x9-in. baking dish., Fill a large saucepan two-thirds full with water; bring to a boil. Reduce heat to medium. Add shrimp; simmer, uncovered, 30 seconds. Add scallops; simmer 2-3 minutes longer or just until shrimp turn pink and scallops are firm and opaque. Drain, reserving 1 cup cooking liquid. Place seafood in a large bowl; stir in crab., In a small saucepan, melt butter over medium heat. Stir in flour until blended; gradually stir in cream and reserved cooking liquid. Bring to a boil; cook and stir 2 minutes or until thickened and bubbly. Reduce heat. Stir in cream cheese, dill and seasonings until smooth. Stir into seafood mixture., Pour over rice mixture. Toss bread crumbs with melted butter; sprinkle over top. Bake, uncovered, 50-55 minutes or until golden brown. Let stand 10 minutes before serving.

- Preheat oven to 350 degrees F.
- If using fresh beans, rinse them & cut them into 3"-to'4" pieces, before steaming them for about 15 minutes, or until they are only slightly crisp. Set beans aside.
- In a large bowl whisk together breadcrumbs (I use crumbs from winter wheat or cracked wheat bread), basil, salt, pepper, thyme, oregano, parsley, garlic powder & Parmesan cheese.
- Add vegetable oil to crumb mixture & stir well, before setting aside 2 tablespoons of the crumb mixture for topping the casserole.
- In an ovenproof dish, combine green beans & crumb mixture, then sprinkle with reserved crumb mixture.
- Bake about 30 minutes or until top is golden & crispy.
