- Add the ingredients to a small bowl and whisk to combine. If there are pebble sized pieces of brown sugar or spice, rub them between. your clean fingers to break apart, and blend so that you have a fine powder.
- Transfer to a air tight container. Chipotle BBQ Rub will keep for up to two months. To keep fresher longer, freeze the spice rub.

This is a delicious dry rub that we use on ribs and sometimes chicken. Rub liberally on baby back ribs, chicken or short ribs, then throw the meat on the grill. You can substitute smoked paprika for regular paprika.

GARLICKY, SMOKY GRILLED LONDON BROIL WITH CHIPOTLE CHILES

- In a bowl, whisk together the chipotle, honey and garlic. Whisk in the oil.
- Season the steak all over with the salt. Pat the meat evenly with the chipotle mixture and let rest for at least an hour at room temperature, or as long as overnight in the refrigerator. If you've chilled it, let the steak come to room temperature before grilling.
- Light the charcoal or preheat the grill. Brush off any bits of garlic or chile from the meat and grill, covered, until the meat is charred on the outside and done to taste inside, 4 to 5 minutes per side for medium-rare. Let the meat rest 5 minutes before thinly slicing. Sprinkle with cilantro and serve with lime wedges.

- Heat the oven to 220C/200C fan/gas 7. Bring a large pan of salted water to the boil, add the potatoes and cook for 5 mins. Drain and leave to steam-dry in the colander for a few minutes. Toss the potatoes with the Cajun seasoning, half the oil and a good pinch of salt. Tip onto a baking tray and roast for 25-30 mins or until golden and crisp, tossing halfway through.
- To make the slaw, combine the cabbage, onion, mayonnaise, soured cream and chipotle paste in a bowl until the cabbage and onion are well coated. Set aside.
- Rub the steak with the remaining oil and season both sides. Heat a griddle pan or non-stick frying pan over a high heat until very hot. Add the steak to the pan, cook for 2 mins on one side, then 3 mins on the other. Remove, put on a chopping board, cover with foil and leave to rest for 5 mins. Slice into strips.
- Serve the steak with the potatoes scattered with the coriander and a pile of the spicy slaw.

- Grind 1 1/2 stemmed, seeded, chopped dried chipotle chiles in a spice mill; transfer to a small bowl. This recipe and delicious rub comes from Chris Schlesinger, the former owner and chef of East Coast Grill in Cambridge, Mass. Follow Mr. Schlesinger's lead and leave the steaks untouched on the grill before you flip them. - Build a fire in your grill; if using a gas grill, turn both burners to high.
- Put all spice paste ingredients in a food processor and purée. Rub steaks all over with paste (it will be rather thick) and set aside.
- Combine ingredients for cilantro-lime butter in a small bowl and mash with a spoon until well mixed and an even consistency.
- When all coals are covered with gray ash and fire is medium hot (you can hold your hand 5 inches above grill for 3 to 4 seconds), put steaks on grill directly over coals and cook until well seared, about 7 minutes. Turn and cook another 7 to 10 minutes for medium rare. Remove from heat, top each steak with a couple tablespoons of butter, and serve.
