SUNNY'S CRUNCHY PEANUT BUTTER S'MORE BITES



Sunny's Crunchy Peanut Butter S'more Bites image

2 cups crunchy peanut butter
1 1/2 sticks butter
5 cups powdered sugar
24 ounces (4 cups) milk chocolate chips, melted
2 cups graham cracker crumbs
1 cup marshmallow fluff
1 cup coconut flakes, optional
2 1/2 cups puffed rice cereal, optional

Steps:

  • In a large bowl, add the peanut butter, butter and powdered sugar and beat with a whisk or electric beater until smooth. Using a teaspoon measure, scoop the mixture and form into balls, then press into a coin shape the diameter of a quarter. Refrigerate to set up dough cookies, about 30 minutes.
  • To make bites, dip peanut butter coins in melted chocolate then toss in graham cracker crumbs until coated, double dip and double coat if you feel dangerous. Arrange the coated coins on a wire rack and refrigerate for about 30 more minutes to set. Add the marshmallow fluff to a pastry bag fitted with a star tip. Remove the coins from the refrigerator and squeeze about 1 teaspoon of marshmallow fluff into the center of half of the coins. If you don't have a pastry bag, use a plastic bag, fill it with fluff and cut 1 corner off and dollop that way. Then top each half with another coin to make a sandwich and place return to the refrigerator to set, about 1 hour.
  • Options: chop coconut flakes and add them to the graham cracker crumbs to use for coating.
  • Add puffed rice cereal into the peanut butter, butter and powdered sugar for a bit more texture and crunch.

2 slices wheat bread
1 tablespoon peanut butter
1 banana, sliced
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Lay out the bread slices and spread them both with peanut butter. Lay the banana slices on one piece of bread. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until it's toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

30 JET-PUFFED Marshmallows, halved
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, chopped
1/3 cup creamy peanut butter

Steps:

  • Heat grill to medium-low heat.
  • Arrange 15 graham squares in single layer on bottom of 13x9-inch disposable foil baking pan; top each square with 4 marshmallow halves. Sprinkle with chocolate.
  • Spread remaining graham squares with peanut butter; place, peanut butter-sides down, on top of graham squares in pan to make 15 s'mores. Cover pan with foil; place on rack of grill.
  • Grill 4 to 6 min. or until marshmallows are puffed and chocolate begins to melt. Cool 5 min. before serving.

Decadence at its finest and sure to cure your sweet tooth. A taste of comfort suitable for dessert or a very special breakfast or snack. No special equipment required for this panini, a frying pan works just fine. This sandwich can be made vegetarian by eliminating the marshmallows. For breakfast I would eat the whole panini but if serving for dessert, half of the sandwich is plenty.

2 slices bread (I use white)
1 tablespoon creamy peanut butter
1/2 banana, cut into 3 pieces lengthwise
1 -2 teaspoon sugar-free strawberry jam
3 large marshmallows, cut in half or 25 mini marshmallows
butter, softened
1 -2 teaspoon sugar-free chocolate syrup
1 -2 teaspoon prepared whipped cream or 1 -2 teaspoon non-dairy whipped topping

Steps:

  • Preheat grill pan or frying pan to medium-low heat. (You could also do this in a panini maker).
  • Put a very thin spread of peanut butter on each slice of bread. Top one slice of bread with the 3 slices of banana, dabs of the strawberry jam, and the marshmallows. Top with the second slice of bread.
  • Lightly spread the softened butter on the outside of the sandwich and place on the preheated pan. Cook for 2 minutes (or until golden) and turn and cook for another 2 minutes.
  • Slice on the diagonal and drizzle with the chocolate flavored syrup and a dollop of whipped cream or you can drizzle the plate with the chocolate syrup and place the sandwich on top with a dollop of whipped cream. It is easiest to eat this with a fork.
