ANDOUILLE CORNBREAD STUFFED QUAIL, RED EYE GRAVY

Andouille Cornbread Stuffed Quail, Red Eye Gravy image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 21

1 tablespoon grapeseed oil
1/4 cup diced andouille
1 teaspoon minced garlic
1/2 cup chicken stock
1 tablespoon minced fresh parsley
1 tablespoon minced fresh thyme
1 teaspoon minced fresh tarragon
1 teaspoon ginger powder
Salt and ground pepper
2 cups crushed or pureed cornbread
2 tablespoons unsalted butter
1/4 cup minced red onion
1/4 cup diced tasso ham
1/4 cup coffee
1/2 cup veal stock
1 tablespoon minced fresh parsley
4 whole quail
1 tablespoon unsalted butter, at room temperature
Salt and ground pepper
2 cups mashed potatoes, for serving
24 halved braised Brussels sprouts, for serving

Steps:

  • For the stuffing: In a pan over high heat, add the oil and allow to warm. Then reduce the heat and add the andouille and garlic, warming for 2 minutes, stirring throughout. Once warmed, add the stock, herbs, ginger powder and salt and pepper to taste, and again warm for 2 minutes. Once heated, remove and add to the cornbread and fold all the ingredients together. Allow to sit or rest for 20 minutes before stuffing the quail. This will allow all ingredients to bloom together, creating the stuffing.
  • For the red eye gravy: In a small saucepan, warm the butter until melted, and then add the onions and cook until softened, 2 to 3 minutes. Once the onions are cooked, add the tasso and allow the onions and tasso to blend for 2 minutes. Next, add the coffee and allow the liquid to reduce by half in volume. Once the coffee has reduced, add the stock and parsley, reduce the heat to medium-low and allow to simmer for 10 to 12 minutes. Once finished, hold warm until serving.
  • For the quail: Preheat the oven to 375 degrees F. To stuff and cook the quail, portion the stuffing into 4 portions and then fill each quail cavity. Once stuffed, rub the exterior of the birds with the butter and sprinkle with salt and pepper. Then bake for 16 to 18 minutes (or fry in in preheated 375 degree oil for 4 minutes), ensuring the stuffing is warmed above 165 degrees. Once cooked, remove from the oven and rest the quail while plating the remainder of ingredients.
  • To plate, portion quarter of the potatoes to the center of a plate, then add Brussels to the side of the potatoes, then top the potatoes with a quail and finish with the prepared sauce.

1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 1/2 teaspoons salt
4 tablespoons granulated white sugar
2 teaspoons finely chopped fresh jalapeno pepper
1/2 cup thinly sliced green onions
2 eggs
1/4 cup melted unsalted butter
1 1/4 cup buttermilk
TO MAKE THE CORNBREAD DRESSING
1 tablespoon pomace olive oil or vegetable oil
3 cups finely diced Andouille sausage (quarter the sausage lengthwise and slice 1/4-inch thick)
8 cups finely diced yellow onions (1/4-inch pieces)
5 cups finely diced celery (1/4-inch pieces)
3 cups finely diced red, yellow and green bell peppers (1/4-inch pieces)
2 bay leaves
1 teaspoon salt
1/2 teaspoon dried whole-leaf thyme
1/4 teaspoon ground black pepper
1/4 teaspoon ground white pepper
1/4 teaspoon ground cayenne pepper
1 teaspoon minced fresh garlic
3/4 cup chicken or turkey stock
4 tablespoons unsalted butter, softened
2 eggs

Steps:

  • FOR THE CORNBREAD: Preheat oven to 350 degrees. In a mixing bowl, add flour, corn meal, baking powder, baking soda, salt, sugar, jalapenos, and green onions. Mix until well blended and set aside. In a separate mixing bowl, add the eggs and whisk until frothy. Add melted butter and buttermilk and whisk until well blended. Add the wet ingredients to the dry ingredients and mix until well blended. Pour the cornbread batter into a buttered 9x12x2-inch baking pan and bake until the top is browned and a knife inserted into the middle of the cornbread comes out clean, 40-45 minutes. Remove from oven and set aside. TO MAKE CORNBREAD DRESSING: Heat the oil in a pot over medium high heat. Add the Andouille and cook, stirring occasionally, until the sausage is browned, 6-8 minutes. Add 6 cups of onions, 4 cups of celery, 2 cups bell peppers, and the bay leaves. Cook, stirring occasionally, until the vegetables turn dark brown (caramelized), about 15 minutes. Add the remaining onions, celery, and bell peppers, the salt, thyme, black pepper, white pepper, cayenne, and garlic. Cook, stirring occasionally, until the second stage of onions become soft and clear, about 5 minutes. Remove from heat. Crumble the cooked cornbread. Add the cornbread and stock to the vegetable mixture. Mix until well blended. Transfer the cornbread/vegetable mixture to a shallow baking pan and bake for 25 minutes at 350 degrees. Remove from oven and set aside. Temper the eggs: In a mixing bowl, add the eggs and whisk until frothy. Add three large spoonfuls of the cornbread dressing, one at a time, mixing well after each spoonful. Fold the egg mixture back into the pan of the cornbread dressing. Add the softened butter and mix until well blended. Bake for 20 more minutes. Remove from oven.

Uncover and bake until top is crisp and golden, about 20 minutes longer.

CORNBREAD STUFFING W/SHRIMP & ANDOUILLE (CAJUN/CREOLE ZWT-9)

Cornbread Stuffing W/Shrimp & Andouille (Cajun/Creole ZWT-9) image

(From a Food & Wine Magazine article) -- Star chef Susan Spicer comes from a strong European Christmas tradition. But in New Orleans, her holiday means a magnificent Cajun/Southern feast. She runs BAYONA (1 of the finest restaurants in New Orleans) & has been garnering local & national acclaim since 1986. In 1989, FOOD & WINE declared her 1 of that yr's Best New Chefs. Her training is French & her food global (including So Louisiana Cajun & New Orleans Creole). Her Christmas dinner was featured in Food & Wine Magazine & included a shrimp & andouille stuffing ("my version of something that's fairly common in New Orleans"). Of this recipe, she said "Andouille adds a wonderful smoky flavor to sweet cornbread stuffing". As an added bonus, this stuffing can be "made & refrigerated 1 dy before baking. Just bring it to room temp before baking." Prep time was estimated, begins w/pre-cooked cornbread & 15 min was allowed for ingredient prep. Enjoy!
