1/3 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
5 lean bone-in pork loin chops, about 1/2 inch thick (about 1 1/4 pounds)
1/4 cup vegetable oil
1 medium onion, chopped (1/2 cup)
1 tablespoon Gold Medal™ all-purpose flour
2 1/2 cups half-and-half
1/4 cup Betty Crocker™ Bac~Os® bacon flavor bits

Steps:

  • In shallow dish, stir together 1/3 cup flour, the salt and pepper. Coat pork chops with flour mixture, shaking off excess.
  • In 12-inch skillet, heat oil over medium-high heat. Cook pork chops in oil about 10 minutes, turning once, until brown. Remove from skillet.
  • Stir onion into drippings in skillet. Cook about 2 minutes, stirring frequently, until softened. Stir in 1 tablespoon flour. Cook 2 minutes, stirring constantly. Stir in half-and-half and bacon bits.
  • Return pork chops to skillet. Cover and cook over medium-low heat about 30 minutes, stirring occasionally, until pork is no longer pink in center.

This recipe starts with bacon and ends with pork chops... it doesn't get any better than bacon, onions and mushrooms slathered over super tender pork chops with gravy. I always serve this with mashed potatoes and of course something green just to round out the meal

4 boneless pork chops
1 (1 1/4 ounce) package brown gravy mix
2 cups water
1 (4 ounce) can sliced mushrooms
4 slices bacon (chopped)
1/2 yellow onion (diced)
1 teaspoon garlic (minced)
salt
pepper
1/4 cup flour (for dredging)

Steps:

  • brown bacon in a large skillet.
  • remove and leave grease.
  • saute onion and garlic in bacon grease.
  • remove and leave grease.
  • salt and pepper both sides of the pork chops.
  • dredge both sides in flour.
  • add to hot grease (you may need to add a bit more oil to the pan).
  • brown pork chops on both sides.
  • in a seperate bowl combine gravy mix and water. add in the cooked bacon and onions.
  • pour over browned pork chops cover and let simmer 20-40 mins (or until pork is at the desired tenderness).
  • If the gravy is a little thin you can remove the chops and add a TBS of cornstarch or flour and whisk in until there are no lumps.
  • Serve with mashed potatoes and covered with gravy and DEVOUR!

You know that when a recipe has 'smothered' in the name, it's going to be easy. It's a beautiful combination of dark, rich onion gravy covering pan-fried pork chops. Serve over hot cooked rice.

4 large bone-in pork chops, about 1 inch thick
1 teaspoon poultry seasoning
salt and freshly ground black pepper to taste
2 tablespoons vegetable oil
1 tablespoon butter
1 large yellow onion, sliced
4 cloves garlic, minced
1 ½ tablespoons all-purpose flour
1 ½ cups chicken broth
¼ cup buttermilk
¼ cup water

Steps:

  • Sprinkle pork chops with poultry seasoning, salt, and black pepper on both sides. Heat vegetable oil in a large skillet over medium-high heat; brown pork chops well on both sides, about 5 minutes per side. Transfer to a plate.
  • Discard excess grease from pan and melt butter in the same skillet. Reduce heat to medium and stir onion in the hot skillet with a pinch of salt until onion is very browned and caramelized, about 15 minutes. Stir in garlic and cook for 1 minute; stir in flour and cook for 2 minutes.
  • Pour chicken broth into skillet and stir, dissolving browned bits of food in the bottom of the skillet. Pour juices that have accumulated on plate containing pork chops into the sauce. Mix in buttermilk until smooth. Add water. Bring sauce to a simmer, reduce heat to low, and cook until onions begin to break down and sauce is thickened, 15 to 20 minutes.
  • Place pork chops into sauce, spooning sauce over meat to coat. Turn heat to low and simmer until chops are tender and cooked through, about 10 minutes. Adjust levels of salt and pepper and serve chops with gravy on top.

This recipe is quick, simple and good. It can be made low fat with a few simple substitutions: 1) One piece of bacon per breast; 2) One half can of low fat cream of mushroom soup 3) Four ounces of low fat/fat free sour cream.

2 skinless, boneless chicken breast halves
4 slices bacon
8 ounces sour cream
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap each chicken breast in 2 strips of bacon and place in a glass 9x13 inch baking dish.
  • In a small bowl, mix the sour cream and soup. Cover the chicken with the sour cream/soup mixture and bake uncovered in the preheated oven for 40 to 50 minutes or until slightly brown on top. Let cool and serve on top of hot, cooked rice if desired.

3 ounces bacon, cut into 1/4-inch pieces (about 3 slices)
2 tablespoons all-purpose flour
1 3/4 cups canned low sodium chicken broth
vegetable oil
4 pork chops, bone-in 1/2 to 3/4 inch thick
ground black pepper
2 medium yellow onions, halved pole to pole and sliced thin (about 3 1/2 cups)
salt
2 tablespoons water
2 medium garlic cloves, pressed through garlic press
1 teaspoon minced fresh thyme leave
2 bay leaves
1 tablespoon minced fresh fresh parsley leaves, plus some (to garnish)

Steps:

  • Fry bacon in small saucepan over medium heat, stirring occasionally, until lightly browned, 8 to 10 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate, leaving fat in saucepan (you should have 2 tablespoons bacon fat; if not, supplement with vegetable oil). Reduce heat to medium-low and gradually whisk flour into fat until smooth. Cook, whisking frequently, until mixture is light brown, about the color of peanut butter, about 5 minutes. Whisk in chicken broth in slow, steady stream; increase heat to medium-high and bring to boil, stirring occasionally; cover and set aside off heat.
  • Heat 1-tablespoon oil in 12-inch skillet over high heat until smoking, about 3 minutes. Meanwhile, dry pork chops with paper towels and sprinkle with 1/2-teaspoon pepper. Brown chops in single layer until deep golden on first side, about 3 minutes. Flip chops and cook until browned on second side, about 3 minutes longer. Transfer chops to large plate and set aside.
  • Reduce heat to medium and add 1 tablespoon oil, onions, 1/4 teaspoon salt, and water to now-empty skillet. Using wooden spoon, scrape browned bits on pan bottom and cook, stirring frequently, until onions are softened and browned around the edges, about 5 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds longer.
  • Return chops to skillet in single layer, covering chops with onions. Pour in warm sauce and any juices collected from pork; add bay leaves. Cover, reduce heat to low, and simmer until pork is tender and paring knife inserted into chops meets very little resistance, about 30 minutes.
  • Transfer chops to warmed serving platter and tent with foil. Increase heat to medium-high and simmer sauce rapidly, stirring frequently, until thickened to gravy-like consistency, about 5 minutes. Discard bay leaves, stir in parsley, and adjust seasonings with salt and pepper. Cover chops with sauce, and serve immediately.
  • * MAKE AHEAD FREEZER DIRECTIONS- Instead of returning chops to the skillet as noted above, place chops in single layer into an oven- and freezer-proof baking dish, covering chops with onions and reserved bacon. Pour in warm sauce and any juices collected from pork; add bay leaves. Allow to cool completely before covering and freezing. When ready to prepare, defrost completely. Preheat oven to 350 degrees and place baking dish uncovered in preheated oven. Bake for 30 minutes until pork is tender and paring knife inserted into chops meets very little resistance, about 30 minutes. Continue by transferring the chops to a warmed serving platter and following the last step as noted above.
