SNICKERDOODLE COOKIE BARS



Snickerdoodle Cookie Bars image

These easy Snickerdoodle bars are soft and chewy, with swirls of the requisite cinnamon.

2 1/3 cups all-purpose flour
1 1/2 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, at room temperature
1 1/4 cups granulated sugar
1/2 cup packed brown sugar
3 eggs, at room temperature
1 tsp vanilla
1 1/2 TB granulated sugar
1 1/2 TB cinnamon

Steps:

  • Preheat oven to 350°
  • Butter or spray with non-stick spray a 8 x 8 baking dish
  • In a small bowl, combine flour, cream of tartar, baking soda, and salt. Set aside
  • Combine butter and sugars and beat on high in an electric mixer for 4-5 minutes, until light and fluffy
  • Gradually beat in eggs and vanilla into sugar/butter mixture until combined.
  • Add in dry ingredients and beat just until combined
  • Spoon half of the mixture into prepared pan, smoothing it out as much as possible
  • Sprinkle 75% of the cinnamon-sugar mixture over batter
  • Dollop remaining batter over the cinnamon-sugar mixture
  • Sprinkle the remaining cinnamon-sugar over the dough
  • Bake 50-55 minutes or until a toothpick inserted in the middle comes out clean.
  • Cool completely for 1 hour before cutting.

1 cup unsalted butter (at room temperature)
2 cup packed brown sugar
2 eggs (at room temperature)
1 tablespoon vanilla
2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoon white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350°. Lightly grease or spray a 13x9 baking dish.
  • Cream butter in a large mixing bowl.
  • Beat in brown sugar, eggs and vanilla until smooth.
  • In a separate bowl, whisk together the flour, baking powder and salt.
  • Add the flour mixture to the butter mixture and mix until thoroughly combined. Do not over mix.
  • Spread the batter evenly in the prepared baking dish.
  • In a small bowl, combine the white sugar and cinnamon.
  • Sprinkle the mixture evenly over the batter.
  • Bake for 25 - 30 minutes or until the surface springs back when gently pressed.
  • Cool on a wire rack.
  • Cut into squares and enjoy :)

  • In a large bowl stir together the melted butter and sugars until evenly combined and no sugar lumps remain. Ensure that the butter isn't still hot, then stir in the egg and vanilla until combined. Then carefully stir in the flour, cornstarch, cream of tartar and salt until no flour lumps remain. Spoon/spread the mixture into your prepared pan.
  • In a small bowl - or the bowl you used to make the batter - combine the sugar, cinnamon and nutmeg for the cinnamon sugar mixture. Sprinkle the mixture over your cookie bar batter until it's evenly covered and you can't see the cookie batter underneath. You may have some extra if you use an 8x8 inch pan instead of a 9x9 inch pan.
  • Bake in your preheated oven for 22-25 minutes or until you can start to see the sides of the bars just starting to pull away from the edges. Allow to cool, then remove from the pan and cut into 9 or 12 bars.
