These hors d'oeuvres are so elegant for bridal or baby showers. I always make them ahead. You can season the cream cheese with anything you like. I sometimes make them with plain cream cheese. They are time consuming- but worth it because the presentation is beautiful. Did I mention they taste great too? From the wonderful book 'Showers' by Beverly Clark.

48 snow peas
8 ounces cream cheese, at room temperature
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1 clove garlic, minced
black pepper, optional

Steps:

  • In salted, boiling water, blanch (boil rapidly in lots of water) snow peas for 30 seconds.
  • Cool in cold water, drain, and set aside.
  • Blend the rest of the ingredients until smooth.
  • With a sharp pairing knife, split the snow peas along the curved side.
  • Fill each snow pea with filling, using a small spatula or pastry bag with tip.
  • I have used a ziplock bag with a hole cut in the corner.
  • Can be made the day before, refrigerate, and serve chilled.

  • Add snow peas, toss to coat and stir occasionally just until peas are cooked, about 3 minutes. Serve immediately.

You can use either snow peas or small sugar snap peas. Don't let the anchovies scare you - they add a wonderful element per the recipe. Recipe is from the "California Sizzles" cookbook. Note: blanched asparagus or green beans are also good accompaniments. Prep time does not include chill time. You can use the lighter versions of sour cream and cream cheese if you prefer.

1 1/4 lbs snow peas (or 2 pounds small sugar snap peas)
2 tablespoons whipping cream
2 ounces anchovies, undrained (optional)
1/2 lemon, juiced
3 -4 tablespoons Dijon mustard
1/2 cup sour cream
3 ounces cream cheese, softened
2 green onions, chopped (white parts only)
pepper
1 tablespoon capers, rinsed and drained (optional)

Steps:

  • Clean and string snow peas. In a food processor, mix the lemon-dijon sauce ingredients, EXCEPT capers, and process to a smooth consistency. Refrigerate.
  • To serve, bring the sauce to room temperature and garnish with capers. Arrange snow peas on a platter. Put sauce in a bowl and place in the center of the platter.

  • Put the water in a saucepan and add salt. Bring to a boil and add the snow peas. Blanch them for 1 minute and drain.
  • Heat the oil in a nonstick skillet. Add the sesame seeds and brown them lightly. Add the snow peas, scallions, salt and pepper. Saute for 1 minute and serve.

  • In a large saucepan, bring 6 cups water to a boil. Add snow peas; cook, uncovered, just until crisp-tender and they turn bright green, 1-2 minutes. Drain and immediately drop into ice water. 24 snow peas, trimmed
1 1/4 tablespoons horseradish
3 drops hot sauce
6 ounces cream cheese, at room temperature
3/4 cup radish, sliced
1/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste

Steps:

  • 1. Blanch the snow peas in boiling water for 1 minute. Immediately dash them into cold water with a few ice cubes. Slit open the inside if each pea. Set aside. 2. Puree the remaining ingredients in a food processor until very smooth. Spoon the radish cream into each of the snow peas (if you have an icing tube or pastry tube they will work well and give an even finish). 3. Arrange the filled peas on a platter already covered in red lettuce or radicchio leaves. Arrange them in a pattern (Fan, Spray, side by side or whatever).
