SOFFRITO - TANGY SLICED BEEF IN VINEGAR-PARSLEY SAUCE



Soffrito - Tangy Sliced Beef in Vinegar-Parsley Sauce image

This classic Greek recipe is one of the most famous dishes of Corfu and another remnant of the island's illustrious Venetian past. This version, by a well-known local cook, is delicious. If you're a fan of easy, tangy meat dishes that can be whipped up for company or a weeknight meal, this is it!

Number Of Ingredients 10

1 pound beef (veal or chicken fillets (cut thin as for schnitzel))
Flour as needed ((about 1 - 1 ½ cups))
Salt and pepper to taste
Olive oil for frying
3 cups chopped fresh flat-leaf parsley (divided into 1 batch of 2 ½ cups and one ½ cup for garnish at the end)
8 garlic cloves (sliced thin)
¼ - ⅓ cup white wine vinegar ((to taste))
½ cup dry white wine
½ cup hot water (or more, as needed)
Strained juice of a half or whole lemon (to taste)

Steps:

  • Using a mallet on a clean surface, pound the meat fillets to get them as thin as possible without tearing, about ⅛-inch thick. Cut into pieces about 3-inches long and wide.
  • Season the flour generously with salt and pepper and spread out onto a plate.
  • Heat 2 - 3 tablespoons of olive oil in a large, wide frying pan over medium heat. Coat the meat in the flour, shaking off any excess, and fry in batches until lightly browned, turning to cook on both sides. Repeat until all the meat is browned. Set it aside on a plate as you go. Replenish the oil as needed. Don't wash out the frying pan.
  • Add a tablespoon or so of olive oil to the bottom of a wide, shallow pot or deep frying pan. Spread a heaping handful of parsley on the bottom and sprinkle with about a third of the garlic slices. Add enough browned meat slices to cover the surface of the pan. Repeat this layering of parsley-garlic and meat slices until everything is in the pan.
  • Reheat the frying pan in which you've browned the meat and deglaze with the wine and vinegar, scraping up any stuck bits of meat. Pour this mixture over the layered meat and parsley. Add enough hot water to come about a third of the way up the contents of the pan. Cover and cook over medium-low heat for about a half hour, or until the meat is tender and the sauce thick. Drizzle with fresh lemon juice and serve garnished with remaining fresh, chopped parsley.

This simple soffritto recipe is a must for most sauces, soups, stews in any Italian kitchen. It's not a dish in itself, but rather an essential flavor base quick and easy to make!

Number Of Ingredients 4

1 medium-sized onion, peeled and diced
1 medium-sized carrots, peeled and diced
1 celery rib, diced
1-2 Tbsps olive oil, extra virgin olive oil or butter

Steps:

  • Wash the vegetables, peel onion, carrot, and trimmed the celery rib, and remove the leaves.
  • With a sharp knife, mince or finely dice the onion, carrots, and celery. Try to keep the same size and make sure you use a chopping board and handle your knife carefully.
  • Heat the olive oil in a skillet or in a pot over low to medium heat. 1 maximum 2 Tbsps of olive oil (or the same amount of butter) is enough. When the oil starts shimmering add the diced vegetables, and cook, stirring often.
  • Adjust to low heat as needed, and continue to sauté until golden, it will take from a minimum of 5-7 minutes to 20 minutes, take your time.
  • When the soffritto is nearly done you can add minced garlic, aromatic herbs, spices, or wine. Give a good stir, keep cooking for 1 or 2 minutes, then add the rest of the ingredients according to the recipe you want to make.

1/2 pound lean ground beef (90% lean)
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 teaspoon minced garlic
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 tablespoon sugar
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
Hot cooked spaghetti

Steps:

  • Crumble beef into a 2-qt. microwave-safe dish. Add the onion, green pepper and garlic. Cover and microwave on high for 5-6 minutes or until meat is no longer pink and vegetables are tender, stirring frequently; drain. , Stir in the tomato sauce, tomato paste, sugar, vinegar, salt, basil and oregano. Cover and microwave at 70% power for 6-8 minutes or until heated through, stirring once. Serve with spaghetti.

1 cup packed parsley leaves (about 1 ounce), washed and dried
1 tablespoon extra-virgin olive oil
1 small clove garlic, peeled
Salt and freshly ground black pepper to taste
1/3 cup sherry vinegar or other good, fairly mild vinegar

Steps:

  • Place the parsley in a food processor, along with the oil, garlic, a healthy pinch of salt and about 1/4 teaspoon of pepper. With the machine on, drizzle the vinegar through the feed tube until the parsley is pureed.
  • Add a tablespoon of water and pulse the machine on and off a couple of times; taste. The mixture should taste sharp, but not overpoweringly so. If it seems too sharp, add a little more water; the texture will be quite loose, something like thick orange juice. Taste and add more salt and pepper if necessary. Pass the sauce at the table. Spoon it over grilled, broiled or roasted steaks, pork or chicken.

  • To prepare this delicious Greek sofrito recipe, start by preparing the veal. Season the meat with salt and freshly ground pepper and dredge lightly the veal slices with flour, tapping off any excess. Heat the oil and butter in a large non stick skillet over medium-high heat. Add the veal (in batches) and sauté, until browned on all sides. Do not add all the meat in the sauce pan, rather sauté in batches, so that the temperature of the oil remains high and the meat is sealed. When done, remove with a slotted spoon, place on a platter, cover and set aside.
  • Cut the garlic cloves in slices and add in the same oil used to brown the meat. Turn down to medium heat and stir for a minute. Pour in the white wine vinegar and deglaze. Add the veal and the white wine and wait for a couple of minutes to steam up. Add the warm broth and season with salt and pepper.
  • Turn the heat down to low-medium and simmer until the veal is tender and the sauce thickens, for about 30-40 minutes. About 5 minutes before removing from the heat, stir in the freshly chopped parsley.
  • Serve the Sofrito while still hot over mashed potatoes, rice or fries, with some crusted garlic bread aside. Enjoy!
