BACON & SWISS CHICKEN SANDWICHES
I created this chicken sandwich recipe based on a meal my daughter ordered at a restaurant. She likes to dip her sandwich in the extra honey-mustard sauce. -Marilyn Moberg, Papillion, Nebraska

- In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve chicken on buns with bacon, mayonnaise mixture and, if desired, lettuce and tomato.

- In a small bowl, combine the first six ingredients. Broil chicken 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°, brushing occasionally with mustard mixture. Serve on buns with lettuce and tomato.

HONEY-MUSTARD CHICKEN SANDWICHES
From Taste of Home. Quick and easy! We enjoy these sandwiches with their tangy honey-mustard sauce. I usually make a bit of additional sauce and mix it with some mayo to spread on the sandwich buns. I also use the lesser amount of cayenne pepper to allow for the little taste buds in our family and often grill the chicken instead of broiling it. Either way, we think they're tasty!

- In a bowl, combine the first six ingredients.
- Broil chicken 4 inches from the heat for 3 minutes on each side.
- Brush with mustard sauce. Broil 4-6 minutes longer or until juices run clear, basting and turning several times.
- Serve on buns with tomato and lettuce. Yield: 4 servings.
- **NOTE**.
- The cooking times in this recipe are from the original recipe - I admit I have never timed the chicken exactly. Depending on the thickness of your chicken breats, your time will vary. In the past, I have found that when I pound the chicken breast flat to an even thickness instead of just using them "as they are" I come closer to the recipe times listed.

- To make the honey mustard dressing- in a bowl whisk together mayonnaise, mustard, honey, and lemon juice. Season with salt and pepper. Store covered in the refrigerator until needed.
- Season chicken breasts on both sides with salt and pepper. Cook the chicken using your method of choice (grilling, stovetop, oven) until fully cooked (the internal temperature has reached 165 degrees). Allow the chicken to cool and chop it into small chunks. Chop the cooked crispy bacon until pieces. In a large bowl mix together the chicken and bacon pieces.
- Pre-heat the oven to 300 degrees. Split the sub rolls and lay them onto a baking sheet. Spread about 1 tablespoon of the honey mustard dressing onto one side of the inside of the sub roll. Fill each sub roll with even amounts of the chicken and bacon mixture. Top with 2 slices of Swiss cheese. Place into the oven and bake at 300 degrees for 10 minutes (or longer if you want them toasted more).
- Remove from the oven. Top the subs with 2 slices of tomato, 2 slices of onion, 1 piece of lettuce, and additional honey mustard sauce.
