SOPA SECA: MEXICAN NOODLE CASSEROLE

Made by lightly frying vermicelli noodles and then cooking them in a rich broth flavored with spices, chipotle and tomatoes, sopa seca is considered comfort food in Mexico. We added smoked turkey to the mix, topped the noodles with grated Cheddar, and finished cooking in the oven for a cheesy, bubbly finish.

1/4 cup extra-virgin olive oil, plus extra for pan
12 ounces fideos (bundled vermicelli)
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon dried oregano, preferably Mexican
1 teaspoon New Mexican chili powder
1 bay leaf
1 1/2 cups canned whole tomatoes
1 to 2 chipotles en adobo sauce, minced
1 1/2 cups chicken broth, homemade, or low-sodium canned
1 teaspoon kosher salt
Freshly ground black pepper
2 cups shredded smoked turkey
1 cup coarsely grated cheddar cheese (4 ounces)
Mexican crema, or sour cream thinned with a bit of milk, optional

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-inch square baking dish with oil. Heat the extra-virgin olive oil in a large skillet over medium heat. Add the fideos and cook, turning them with tongs, until golden brown on both sides, about 5 minutes. Transfer the bundles and any broken pieces to a plate. Add the onion to the skillet and cook over medium heat, stirring occasionally, until golden brown, about 8 minutes. Stir in the garlic, coriander, oregano, chili powder, and bay leaf, and cook until fragrant, about 30 seconds. Crush the tomatoes over the pot with your hand and add them to the pot along with their juices. Add the chipotles, increase the heat to high, and cook until thickened, about 2 minutes. Stir in the broth, the toasted fideos, salt, and pepper, to taste. Bring mixture to a boil, reduce heat, and simmer gently, uncovered, breaking up the fideos with a spoon, for about 5 minutes. Stir in the turkey. Remove the bay leaf. Transfer the mixture to the prepared baking dish, sprinkle the grated cheese over the top, and cover loosely with foil. Bake until the cheese melts and the casserole is hot through and through, about 20 minutes. If desired, serve with some crema drizzled over the top. 1 serrano pepper, seeded and chopped
1/2 cup plus 1 tablespoon canola oil, divided
6 corn tortillas (6 inches), halved and cut into 1/4-inch strips
2 dried pasilla chilies, stems removed, seeded and cut into 1/2-inch pieces
1/2 cup finely chopped onion
2 garlic cloves, minced
6 cups chicken broth
1-1/2 cups fresh or frozen corn
3/4 cup shredded cooked chicken
1 tablespoon minced fresh epazote or 1 teaspoon dried epazote
1 tablespoon lime juice
Cubed avocado and lime wedges, optional

Steps:

  • In a blender, combine tomatoes and serrano pepper. Cover and process until smooth; set aside. In a large skillet, heat 1/2 cup oil over medium heat. Add tortilla strips; cook and stir until golden brown and crisp. , Remove to paper towels; pat dry. Drain, reserving 2 tablespoons oil in skillet. Add pasilla chilies; cook and stir for 1 minute or until lightly toasted. With a slotted spoon, remove to paper towels to drain., In a large saucepan, saute onion and garlic in remaining oil until tender. Add tomato mixture; cook and stir over medium heat for 10 minutes or until very thick. Add the broth, corn, chicken and epazote; bring to a boil. Reduce heat; cover and simmer for 30 minutes. Stir in lime juice. , Ladle soup into bowls; top with tortilla strips. Sprinkle with pasilla chilies. Garnish with avocado and lime if desired.

A rich and creamy Mexican side dish - full of peppers, onions, cheese and corn tortillas. It will surprise you. The name means "Dry Tortilla Soup" Some people would call it a casserole. I call it divine. A nice addition to a Mexican dinner, this also goes well with other foods. Not spicy at all, so it can go with many things. Though it is meant to be a side dish, you could serve it along with a large salad for a luncheon or light dinner. (Or, not so light, maybe) This is so rich and creamy, you'll want to make it for company. If you must have spicy foods, you can add some jalepenos to it if you like. But do try it this way first.

10 6-inch corn tortillas
cooking oil (olive or canola)
2 green bell peppers, cut in strips
1 medium onion, chopped
1 clove garlic, minced
1 teaspoon salt
1 cup whipping cream
1 cup shredded monterey jack cheese

Steps:

  • Cut tortillas in strips about 3 inches long and 1/2 inch wide.
  • In medium skillet heat 1/4 inch of oil.
  • Fry tortilla strips, a few at a time, about 10 seconds or just until limp.
  • Remove with slotted spoon.
  • Drain on paper toweling.
  • Pour off all but about 2 tablespoons oil from skillet.
  • Add green pepper strips, onion and garlic; cook till onion is tender.
  • Sprinkle vegetables with salt.
  • In 1-1/2 quart casserole, combine tortilla strips, vegetables, and half of the cheese.
  • Pour whipping cream over all.
  • Cover and bake in 350-degree oven for 20 minutes.
  • Uncover.
  • Stir gently; sprinkle with remaining cheese.
  • Bake uncovered about 10 minutes more or until heated through.

I visited my best friend (Magga) over the Easter holiday & borrowed a few cookbooks from her. I was immediately drawn to *Taste of Mexico* by Elisabeth L. Ortiz, found this recipe among her collection of "70 fiery & flavourful recipes from south of the border" & learned some new lessons on authentic Mexican cuisine. Her intro to the *Soups* section says "Soups are a must for the midday main meal (comida). There are 2 types: aguada (liquid) & seca (dry). The 1st term is self-explanatory, but what is a dry soup? It describes a separate course (traditionally a tortilla or rice dish) served after the more conventional soup & before the main course." I never knew that & this "dry soup" sounds so good to me. (Times were estimated & 15 min allowed for ingredient prep + assembly) *Enjoy* !

1/2 cup corn oil
1 onion (finely chopped)
2 garlic cloves (chopped)
1 lb tomatoes (peeled, seeded & chopped)
1/2 teaspoon dry oregano
1/4 teaspoon sugar
16 corn tortillas (sml size, day-old & cut in 1/2-in strips)
1 cup double cream
1 cup parmesan cheese (freshly grated)
salt (to taste)
black pepper (freshly ground to taste)

Steps:

  • Heat 2 tbsp of oil in a non-stick fry pan. Saute onion + garlic till soft & stir in chopped tomato.
  • Cook tomato till thick, then stir in oregano & sugar. Season to taste & set aside in a bowl.
  • Wipe the pan clean w/paper towels, heat the remaining oil in the pan & fry the tortillas without allowing them to brown. Drain fried tortilla strips on paper towels.
  • Pour a layer of the tomato sauce into a greased flameproof casserole. Add a layer of tortilla strips, a thin layer of cream, another layer of sauce & a layer of grated cheese. Continue till all ingredients have been used, ending w/a layer of cheese.
  • Cover casserole & heat through gently on the stovetop ~ or heat through for about 20 min in an oven preheated to 180C (350F).
  • *Cooks Tip* ~ Be sure to use corn tortillas for this recipe. If only lrg ones are available, use 8.
  • *Personal Note* ~ Altho not a part of the recipe or its authentic intent, I can easily see this dish 1) Converted to a main-course w/the addition of seasoned grd meat or chorizo to the sauce *or* 2) Combined w/a salad to form a meatless main-dish.

vegetable oil, or as needed
12 (6 inch) corn tortillas, cut into strips
3 dried pasilla chile peppers, seeded
2 tomatoes, seeded and chopped
½ large onion, chopped
1 clove garlic
¼ teaspoon dried oregano
4 cups water
4 teaspoons chicken bouillon granules
1 sprig fresh parsley
1 avocado - peeled, pitted, and diced
¾ cup diced cotija cheese
2 tablespoons crema fresca (fresh cream)

Steps:

  • Heat oil in a large pan or wok over medium-high heat. Add tortilla strips in batches and fry until brown and crispy, 2 to 3 minutes per batch. Remove from heat and drain on paper towels.
  • Fry pasilla chiles in the same pan, being careful not to burn them, until browned, about 2 minutes. Remove from oil and drain on paper towels.
  • Combine 1 fried pasilla pepper, tomatoes, onion, garlic, and oregano in a blender; blend until smooth. Strain through a sieve into a bowl.
  • Heat 1 teaspoon oil in a saucepan over medium heat. Add tomato mixture and cook for 2 minutes. Pour in water and bring to a boil. Stir in chicken granules and parsley. Cover and simmer over low heat until flavors are well combined, about 15 minutes. Remove from heat and discard parsley.
  • Divide fried tortilla strips among 4 bowls. Pour soup on top of tortilla strips and garnish with diced avocado and cotija cheese. Cut remaining fried pasilla peppers into thin strips and sprinkle over soup. Add Mexican crema to each bowl.

Pasta. That's not Mexican, right? Think again. You see it in homes throughout Mexico, one of the many foreign foods that we have welcomed into our cuisine and something I ate growing up. We call this Mexican comfort food, funnily enough, sopa seca, which means "dry soup."

Roasted Tomato-Chile de Arbol Salsa:
1 pound plum tomatoes (about 4)
3 to 6 chiles de arbol, depending on how spicy you like it
2 tablespoons olive oil
1 medium white onion, chopped
4 garlic cloves, crushed
1/2 cup chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Sopa Seca:
1/4 cup canola oil
1 cup small shaped pasta such as melon seeds, orzo, or alphabets
1/2 cup Roasted Tomato-Chile de Arbol Salsa
2 cups chicken stock (low-sodium store-bought is fine)
1 tablespoon chopped fresh cilantro
A handful of shredded cotija or queso fresco (preferably the Cacique brand, or pecorino, Parmesan, or lightly salty feta

Steps:

  • Heat the oil in a Dutch oven or medium pot over medium-high heat until it ripples. Add the pasta and cook, stirring constantly, until the pasta is golden, about 3 minutes.
  • Scoop out and discard 2 tablespoons of the oil. Add the Roasted Tomato-Chile Arbol Salsa and cook for 2 minutes, stirring the whole time. Pour in the chicken stock and let the liquid come to a simmer. Cover the pot and cook, stirring once in a while, until the liquid is absorbed and the pasta is tender, about 20 minutes.
  • Divide the pasta between two bowls and garnish with the cilantro and cheese.

1 ancho chili, seeded and julienned
1 pound tomatillos, diced
1 pound tomatoes, diced
1 tablespoon dried epazote leaves (see note)
4 cups chicken stock
Kosher salt to taste
Vegetable oil for the casserole dish
20 uncooked corn tortillas, cut into 1-inch-wide strips
3 pounds cleaned squid, cut in half-inch rings, tentacles quartered
1 cup Mexican crema or sour cream
1 cup corn-bread crumbs
2 tablespoons unsalted butter, diced

Steps:

  • In a large saucepan, combine the ancho chili, tomatillos, tomatoes, epazote leaves and stock. Season with salt and bring to a boil. Lower the heat and simmer 30 minutes. Set aside.
  • Meanwhile, preheat the oven to 350 degrees. Oil a 10-by-14-inch glass casserole and place the tortilla strips loosely in it. Bake for 30 minutes. Remove the tortilla strips, separating any that stick together. Brush the bottom of the hot casserole again with oil and arrange a layer of tortilla strips lengthwise across the bottom.
  • Cover the strips with about 2 cups of the squid, dot with some of the crema and pour 2 cups of the tomato mixture over the top. Continue making layers, ending with a layer of tortilla strips, crema and the tomato mixture. Sprinkle the top of the casserole with the corn-bread crumbs and dot with the butter. Bake for 1 hour. Allow to set 30 minutes before slicing and serving.

After graduating college, I loafed around in Mexico for a few months. I rented a little apartment above the garage of a wonderful Mexican family who took me under their wing. The mother made this very flavorful sopa Azteca with interesting textures. It was my favorite dish of the whole trip. I had to watch her make this soup and literally count out all the ingredients because she made this soup from her heart, not from a recipe.

5 dried red chile pepper pods
5 tomatoes, cut into wedges
1 small onion, cut into wedges
1 cube chicken bouillon
4 teaspoons dried oregano
2 teaspoons ground thyme
salt and ground black pepper to taste
vegetable oil as needed
4 corn tortillas, cut into strips
¼ cup Mexican crema, or to taste
2 limes, cut into wedges
1 avocado, cubed

Steps:

  • Bring a pot of water to a boil over high heat. Add chile peppers and boil until soft, about 10 minutes. Transfer peppers to a dish and let cool slightly, about 5 minutes; reserve chile water. Remove and discard stems and seeds from peppers, keeping a few seeds if you like a spicy soup.
  • Combine chiles, tomatoes, onion, bouillon, oregano, and thyme in an electric blender; add as much reserved chile water as possible to fill line. Blend until liquefied.
  • Strain chile mixture into a large pot. Add remaining chile water, adding additional water if necessary. Bring to a boil over high heat. Reduce heat to low and let simmer, 20 to 30 minutes. Season with salt and pepper.
  • Heat oil in a pan over medium heat. Fry tortilla strips in the hot oil under golden brown and crispy, 3 to 4 minutes. Transfer to a paper towel-lined plate to absorb excess oil.
  • Distribute soup evenly between serving bowls and garnish with fried tortilla strips, crema, lime wedges, and avocado.

1/2 cup corn, grapeseed, or other neutral oil
6 corn tortillas (stale are fine), cut into 1/4-inch strips
3 garlic cloves, sliced
1 large onion, diced
2 dried chiles, preferably pasilla, stemmed, seeded, and sliced
3 fresh tomatoes, roasted (page 493) or blanched and peeled, or canned tomatoes
6 cups chicken or vegetable stock, preferably homemade (page 160 or 162)
1 cup shredded cooked chicken
2 tablespoons fresh lime juice, or to taste
Salt and black pepper to taste
1 cup chopped fresh cilantro leaves
1 cup cubed Mexican fresh cheese, such as queso fresco, blanco, or ranchero (see page 85), or Monterey Jack cheese
1 ripe avocado, peeled, pitted, and sliced

Steps:

  • Put the oil in a saucepan over medium-high heat; a couple of minutes later, when the oil is hot, begin to fry the tortilla strips in batches until golden brown and crisp, turning after a minute or two, for a total of 2 to 4 minutes. Drain on paper towels and set aside.
  • Discard all but 2 tablespoons of the oil. Turn the heat to medium, add the garlic and onion, and cook, stirring occasionally, until softened, about 5 minutes. Add the chiles, tomatoes, and half the tortilla strips and cook for another 5 minutes. Pour in the chicken stock and bring the mixture to a boil, then simmer for 20 minutes. (You can prepare the soup up to this point and let sit for a few hours or cover and refrigerate for up to a day before proceeding.)
  • Cool slightly. Using an immersion blender or an upright blender (be careful to prevent spattering), puree the mixture until smooth. Return to the stove over medium heat, stir in the chicken, and heat through. Season with the lime juice, salt, and pepper. Garnish with the cilantro, cheese, avocado, and remaining tortilla strips and serve.

1 1/2 teaspoons cooking oil
2 medium onions, coarsely chopped
6 medium cloves garlic, coarsely chopped
2 pounds large red tomatoes, peeled, seeded and coarsely chopped
1 1/2 tablespoons oregano
1 1/2 tablespoons basil
1 tablespoon ground cumin
1 teaspoon black pepper
2 1/2 quarts water
2 pounds chicken pieces
3 or 4 bay leaves
Sprig epazote (optional) (see note)
1 6-ounce can tomato paste
1 cup bell pepper cut in thin slices about an inch long
1 cup celery cut diagonally in thin slices
1 1/2 cups diced zucchini
1 large carrot, peeled and thinly sliced
Salt to taste, if desired
1 medium potato, peeled, parboiled, diced and fried
15 small corn tortillas cut in strips about 1/4 inch wide, deep-fried and drained
1/2 pound fresh spinach, washed, stems removed and shredded
1 avocado, cubed
1 pound shredded mozzarella or Monterey Jack cheese

Steps:

  • Put oil in a large skillet. Add onions and garlic; sautee until onions are translucent and soft, about 8 to 10 minutes. Add tomatoes, oregano, basil, cumin and black pepper. Cook until tomatoes are soft, 10 to 15 minutes.
  • Blend mixture in blender until smooth. Set aside.
  • Bring the water to a boil in large pot. Add chicken, bay leaf and epazote. Skim off fat and foam. Add puree and tomato paste, and cook until chicken is tender, about 20 minutes. Remove chicken. Skin, shred and set aside.
  • Add bell pepper, celery, zucchini and carrot to broth and cook about 10 minutes, until crisp but tender. Remove vegetables from broth, so as not to overcook. Salt broth to taste.
  • To serve, place vegetables and potato in a large soup bowl. Add, in order, tortilla strips, spinach (around the top), shredded chicken, cubed avocado and cheese. Pour hot broth into soup bowl and serve. Each bowl must be prepared as described to distribute vegetables and tortillas evenly.
