- Soak 1 ounce dried shiitake mushrooms in 2 cups boiling water, covered, until soft, 40 minutes. Drain, reserving the liquid. Discard the stems and chop the mushrooms. Cook 2 cups sushi rice as the label directs, using 1/2 cup mushroom-soaking liquid in place of 1/2 cup water. Cook 1 1/2 cups frozen edamame in salted boiling water until tender, 6 minutes. Add the edamame and shiitakes to the rice; season with salt.

- Pour a little oil unto the pan and sauté the cabbage and the carrots with the onion and garlic in not less than 30 seconds.
- Add the rice and then the soy sauce. Just pour only 1/4 cup on the rice.
- Then, mix it well so that the rice would turn to light brown not black because if it's black the soy sauce you added is too much. If you think the rice is not having the right color, add little by little then mix until the color is correct.
- Reduce a little heat (a little bigger fire than low).
- Add the cooked meat of your choice. Make sure that it is flaked.
- Mix frequently so that the heat would be even.
- Add the salt and seasonings.
- Add the sandwich spread.
- Mix, mix, mix.
- Get a spoon and try the rice shawarma if it's right on your taste.
- If it's to your liking, serve it and enjoy!
SORAMAME RICE

- 1) Bring a pot of water to the boil and salt it lightly. Drop broad beans into the boiling water and cook them for 3 minutes.
- 2) Squeeze each one gently to pop it from the skin. Discard the skins and set the bean aside.
- 3) Rince the rice and drain and let it sit for 30 minutes.
- 4) In a pot, add rice, 360ml water, 1 tbsp of sake, 1 tbsp of salt and cover konbu over the rice and let it cook with middle heat.
- 5) When it boils, take off the konbu(seaweed), let it cook another 15 minutes.
- 6) Turn off the heat, spread boiled broad bean around, and mix.
- 7) Pour the rice to individual bowl.

GINGER EDAMAME RICE
Steps:
- Fill a large pot with water and put over medium-high heat. Add the white whole scallion pieces, the ginger, garlic and a healthy pinch of salt. Bring to a boil, and cook about 5 minutes to infuse the water with the flavors.
- Carefully add the rice to the boiling water, stir, and simmer the rice until cooked through but firm, about 15 minutes. During the last few minutes of cooking, add the edamame to the simmering water.
- Meanwhile, slice the scallion greens and reserve. Drain the rice in a colander; remove the scallions, ginger and garlic, and discard. Transfer to a serving bowl and season with salt and pepper, to taste. Add 3/4 of the scallion greens and stir with a fork to fluff the rice and combine the ingredients.
- Garnish the rice with the remaining scallions and serve immediately.
RICE WITH EDAMAME
This dish is called mame gohan, the Japanese version of rice and beans. The beans are simmered in dashi seasoned with mirin and light soy sauce, and then the same cooking liquid is used for the rice. Before serving, the beans and rice are folded together, with a light dusting of salt and black sesame seeds.

- In a medium saucepan, combine 2 cups dashi broth, mirin, soy sauce and 1/4 teaspoon salt. Bring to a boil over high heat. Add edamame, reduce heat to medium, and cook 4 minutes. Place a colander over a medium heatproof bowl, and pour in contents of saucepan. Reserve broth and beans separately.
- Place rice in a bowl, and rinse with cold water until water runs clear. Drain rice well in a fine strainer. In a medium saucepan, combine rice, reserved broth and kombu.
- Cover saucepan, and place over high heat. When lid jiggles and foam begins to appear at its edges (in 3 to 4 minutes), reduce heat to medium and cook 10 minutes. Raise heat to high for 30 seconds, and then turn it off. Immediately remove kombu from pan and add edamame; do not stir. Cover pan, and remove from heat. Let sit 10 minutes.
- With a wooden paddle or fork, mix beans into rice. Scoop rice into serving bowls, and sprinkle each portion with a teaspoon of black sesame seeds and a little salt. Serve immediately.

- In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish.
