LOBSTER CORN CHOWDER

Lobster Corn Chowder image

Provided by Ina Garten

Categories     side-dish

Time 3h45m

Yield 6 servings

Number Of Ingredients 18

3 (1 1/2-pound) cooked lobsters, cracked and split
3 ears corn
6 tablespoons (3/4 stick) unsalted butter
1 cup chopped yellow onion
1/4 cup cream sherry
1 teaspoon sweet paprika
4 cups whole milk
2 cups heavy cream
1 cup dry white wine
1 tablespoon good olive oil
1/4 pound bacon, large-diced
2 cups large-diced unpeeled Yukon gold potatoes (2 medium)
1 1/2 cups chopped yellow onions (2 onions)
2 cups diced celery (3 to 4 stalks)
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons chopped fresh chives
1/4 cup cream sherry

Steps:

  • Remove the meat from the shells of the lobsters. Cut the meat into large cubes and place them in a bowl. Cover with plastic wrap and refrigerate. Reserve the shells and all the juices that collect. Cut the corn kernels from the cobs and set aside, reserving the cobs separately.
  • For the stock, melt the butter in a stockpot or Dutch oven large enough to hold all the lobster shells and corncobs. Add the onion and cook over medium-low heat for 7 minutes, until translucent but not browned, stirring occasionally. Add the sherry and paprika and cook for 1 minute. Add the milk, cream, wine, lobster shells and their juices, and corn cobs and bring to a simmer. Partially cover the pot and simmer the stock over the lowest heat for 30 minutes. (I move the pot halfway off the heat.)
  • Meanwhile, in another stockpot or Dutch oven, heat the oil and cook the bacon for 4 to 5 minutes over medium-low heat, until browned and crisp. Remove with a slotted spoon and reserve. Add the potatoes, onions, celery, corn kernels, salt, and pepper to the same pot and saute for 5 minutes. When the stock is ready, remove the largest pieces of lobster shell and the corn cobs with tongs and discard. Place a strainer over the soup pot and carefully pour the stock into the pot with the potatoes and corn. Simmer over low heat for 15 minutes, until the potatoes are tender. Add the cooked lobster, the chives and the sherry and season to taste. Heat gently and serve hot with a garnish of crisp bacon.

CORN AND SHRIMP CHOWDER

Corn and Shrimp Chowder image

Shrimp can be difficult to serve in any kind of soup or stew. It takes only a few minutes of overcooking to turn the shrimp tough. To get around this, this chowder is prepared and then, just before serving, the shrimp are sauteed in very hot butter. The shrimp are added to the chowder as it is served. This all sounds like more work than it is, especially since the shrimp cook in just 3 or 4 minutes. Do-ahead tip: The soup is best the first day, but can be prepared a day in advance if necessary. Freeze for longer storage. The shrimp can be peeled and deveined hours in advance. Refrigerate until ready to cook. As published in The Washington Post, 01-26-2000.

Time 1h

Yield 10 serving(s)

Number Of Ingredients 15

3 1/2 cups chicken broth
1 1/2 lbs fresh corn kernels or 1 1/2 lbs canned corn
1/4 lb thick-sliced bacon, cut 1/2-inch dice
1 medium onion, cut 1/2-inch dice
1 large red bell pepper, cut 1/2-inch dice
2 large celery ribs, cut 1/2-inch dice
2 lbs russet potatoes, cut 1/2-inch cubes
2 cups milk
2 cups heavy cream
salt, to taste
fresh ground black pepper, to taste
hot pepper sauce, such as Tabasco, to taste

2 1/2 lbs medium shrimp, peeled, deveined
1/4 cup chopped chives

Steps:

  • In a medium pot, combine the chicken broth and 1 pound of the corn.

  • Set aside.
  • Heat the skillet with the bacon drippings over medium heat and add the onion, bell pepper and celery.
  • Cook, stirring, until the vegetables have softened, 10 to 12 minutes.
  • Add the pureed corn mixture along with the remaining 1/2 pound corn kernels, the potatoes, milk, heavy cream and salt and pepper to taste.

  • Simmer the chowder until the potatoes are tender, 10 to 12 minutes.
  • Add hot pepper sauce and additional salt to taste, if needed.
  • Just before serving, in a large skillet over medium-high heat, melt 2 tablespoons of the butter.
  • Add some of the shrimp, being careful not to crowd the pan.
  • Saute until cooked through, 3 to 4 minutes.
  • Transfer the shrimp to a plate.
  • Repeat with the remaining butter and shrimp.
  • Stir the chives and bacon into the hot soup.
  • Ladle the soup into serving bowls and add 5 or 6 shrimp to each bowl.
  • Serve immediately.
  • If serving as a buffet, place the dish of sauteed shrimp next to the soup and let guests serve themselves.

POBLANO SHRIMP CORN CHOWDER

Poblano Shrimp Corn Chowder image

Absolutely delicious and hearty soup that is always a crowd pleaser and the best I have ever had. Not for those highly concerned with fat grams but worth the splurge even if you are. Great served alongside a meal of soft tacos. I frequently use "Better than Bouillon" as a base and I think the lobster and vegetable are equally good. If you want a lighter, thinner version, omit the creams and use another quart of whole or 2% milk.

Categories     Chowders

Time 35m

Yield 8-10 serving(s)

Number Of Ingredients 16

2 (15 ounce) cans white creamed corn
1 lb fresh shrimp, peeled and diced
1 poblano pepper, seeded and finely diced
1/2 large onion
3 stalks celery
1 teaspoon better than bouillon lobster base or 2 teaspoons better than bouillon vegetable stock base
1 teaspoon chiles de arbol or 1 teaspoon cayenne pepper
1 teaspoon fresh cracked black pepper
2 tablespoons margarine
kosher salt
1/3 cup sugar
1/2 cup butter, melted
1/2 cup white flour
1 pint heavy cream
1 pint half-and-half
1 quart whole milk

Steps:

  • May serve immediately or simmer slowly until ready to serve.

  • Lobster and Shrimp ... Add 7 cups of the broth and 1 teaspoon of the Old Bay seasoning (or any seafood seasoning, I usually add a bit more), to a large pot, and bring to a light boil. Then, add the lobsters and cook 7-9 minutes, based on 3/4 lb lobsters. If using lobster tails, 5-7 minutes. Once the meat in the tail is opaque, firm, and the shell is bright red, the lobsters are done. Remove the lobster to the counter to cool.
  • Note: I have made this with both vegetable and chicken broth; and, both are delicious. I actually prefer chicken, if I had my choice.
  • After you remove the lobster, let the broth come back up to a light boil; then, add the shrimp. The shrimp do NOT take hardly any time. Once they turn pink and begin to curl ... they are done. Remove the shrimp and let them cool as well. Remove the broth from the heat, as you work on the seafood.
  • Remove the meat from the lobster shells (reserving the shells), and rough chop. Put the lobster in a bowl on the counter. Peel the shrimp, saving the shells; rough chop the shrimp, and add to the bowl with the lobster.
