1 (15 ounce) can Contadina® Tomato Sauce
1 (15 ounce) can cannellini beans, rinsed and drained
2 cups College Inn® Chicken Broth
1 cup diced zucchini
½ cup dry ditalini pasta
¼ teaspoon black pepper
¼ cup chopped fresh Italian parsley
1 teaspoon Shredded Parmesan cheese

Steps:

  • Heat olive oil in a large saucepan or Dutch oven over medium-high heat. Cook onion, carrot, celery, garlic and rosemary until vegetables begin to soften, about 5 minutes.
  • Stir in tomato sauce, beans and 2 1/2 cups water. Add broth, zucchini, pasta and pepper; bring to a simmer. Cook, uncovered, 10 minutes or until pasta is tender, stirring occasionally. Stir in parsley. Serve topped with Parmesan cheese and additional parsley, if desired.

1 pound beef stew meat, cut into 1/2-inch cubes
1 can (28 ounces) diced tomatoes, undrained
1 medium onion, chopped
2 tablespoons minced dried parsley
1 teaspoon salt
1-1/2 teaspoons ground thyme
1 beef bouillon cube
1/2 teaspoon pepper
6 cups water
1 medium zucchini, halved and thinly sliced
2 cups chopped cabbage
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 cup uncooked elbow macaroni
Grated Parmesan cheese, optional

Steps:

  • In a 5-qt. slow cooker, combine the first nine ingredients. Cover and cook on low for 8-10 hours or until meat is tender. , Add the zucchini, cabbage, beans and macaroni; cover and cook on high for 30-45 minutes or until macaroni and vegetables are tender. Sprinkle servings with cheese if desired.

2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
2 cups cooked kidney beans (prepared without salt)
1 can (16 oz.) no-salt-added stewed tomatoes, undrained, coarsely chopped
1 pkg. (16 oz.) frozen mixed vegetables
1/4 cup shell macaroni, uncooked
1 tsp. garlic powder
1 tsp. dried basil leaves
unsalted tops saltine crackers

Steps:

  • Combine all ingredients except crackers in large saucepan. Bring to boil on medium-high heat.
  • Simmer on medium-low heat 20 min. or until macaroni is tender.
  • Serve with crackers.

This is a most delicious meal in a soup ever. It makes a huge amount and I usually make a batch at the start of each winter and then freeze it in meal size lots. Is very satisfying by itself or with toast or garlic bread. You will need a very large saucepan to make this. Check salt before serving as I find I need to add more than the recipe recommends. Servings are approximate.

1 lb shin beef, with bone
5 quarts water
1 1/2 tablespoons salt
1 cup dried kidney beans
1 tablespoon olive oil
2 garlic cloves, chopped
1 onion, finely chopped
1/2 cup parsley, chopped
1/2 lb steak, minced
1/2 teaspoon black pepper, ground
1 cup celery, chopped
2 cups cabbage, shredded
1 1/2 cups carrots, diced
3 1/2 cups tomatoes, canned
1 1/2 cups spaghetti, broken into pieces
1 cup peas, frozen
parmesan cheese, grated

Steps:

  • The day before required, put shin of beef on bone, water and beans into a large saucepan. Bring to boil, skim. Cover and simmer for 3 hours.
  • Cool and chill.
  • Next day saute garlic, onion, parsley, minced steak and pepper in oil until the onion is tender.
  • Skim off fat from stock. Remove bone, cut off meat. Return meat to stock with the onion mixture, celery, cabbage, carrots, tomatoes and salt.
  • Simmer, covered, 20 minutes.
  • Add spagetti and peas and cook for about another 15 minutes.
  • Check seasoning to taste.
  • Serve and sprinkle with parmesan cheese.

If you're from lower Michigan you will no doubt know of Lelli's restaurant. They are famous for their Minestrone soup. This tastes exactly like the restaurant soup. It was given to my husband from a friend at work.

3/4 cup chopped onion
2 tablespoons butter
2 (16 ounce) cans mixed vegetables, drained
1 (32 ounce) carton chicken broth
2 (15 ounce) cans cannellini beans, drained, can substitute great northern beans
1 (14 ounce) can crushed tomatoes
1 (8 ounce) box frozen spinach
1 (6 ounce) can tomato paste
1 teaspoon garlic
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon basil

Steps:

  • Saute onion in the margarine,.
  • Add the above ingredients and simmer for at least 1 1/2 hours.
  • Process at least half of the soup in a blender, or use a stick blender.
  • Add 1/3 cup uncooked macaroni,1/4 cup parmesan cheese and 1 cup half & half.
  • Cook for at least 20 minute more and serve with crusty bread and additional parmesan cheese.
  • You can also add a small can of garbanzo beans with the macaroni, cheese and milk.
