SOUTH AFRICAN STIR FRY



South African Stir Fry image

This recipe was shared with me by a friend from South Africa. I'm usually not a lover of curry but this was so good!

Number Of Ingredients 10

1/2 cup canola oil
1 large onion, finely chopped
2 cloves garlic, minced
2 (15 ounce) cans diced tomatoes
1 tablespoon black pepper
1 teaspoon curry powder
1 teaspoon nutmeg
1/2 lb cooked chicken or 1/2 lb cooked pork
1 1/2 cups jasmine rice
1 cup water

Steps:

  • Over medium high heat, pour canola oil in a large, heated saute pan.
  • Add onion and garlic and saute until light brown.
  • Add pepper and then tomatoes.
  • Cook for 5 minutes, stirring frequently.
  • Lower heat to medium.
  • Add meat, curry and nutmeg and cook for 15 minutes.
  • Add 1 cup water and then rice; stir and cover.
  • Cook at medium heat for 40-50 minutes or until rice is tender.
  • IMPORTANT: ADD WATER AS NEEDED TO KEEP RICE FROM STICKING TO PAN.
  • Serve as is or with tortillas.

This is a staple food in South Africa as well as other parts. My amaXhosa friend, Ntombizanele Sokupa, gave this recipe to me. She eats this with Pap -Recipe #309584, but says it can also be enjoyed as a side dish with meat or vegemeat or with bread. Thanks Zanele!

3 medium onions, diced
3 medium carrots, diced
2 medium green bell peppers, diced
3 medium tomatoes, diced
curry powder, to your taste
salt, to taste
pepper, to taste
green chili (optional)
1 vegetable bouillon cube
1 teaspoon chili powder
1 -2 tablespoon oil, for frying
1/4 cup water

Steps:

  • Fry the onion and pepper together with oil in a large skillet until the onion is clear.
  • Add the grated carrots, tomatoes, water, and all the seasonings to your liking and cook for about 15-20 minutes.

½ cup chicken stock
⅓ cup soy sauce
2 tablespoons honey
2 teaspoons sesame oil
2 tablespoons minced fresh ginger
1 tablespoon corn starch
1 tablespoon sriracha or sweet chili sauce (optional)
500 g protein of your choice (chicken and tofu were used for this recipe)
3 cups of vegetables, chopped (cauliflower, peppers, carrots, green beans and bean sprouts were used for this recipe)
2 tablespoons oil
2 cups rice or noodles, cooked
peanuts and sesame seeds (optional)

Steps:

  • Combine all the ingredients in a bowl and whisk vigorously until combined.
  • Heat 1 tablespoon of oil in a large pan or wok. Add your protein of choice and cook until browned and almost cooked through. Remove from the frying pan and transfer to a plate.
  • Add another tablespoon of oil in the pan, along with your vegetables. Stir fry until the veggies are crisp but tender.
  • Add the protein back to the pan. Stir in the stir fry sauce. Cook and stir, until the sauce thickens and the protein is cooked through, 2 to 3 minutes.
  • Add the cooked rice or noodles to the frying pan and stir to combine.
  • Serve immediately.

1 lb. boneless skinless chicken thighs, cut into bite-size pieces
2 cups sugar snap peas, trimmed
1 large red pepper, cut into 1-inch pieces
3 cloves garlic, minced
1 tablespoon lite soy sauce
2 green onions, cut diagonally thinly sliced
sesame seeds

Steps:

  • Heat oil in a wok or large skillet on medium-high heat.
  • Add the chicken, peas, peppers and garlic; stir-fry 4 to 5 minutes or until chicken is done.
  • Serve with soy sauce and thinly sliced green onions
  • Sprinkle with sesame seeds.
