HONEY OATMEAL CHEWY BARS
Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

Steps:
- Preheat oven to 350.
- Cream butter, honey and sugar until light and fluffy.
- Add egg and vanilla.
- Mix together dry ingedients.
- Slowly add to creamed mixture.
- Stir in oatmeal, coconut and nuts.
- Spread into greased 13x9 pan.
- Bake 20-25 minutes in 350 degree oven.
- Cool and cut into bars.
- Store airtight with a piece of fresh bread to keep them soft.

- In large microwavable bowl, microwave marshmallows and butter uncovered on High about 2 minutes, stirring after every minute, until smooth.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. In a small bowl, whisk flour, oats and salt; gradually add to creamed mixture, mixing well. Press onto bottom and 1/2 in. up sides of an ungreased 13x9-in. baking pan. Bake until edges begin to brown, 16-20 minutes. Cool on a wire rack., For filling, in a large saucepan, combine honey, apple jelly and butter over medium heat; stir until jelly and butter are melted. Remove from heat; whisk in brown sugar, eggs and vanilla. In a small bowl, whisk flour, baking powder, salt and cinnamon; whisk into honey mixture. Fold in walnuts and dates. Pour over crust; spread evenly. Bake until golden brown, 24-28 minutes. Cool completely in pan on a wire rack. Cut into bars.

- Line an 8-inch square baking pan with 2 pieces of parchment paper.
- Combine butter, sugar, honey, salt, and cinnamon in a medium saucepan. Bring to a boil, stirring constantly. Continue to boil for 1 to 2 minutes, then immediately remove from heat.
- Stir in cereal and almonds. Pour into lined pan, pressing down with a rubber spatula. Let cool completely (about 30 minutes), and cut into 16 squares.

- Preheat oven to 375°. Line an 13x9" pan with aluminum foil, hanging the ends over the edges to lift out after baked. Grease the aluminum foil liberally with 1 tbsp butter - sides and bottom.
- In a large bowl, combine the flour, sugar, baking powder and salt and whisk together. Cut in the remaining 6 tbsp butter with your fingers and combine until you have coarse crumbs and the butter is distributed. Stir in the egg and combine completely. Firmly press into the prepared pan (layer will be rather thin).
- Bake the base for 15-18 minutes until the edges are light golden brown. Set on a wire rack and prepare the topping.
- For the topping, in a large heavy-bottomed saucepan, combine the honey, brown sugar and salt. Bring to a low boil over medium heat, stirring occasionally until sugar is dissolved. Boil for 1 to 1 1/2 minutes without stirring. Stir in the butter and cream (may boil up a little, be careful) and return to a low boil. Cook and stir on medium-low for 1 minute, until smooth and cream is completely incorporated. Remove pan from heat and stir in the nuts. Stir to coat all of the nuts evenly.

- Roughly chop the almonds and cashews by hand, in a hand chopper, in a blender, or in a food processor. Pieces should be about 1/4" at the largest.
- Combine all ingredients except honey in a large bowl and stir until combined. Pour in the honey and mix with a fork until everything is evenly coated.
