1/2 lb. Mexican chorizo
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 can (10 oz.) diced tomatoes and green chiles, undrained
1-1/4 cups water
1/2 cup KRAFT Shredded Colby & Monterey Jack Cheeses

Steps:

  • Crumble chorizo into large nonstick skillet; cook on medium heat until done, stirring frequently. Drain chorizo; return to skillet.
  • Add Macaroni, tomatoes and water; stir. Bring to boil; simmer on medium-low heat 15 min. or until macaroni is tender, stirring occasionally
  • Add Cheese Sauce Mix; stir until blended. Top with shredded cheese.

2 red peppers, freshly roasted
4 cups elbow macaroni
1/4 cup butter
1/4 cup flour
2 1/2 cups milk
1 egg
6 ounces (about 1 1/2 cups) Wisconsin Queso Quesadilla Cheese, shredded
3 ounces (about 3/4 cup) mild Wisconsin Cheddar Cheese, shredded
1/2 teaspoon salt, more to taste
1/2 teaspoon pepper, more to taste
14-ounce can green chilies
optional: extra cheese, crushed tortilla chips and/or chopped cilantro for topping

Steps:

  • Roast red peppers using the broil option on your oven (if you don't have broil, bake at 400°F). Put peppers on a baking sheet and broil for about 10-15 minutes, turning occasionally to ensure blistering on all sides. Once done, put them in a zipped plastic bag for about 10 minutes to allow the skin to loosen. Peel the skin from the peppers and remove the seeds, but do NOT rinse, and chop. Cook macaroni according to package directions until al dente. Drain and set aside. In large pan, melt butter over medium-low heat and sprinkle in flour. Cook for a few minutes, stirring constantly. Pour in milk and whisk until smooth. Cook until thick. Reduce heat to low. In small bowl, whisk egg. Add 1/4 cup of the warm milk and butter mixture slowly and whisk together to temper egg. Add egg mixture back to pot with the milk and butter and whisk until smooth. Add shredded cheese to milk and butter mix and stir until melted. Add salt and pepper to taste. Mix in chopped red peppers and can of green chilies (do not drain). Add in drained pasta and mix to combine. Serve immediately or pour into baking dish, top with more cheese (or crushed tortilla chips) and bake at 350°F for 20-25 minutes.

Black beans, corn, mild green chilies (or hot, depending on your preference), chili powder, and optional chunks of chicken for the meat-eaters join up with an uber-creamy, cheesy pasta topped with a sprinkle of crushed tortilla chips. And then baked to perfection.

8 oz. 1/2 pound or about 1 3/4 cups macaroni or other medium tubular pasta (like pennette or penne)
2 cups shredded cheddar cheese
1 1/2 cups shredded monterey jack cheese
1/4 cup shredded Parmesan cheese
3 tablespoons butter
1/4 cup flour
3/4 teaspoon kosher salt (or 1/2 teaspoon table salt)
2 teaspoons chili powder
1/2 teaspoon dry mustard
1/4 teaspoon black pepper
1/8 teaspoon smoked paprika (plus more for sprinkling on top)
2 1/2 cups milk (I like 2% milk best, but whole works too)
1 cup frozen corn kernels
1 4- ounce can mild green chilies
1 15- ounce can black beans (drained and rinsed (or 2 cups cooked black beans))
1/3 cup crushed tortilla chips (about 3/4 cup whole)
1/2 pound boneless (skinless chicken breast, cooked and diced*)
1 pound boneless (skinless chicken breast, cooked and diced*)

Steps:

  • Boil the pasta until al dente, according to package directions. Drain and rinse with cool water to stop the cooking, and return to the pan you boiled it in. Set aside.
  • Preheat the oven to 375 degrees Fahrenheit. Set out six individual, oven-safe ramekins or gratin dishes for individual servings, two 5"x8" baking dishes if you're cooking up one dish with meat and one without, or an 8"x8"/two-quart baking dish if cooking it all in one big batch.
  • In a medium bowl, toss together the cheddar, monterey jack, and Parmesan cheeses. Set aside.
  • Over medium heat, melt the butter. Add the flour, salt, dry mustard, chili powder, pepper, and 1/8 teaspoon smoked paprika. Stir constantly over medium heat for about three minutes.
  • Slowly whisk in the milk. Continuing over medium heat, whisk frequently for about 10 minutes, until the sauce thickens (as the sauce gets thicker, I recommend going from frequent stirs to constant stirs to help avoid burning).
  • Remove from heat, and stir in 2 cups of the cheese. Continue stirring until cheese is melted, then add the green chilies and corn. Stir until combined. Select your version from the options below to continue.

4 cups meatless spaghetti sauce
1 can (4 ounces) chopped green chiles
1/2 cup minced fresh cilantro
1 carton (15 ounces) ricotta cheese
1 carton (8 ounces) PHILADELPHIA® Cream Cheese Spread
2 tablespoons 2% milk
2 tablespoons reduced-sodium taco seasoning
2 large eggs, lightly beaten
9 no-cook lasagna noodles
3 cups shredded Mexican cheese blend
1 can (2-1/4 ounces) sliced ripe olives, drained
1 jalapeno pepper, seeded and thinly sliced
2/3 cup crumbled queso fresco
Additional minced fresh cilantro, optional

Steps:

  • Preheat oven to 375°. In a Dutch oven, cook sausage over medium heat until no longer pink, 12-16 minutes, breaking into crumbles; drain. Stir in spaghetti sauce, chiles and cilantro. In a small bowl, mix ricotta cheese, cream cheese spread, milk, taco seasoning and eggs until blended., Spread 1 cup sausage mixture into a greased 13x9-in. baking dish. Layer with 3 noodles, one-third of the remaining sausage mixture, 1 cup ricotta mixture and 1 cup cheese blend. Repeat layers twice. Sprinkle with olives and jalapeno (dish will be full)., Bake, covered, 50 minutes. Sprinkle with queso fresco. Bake, uncovered, until lasagna is bubbly and cheese is melted, 10-15 minutes longer. Let stand 20 minutes before serving. If desired, sprinkle with additional cilantro.
