SOUTH OF THE BORDER CHEESY RICE



South of the Border Cheesy Rice image

A gorgeous flavorful bowl of rice that brings Southwestern flavors to your table.

Yield Serves 4 to 6

Number Of Ingredients 15

2 tablespoons olive oil
1 teaspoon powdered cumin
1 medium sized onion, finely diced
2 garlic cloves, minced
1 cup chopped bell peppers (use a mixture of red and green if possible)
1 and 1/2 cups long grained rice, such as basmati
2 tomatoes, diced
1 teaspoon turmeric (optional, but adds a nice depth of color)
1 teaspoon salt
1 and 1/2 cups fresh or frozen corn kernels
3/4 cup cooked black beans
4 tablespoons chopped cilantro
3 tablespoons fresh lime juice
2 cups of grated Cabot Vermont Sharp Cheddar (or a mixture of cheddar and Cabot Pepper Jack Cheese)
Sliced Avocado

Steps:

  • Heat the oil and add in the cumin seeds. After about 30 seconds, add in the garlic and onion and cook until they are fragrant and gently wilted. This will take about 4 to 5 minutes.
  • Add in the peppers and cook for about a minute. Stir in the rice, tomatoes, salt, and turmeric (if using). Add in the corn and the black beans 2 and 1/2 cups of water. Add in the dried oregano.
  • Cover and cook for 20 minutes until all the water has evaporated.
  • Remove the cover stir in the chopped cilantro, lime juice and the grated cheese
  • Cover and let the rice rest for 15 minutes. This will allow the flavors to develop comfortably.
  • Serve with sliced avocado.

½ pound ground turkey
¼ cup chopped onion
1 (16 ounce) can stewed tomatoes, undrained
1 (.75 ounce) packet brown gravy mix
1 teaspoon chili powder, or to taste
½ cup frozen corn kernels
½ cup uncooked elbow macaroni
1 cup shredded lettuce
3 tablespoons sour cream
2 cups corn tortilla chips

Steps:

  • Bring a small saucepan of lightly salted water to a boil. Add macaroni and cook until almost tender, about 6 minutes. Drain and set aside.
  • Crumble the turkey in a large skillet set over medium heat. Cook and stir until evenly brown; drain. Add onion to browned turkey meat and cook until onion is tender, about 5 minutes. Stir in tomatoes, gravy mix and chili powder until combined then mix in the corn and macaroni. Cover; reduce heat to low and simmer, for 10 minutes, stirring occasionally.
  • Serve on a bed of tortilla chips topped with shredded lettuce and sour cream.

1 (6.4 ounces) Rice-A-Roni® Jalapeno Cheddar
2 water
2 unsalted butter or margarine
2/3 reduced-fat milk
2 garlic, minced
1 chopped fresh tomatillos
1 packed chopped fresh spinach
1/4 thinly sliced green onions
Chopped cilantro (optional)

Steps:

  • In medium saucepan, combine rice, water and butter or margarine. Bring to a boil. Add garlic. Cover, reduce heat to low. Simmer 18 to 20 minutes or until rice is tender and most of the liquid is absorbed. Stir in milk, Special Seasonings and tomatillos. Increase heat to high. Boil 1 to 2 more minutes, stirring constantly. Stir in spinach and onions. Cover and remove from heat. Let stand 3 minutes. Stir well before serving. Sprinkle with cilantro, if desired.

1 cup long grain rice uncooked
1 can fat free chicken broth 14 ½ oz.
1 tsp dried ground cumin
1 can diced tomatoes with chili seasonings undrained, 14 ½ oz.
2 cups cooked chicken cut into chunks
1 can whole kernel corn drained, 8 3/4 oz.

Steps:

  • Prepare rice according to package directions, using chicken broth instead of water and add cumin.
  • Once water is almost absorbed, gently fold in remaining ingredients. Continue to cook until water is completely absorbed. Cover and remove from heat. Garnish with chopped cilantro, if desired.

hot pepper sauce, optional

Steps:

  • Preheat broiler, coat baking dish with cooking spray.
  • In skillet heat oil.
  • Add next 7 ingredients, cook, stirring until tender, 5-6 minutes.
  • Add broth and bring to boil, stir in rice.
  • Reduce heat, cover and simmer until liquid is absorbed about 20 minutes.
  • Remove from heat and stir in beans& 1/2 cup cheese.
  • Cover, let stand 5 minutes, then transfer to baking dish.
  • Sprinkle with remaining cheese and broil until cheese is melted.
  • Sprinkle with cilantro and serve with hot pepper sauce if desired.

2 garlic cloves, minced
1 tablespoon olive oil or 1 tablespoon cooking oil
1 -2 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
1 (15 ounce) can red kidney beans, rinsed and drained
1 1/2 cups cooked brown rice
1 cup shredded cheddar cheese (4 ounces)
3/4 cup milk
2 beaten eggs
nonstick cooking spray
chopped green pepper (optional)
salsa (optional)

Steps:

  • In a saucepan cook onion and garlic in hot oil till tender but not brown.
  • Stir in chili powder, cumin, and salt.
  • Cook for 1 minutes more.
  • Cool.
  • Stir in beans, cooked rice, cheese, milk, and eggs.
  • Spray a 10-inch pie place or quiche dish with nonstick coating.
  • Spoon mixture into pie place and bake, uncovered, at 350 degrees for 25 minutes or till center is set.
  • Let stand 10 minutes.
  • If desired, sprinkle with green pepper and serve with salsa.
