SOUTHEAST ASIAN PEANUT NOODLES
For authentic flavor, I use sambal oelek (a mixture made of chiles, brown sugar, & salt found in most ethnic groceries) in place of hot chili sauce. At the Oriental grocer I purchase 1 8 oz package of flat rice stick noodles (buckwheat if available)

- 1. Basic Stir-Fry Cooking Principle: Preheat the skillet or pan on the stove (medium-high heat should work) for 3-4 minutes BEFORE adding the oil. This will allow the skillet the heat evwenly and keep food from sticking and burning
- 2. I am laying out the directions as though no one has access to the cooking condiment sambal oelick (the mix made of chiles, brown sugar, and salt). Those who have it - please use to taste...as the heat on this condiment is super high for many
- 3. Bring 6 cups of water to a boil in a non stick skillet (large wok - or spaghetti pot. Aded noodles stir to separate then cover and remove from heat. Let stand 6 minutes to soften. Drain & set aside.
- 4. Whisk together teriyaki sauce, 2 TBS hot water, PB & chill sauce in a small bowl.
- 5. If using a wok - now is the time to wipe it out,add sesame oil, and heat over medium-high heat. Add garlic and ginger, and stir fry 30 seconds. Add snow peas and fry for 3 minutes. Add tofu, and stir-fry 1 minute. Add teriyaki mixture and cook 2 minutes, or until sauce thickens, stirring occasionally.
- 6. Add noodles, and gently toss with fork 2-3 minutes, or until noodles are coated with sauce and heated through. Sprinkle with cilantro and peanuts.
- 7. Serve hot with lime wedges

- In a small mixing bowl, combine all of the ingredients for the dressing except for the ginger. Whisk together until nice and creamy. If the dressing seems too thick after mixing all of the ingredients together (like peanut butter) thin it out with 1 tsp of extra water at a time until it reaches a consistency you prefer. Add the ginger at the end and stir in. Taste to see if you want more, and if you do, grate some more in there!! Also, just a note so you don't get scared when this happens lol -- the peanut butter will break up when you start to whisk it into the other ingredients. Don't worry!! Keep whisking and it will combine and become creamy. Whisk it fast if you are having trouble incorporating it.
- Cook the noodles according to package and then pour them into a collander. While they sit in the collander, shower the noodles with cold water from the faucet until they are no longer hot. Drain them and set them aside.
- Combine the cucumber, carrot, radish and noodles in a large salad bowl. Toss with the dressing until all of the ingredients are coated in the peanut sauce. Add cilantro and scallions and toss again. Plate the salad and top with crushed peanuts. If serving with a protein, feel free to throw it on top! If meal prepping, seal in a container in the fridge. for up to 3 days.

- Preheat the oven to 220°C/200°C fan-forced. Cut the cauliflower into small florets. Trim the broccolini and cut in half lengthways. Place the cauliflower on an oven tray lined with baking paper. Drizzle with olive oil, season with salt and pepper and toss to coat. Roast the cauliflower for 10 minutes, then remove the tray from the oven and add the broccolini with a drizzle of olive oil. Return to the oven and roast until the veggies are tender, 8-10 minutes. TIP: If you prefer your broccolini unroasted, add it to the pan in step 4 instead!
- While the veggies are roasting, boil a kettle of water. Grate the carrot. Finely grate the ginger and garlic. Slice the lemon into wedges. In a medium bowl, add the peanut butter and boiling water (see ingredients). Leave for 1-2 minutes, then stir to combine with a fork. Set aside.
- Heat a deep frying pan or large saucepan over a medium-high heat with a drizzle of olive oil. Cook the carrot, garlic and ginger until softened, 2-3 minutes. Add the Southeast Asian spice blend and a pinch of chilli flakes (if using) and cook until fragrant, 1 minute.
- Add the peanut butter mixture, coconut milk, vegetable stock powder, soy sauce and brown sugar to the pan. Bring to the boil, then reduce the heat to medium and simmer until thickened slightly, 5 minutes. Remove from the heat, then stir in 1/2 the roasted veggies and a generous squeeze lemon juice. Season to taste. TIP: Add the broccolini to simmer if you prefer it unroasted.

- Place the noodles in a large heat proof bowl. Pour boiling hot water in the bowl until the noodles are completely submerged. Mix the noodles around a bit and leave to soak for 15 to 20 minutes or until the noodles are pliable and the noodles are chewy.Alternatively, you can also opt to just cook down the dried noodles directly in the soup later on!
- Heat a large pot over high heat (note: this will be the same pot used for the soup later on for minimal clean-up).
- Remove most of the oil in the pot. I kept around 1 tbsp of the oil. In the same pot over high heat, add in the ginger and garlic.
- Top the noodle soup with the mushrooms, crisp shallots, roasted peanuts, chopped scallion, Thai basil leaves, and chili oil before being finished with a squeeze of lime juice if you'd like.
