My grandchildren love this recipe for a coconut-flavored pound cake.

2 cups white sugar
1 cup butter
5 eggs
2 cups all-purpose flour
1 ½ teaspoons baking powder
½ cup milk
3 ½ ounces flaked coconut
1 teaspoon coconut extract
1 cup white sugar
¼ cup water
1 teaspoon coconut extract
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, cream together 2 cups sugar and the butter. Fold in the eggs one at a time, fully incorporating each one before adding another.
  • In separate bowl, mix the flour, baking powder, milk, flaked coconut, and 1 teaspoon coconut extract. Beat into the creamed mixture. Pour the batter into the prepared pan.
  • Bake 1 hour in the preheated oven, or until a knife inserted in the center comes out clean. Cool on a wire rack for just a few minutes, then place on cake platter.
  • To make the glaze, mix together in a small saucepan 1 cup sugar, water, 1 teaspoon coconut extract, and walnuts. Boil for 1 minute, and pour over still warm cake.

2 sticks Butter (room temperature)
½ cup Vegetable shortening
3 cups Sugar
6 Eggs (room temperature)
½ tsp Almond flavoring
1 tsp Coconut flavoring (extract or imitation)
3 cups All purpose flour
1 cup Milk (room temperature)
7 ounces Flaked coconut (I used 5 ounces unsweet coconut and 2 ounces sweet coconut.)
1½ cups Sugar
¾ cup Boiling water
3 tsp Coconut flavoring (extract or imitation)
¼ cup Corn starch (optional)

Steps:

  • Cream butter, shortening and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Add almond and coconut flavorings.
  • Alternately add flour and milk, beating after each addition.
  • Stir in coconut.
  • Spoon Batter into well greased tube or bundt pan.
  • Bake at 350° for 1¼ hours.
  • Let cake cool for 10 minutes in pan and release.
  • Spoon glaze on cake.
  • Mix sugar, boiling water and coconut flavoring.
  • Bring to a boil for 1 minute.
  • Remove from heat.
  • If you'd like to thicken, add corn starch. I added ¼ cup for some slight thickening.
  • Spoon over cake.

Steps:

  • Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, 1 at a time, beating just until the yellow disappears.
  • Sift together 3 cups flour and 1/2 tsp. salt; add to butter mixture alternately with bourbon, beginning and ending with flour mixture. Beat batter at low speed until blended after each addition. Stir in 1 1/2 tsp. vanilla, toasted pecans, and shredded coconut. Pour batter into a greased and floured 12-cup tube pan.
  • Bake at 325° for 1 hour and 30 minutes to 1 hour and 35 minutes or until a long wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 10 to 15 minutes. Remove from pan, and cool completely on wire rack

5 egg whites
1/2 cup milk
1 to 2 tablespoons coconut flavoring or extract*
3 cups cake flour
2 1/3 cups sugar
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, room temperature
1 cup unsweetened coconut milk
1 1/2 cups sweetened flaked coconut
FROSTING:
12 ounces cream cheese, slightly chilled
1/2 cup plus 6 tablespoons unsalted butter, room temperature
1 cup powdered sugar
2 teaspoons vanilla extract
1 cup granulated sugar
1/4 cup water
3 egg whites

Steps:

  • CAKE: Preheat oven to 350° F. Butter and flour two 8-inch cake pans and line with parchment paper Put the egg whites in a bowl and whisk slightly. Add 1/2 cup milk and coconut flavoring. Mix thoroughly. Set aside. In the mixing bowl of an electric mixer, combine the flour, sugar, baking powder, and salt. Add the butter and coconut milk and combine on low speed. Increase speed to medium and beat until light and fluffy, about 2 minutes. Add the egg white mixture in 3 additions, scraping down the sides of the bowl and mixing just long enough to incorporate between additions. Divide the batter among the prepared pans and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Meanwhile, have the egg white in the bowl of an electric mixer, ready for when the syrup is at the proper temperature. Slowly add the hot syrup to the egg whites, while mixing on medium-low. When all of the syrup is incorporated, raise the speed to medium-high and beat until the mixture has cooled to body-temperature and it forms stiff peaks. With the mixer on medium-low, add the cream cheese and butter mixture one spoonful at a time. When all is incorporated, raise the speed to medium and whip until the frosting is smooth and fluffy. Frost the cooled cakes and cover with shredded coconut.

2 teaspoons lemon rind, grated
1/3 cup fresh lemon juice
2 tablespoons butter
1/2 cup butter, softened
8 ounces cream cheese, softened
16 ounces powdered sugar
1 teaspoon vanilla
2 cups sweetened flaked coconut

Steps:

  • Beat 1 cup butter at medium speed with electric mixer until fluffy; gradually add 2 cups sugar. Add 4 egg yolks one at a time, blending well after each.
  • Combine flour and baking powder. Add this alternatively to mixture with milk, beginning and ending with flour mixture. Add vanilla.
  • Beat egg whites at high speed until peaks form. Gently fold in egg whites into batter mixture. Spoon into three greased and floured pans.
  • Bake at 350 degrees for 18-20 minutes until done. Cool on wire racks for ten minutes. Remove cakes from pans and cool on wire racks.
  • Spread lemon filling between layers. Spread cream cheese frosting over all and cover top and sides with coconut. Garnish with lemon slices.
  • For lemon filling: Combine 1 cup sugar, cornstarch and boiling water in medium pan. Cook while stirring until dissolved. Temper eggs. Then add eggs to cooked mixture. Whisk in lemon juice and rind. Cook whisking constantly until mixture is thickened. Remove from heat. Stir in butter. Cool completely. (Do not stir once cooled as fillings made with cornstarch will breakdown and liquefy if stirred; just spoon on).
  • For cream cheese frosting: Beat butter and cream cheese until smooth. Gradually add powdered sugar. Stir in vanilla.

1 1/2 teaspoons baking powder

1/2 cup water
1/4 cup butter
1 teaspoon coconut extract

Steps:

  • Grease and flour a tube pan. (Don't miss and spots or you won't get the cake out without breaking it.
  • Beat 5 eggs.
  • Add 2 cups sugar and beat well.
  • add 1 cup canola oil.
  • Sift 2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp salt. Add to egg mixture and blend well.
  • Add to above mixture 1 cup coconut, 1/2 cup milk, 1 tsp vanilla, 1 tsp coconut extract.
  • Mix well and pour into pan.
