4 c. all-purpose flour, spooned and leveled, plus more for working
4 tsp. baking powder
1 1/2 tsp. kosher salt
1 tsp. baking soda
3/4 c. cold unsalted butter, cut up
1 1/2 c. buttermilk

Steps:

  • Preheat oven to 450°F. Whisk together flour, baking powder, salt, and baking soda in a bowl. Cut butter into flour with a pastry blender or two forks until mixture resembles small peas. Stir in buttermilk with a fork until dough begins to form a ball. Turn dough out onto a lightly floured work surface; knead 2 or 3 times, gradually adding additional flour as needed to prevent sticking.
  • With floured hands, pat dough into a 1-inch-thick circle. Cut dough into fourths and stack one on top of another. Roll stacked dough into a 1-inch-thick circle. Repeat procedure 3 more times. Use a 2 1/2-inch round cutter to cut biscuits, pressing scraps together once. Place biscuits, slightly touching, on a baking sheet. Chill 15 minutes.
  • Bake until golden brown, 18 to 20 minutes.

I got this recipe in a church cookbook years ago and have been making them ever since. They are extremely tender with a flavor that no store bought biscuit could ever come up with. Makes breakfast or any meal special. (And they are so easy too)

1/4 cup sugar
4 teaspoons baking powder
1/2 teaspoon cream of tartar
3/4 teaspoon salt
1/2 cup shortening
1 egg, beaten
3/4 cup milk

Steps:

  • Combine dry ingredients in a mixing bowl.
  • Cut in shortening until mixture resembles coarse crumbs.
  • Add egg and milk;mix until dough forms a ball.
  • Turn dough out on a lightly floured surface and knead 10- 12 times, only.
  • Roll out to 3/4 inch, cut with floured cutter.
  • Place on lightly greased baking sheet.
  • Bake at 475 degrees for 12- 15 minutes or until light brown.

1 T plus 1 1/2 tsp baking powder
3/4 tsp cream of tartar (in spice section)
3/4 c margarine
1 egg beaten
3/4 c milk

Steps:

  • Combine first 5 ingredients and mix well-cut in the shortening with pastry blender. Combine egg and milk-add to flour/butter mixture-turn dough out on lightly floured surface-knead 10 times. Roll dough to 1 inch thickness-cut with 2 1/2 inch biscuit cutter (or a glass about that size). Bake on ungreased sheet at 450 for 15 minutes.

3 teaspoons cream of tartar
4 1/2 teaspoons baking powder
3/4 teaspoon salt
1 egg
1 cup milk
3/4 cup shortening (substitution Lard Tender flake)
3 tablespoons butter

Steps:

  • Preheat oven to 450 Degree's.
  • Mix dry ingredients.
  • Cut in shortening.
  • Add egg in the cup of milk and whisk.
  • Add to mixture of dry ingredients mixed with shortening.
  • Knead into a ball.
  • Pull apart and roll pieces the size of a tennis ball in palm of your hand.
  • May be rolled out and cut with a circular dough cutter @ desired thickness.
  • Melt butter.
  • Put either ball or circular cut out dough on cookie sheet.
  • Indent top of biscuit and brush melted butter on top.
  • Bake for 15 minutes @450.

1/4 cup cold butter or shortening
1 to 1-1/4 cups 2% milk
Melted butter

Steps:

  • Preheat oven to 375°. Place 2 cups flour in a large bowl. Cut in butter until butter is the size of peas. Stir in 1 cup milk. Dough should be wet and sticky; if needed, stir in some of the remaining milk., Place remaining flour in a small bowl. Using a 1/4-cup measuring cup dipped in flour, remove 1/4 cup dough from bowl and drop into flour; gently turn to coat. Place in greased cast-iron or other ovenproof skillet., Bake until golden brown, 20-25 minutes. Brush with melted butter; serve warm.
