SOUTHERN SHRIMP AND GRITS
This recipe is a tradition at our house and we love it for breakfast, lunch or dinner.

Steps:
- Cook the bacon, remove from pan and set aside.
- Combine two tablespoons bacon drippings, 1 tablespoon butter, green onion, green pepper, celery, garlic, Cajun seasoning, and black pepper in a skillet and cook until vegetables are tender. About 8 to 10 minutes.
- Add shrimp and hot sauce or cayenne and cook about four more minutes until shrimp are done. Set aside and prepare grits.
SOUTHERN SHRIMP AND GRITS RECIPE
Steps:
- In a small saucepan, bring water to a boil over medium-high heat. Slowly whisk in the grits and salt. Return to a boil, then reduce the heat to medium-low. Cover and cook for about 5-7 minutes (or until thick and smooth), stirring occasionally.
- Remove from heat. Add the cheese and butter; whisk or stir until melted and smooth.
- While you cook the grits, fry the bacon in a large skillet over medium heat until crispy. Use a slotted spoon to remove the bacon to a paper towel-lined plate, reserving the drippings in the skillet.
- Increase the heat to medium-high. Add the garlic, green onions, lemon juice, and shrimp to the skillet. Sprinkle with Cajun seasoning. Cook just until the shrimp are pink and opaque, about 2-4 minutes.
- Return bacon to the skillet. Taste and season the dish with salt, pepper, and hot sauce, to taste.
- Divide the grits among serving bowls. Top with shrimp mixture, garnish with green onions or herbs, and serve immediately.

- In a large saucepan, bring the broth, milk, butter, salt and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 12-14 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 4 teaspoons drippings. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions.

- Cook grits as directed on package.
- Meanwhile, cook and stir bacon in large skillet on medium-heat heat until crisp. Remove from skillet with slotted spoon; drain on paper towels. Add shrimp, onions and garlic to drippings in skillet; cook and stir 3 min. or until shrimp turn pink. Add bacon, parsley and lemon juice; mix well.
- Add cheese to grits; mix well. Serve topped with shrimp mixture.

- Bring water and 2 teaspoons salt to a boil in a heavy saucepan over medium-high heat. Whisk grits into the boiling water, and then whisk in half-and-half. Reduce heat to medium-low and simmer, stirring occasionally, until grits are thickened and tender, 15 to 20 minutes. Set aside and keep warm.
- Sprinkle shrimp with salt and cayenne pepper to taste. Add lemon juice, toss to combine, and set aside to marinate.
- Place sausage slices in a large skillet over medium-high heat. Cook, stirring occasionally, until browned, 5 to 8 minutes. Remove sausage from the skillet.
- Add bacon to the same skillet and increase heat to medium-high. Cook until evenly browned, about 5 minutes per side. Transfer bacon to paper towels to drain, then chop or crumble when cool enough to handle. Leave bacon drippings in the skillet.
- Add bell peppers, onion, and garlic to the bacon drippings; cook and stir until onion is translucent, about 8 minutes.
- Stir cooked sausage and marinated shrimp into the skillet with the cooked vegetables. Turn off the heat and set aside.
- Melt butter in a small saucepan over medium heat. Whisk in flour, stirring to create a smooth roux. Turn heat to low and cook, stirring constantly, until mixture is golden brown in color, 8 to 10 minutes. Watch carefully, mixture burns easily.
- Pour the roux over the sausage, shrimp, and vegetables. Place the skillet over medium heat, add chicken broth, bacon, and Worcestershire sauce, and stir to combine. Cook until sauce thickens up and shrimp turn opaque and bright pink, about 8 minutes.
- Just before serving, mix sharp Cheddar cheese into grits until melted and grits are creamy and light yellow. Serve shrimp mixture over cheese grits.

- Combine lemon juice, hot sauce and raw shrimp. Set aside.
- Cook bacon in a large nonstick skillet over medium heat until crisp. (While bacon is cooking bring 5 cups water to a boil in a separate saucepan for grits.) To the skillet add onion, bell pepper, and garlic to dripping and bacon pieces; cook 5 minutes or until tender, stirring occasionally.
- Stir in shrimp mixture, broth and 1/4 cup green onions. Cook 5 minutes or until shrimp are done, stirring frequently.
- While shrimp are cooking, add quick cooking grits to boiling water, stirring constantly. Reduce heat to low, simmer, covered for 5 minutes or until thick, stirring occasionally. Stir in butter, salt and 3/4 cup of the cheese.
- To serve, pour grits in shallow bowl. Heap shrimp on top of your serving of grits with remaining cheese and green onions.

Clipped from the AJC, this recipe is from Goldfish restaurant in Atlanta. I have had this dish many times and it is superb. I was thrilled to find the recipe and wanted to share it here on zaar. Note: If fat is a concern, substitute low-sodium chicken broth for the half and half and cream.

- To make the marinara sauce: Blanch organic tomatoes. Remove skin and seeds and roughly chop. Set aside.
- In a large saute pot, add oil. Saute garlic and shallots until translucent. Add reserved fresh tomatoes and canned tomatoes. Bring to a simmer and cook for 30 minutes over low heat. Remove from heat and season with salt and pepper. Add parsley and basil and stir to combine.
- While the marinara sauce is simmering, prepare the grits:.
- In a large pot, combine half and half and cream and bring to a boil (watch carefully to make sure it doesn't overflow). Add grits, garlic and salt. reduce heat and slowly cook, stirring frequently, scraping the bottom of the pan, until grits liquid is absorbed and grits are cooked and tender, about 45 minutes. Add cheese and stir until combined.
- To make the shrimp and sausage: In a saute pan over medium-high heat, add oil. Add shrimp and cook until translucent. Season with salt and pepper. Reduce heat to medium, add sausage and cook for 1 minute. add marinara sauce and cook for 3 minutes.
- On individual bowls or plates, place 1/2 cup cooked grits. Divide shrimp and marinara between plates and place beside grits. Drizzle basil oil on shrimp and top with chopped chives.

- Heat and soak the grits. Combine the water, grits, bay leaves, and salt in a large saucepan. Bring the mixture to a boil over high heat. Immediately turn off the heat, cover, and set aside for 10 minutes. Meanwhile, clean the shrimp.
- Peel and devein the shrimp. Clean the shrimp: insert the tip of a pair of kitchen shears between the shrimp and the top of its shell, and begin cutting through the shell down the length of the shrimp. Stop when you get to the tail. Peel back the shell from either side and discard. Pinch the tail where it meets the body of the shrimp and gently pull. The rest of the shrimp should pull cleanly out of the tail. Gently run your paring knife along the back of the shrimp. Gently pull up the vein with the tip of your paring knife, starting near the top and continuing to the bottom, and remove the vein.
- Boil the grits. Return the grits to medium-high heat and boil uncovered for 20 to 25 minutes. Stir the grits occasionally, scraping the bottom to prevent clumping or burning. While the grits cook, get the shrimp mixture started in another pan.
- Cook the sausage and tomato mixture. Heat the oil in a large skillet over medium-high heat until shimmering. Add the sausage and cook until browned, about 1 minute per side. Add the bell pepper, scallions, and garlic, and cook until softened, about 2 minutes. Add the tomatoes and their juices, oregano, Creole seasoning, and salt. Bring to a simmer and cook until the juices thicken, about 6 minutes. You can keep the sauce warm over low heat until the grits are ready.
