Yield: 1 (9-inch) pie

Number Of Ingredients 13

1⁄2 (14.1-ounce) package refrigerated piecrust (1 sheet)
1 cup sugar
1 tablespoon all-purpose flour
1 tablespoon plain cornmeal
1⁄8 teaspoon salt
2 large eggs
2 large egg yolks
1⁄2 cup cold strong brewed unsweetened tea
1⁄4 cup unsalted butter, melted and slightly cooled
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
Sweetened whipped cream, to serve
Garnish: lemon zest

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll piecrust into a 12-inch circle. Press into bottom and up sides of a 9-inch pie plate. Fold edges under, and crimp as desired. Refrigerate 15 minutes. Top with a piece of parchment paper, letting ends extend over edges of plate. Add pie weights. Bake 15 minutes. Carefully remove paper and weights. Let cool 30 minutes on a wire rack. In a large bowl, stir together sugar, flour, cornmeal, and salt. Add eggs and egg yolks; beat at medium speed with an electric mixer until combined. Add tea, butter, and lemon zest and juice; beat until combined. Pour into prepared crust. Bake until set, approximately 35 minutes. Let cool completely on a wire rack. Refrigerate until chilled. Serve with whipped cream; garnish with zest, if desired.

3 ounces cream cheese
1/2 cup unsalted butter
1 1/4 cups all-purpose flour, unbleached
1 cup butter, room temperature
2 cups granulated sugar
1 lemon, zest of
8 egg yolks
3/4 cup orange pekoe tea, warm, strong
1 tablespoon vanilla extract
1 teaspoon apple cider vinegar
1 tablespoon lemon juice
2 tablespoons all-purpose flour, unbleached
2 teaspoons cornmeal

Steps:

  • In bowl of electric mixer, beat cream cheese and butter until well combined. Add flour and mix at low speed until dough forms a ball. Pat dough into 9-inch pie pan.
  • Place pie shell in freezer while preparing filling. Heat oven to 350°F.
  • In bowl of electric mixer, beat butter until light and fluffy. Gradually add sugar. Add lemon zest. Add egg yolks a little at a time allowing each addition to incorporate; scraping bowl often.
  • Slowly add tea, vanilla, vinegar, and lemon juice. Add flour and cornmeal.
  • Remove crust from freezer and fill.
  • Bake at 350F for 50 minutes. Cool on wire rack. Chill at least 2 hours before serving.

6 ounce softened, low fat cream cheese
2 cups softened and divided unsalted butter
2 1/2 cups plus 2 tablespoons unbleached all-purpose flour
8 large egg yolks
3/4 cup cooled Original Southern Breeze Sweet Tea
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice
1 1/2 teaspoons cornmeal
1/2 teaspoon salt
Powdered stevia (optional)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit
  • In a medium bowl, with an electric mixer, beat the cream cheese and 1 cup butter until well combined. Add 2 1/2 cup flour and mix until the dough forms a ball. Pat the dough into a 9-inch pie pan. Chill until ready to use.
  • In a medium bowl, with an electric mixer, beat 1 cup butter and sugar at medium speed until light. Add the yolks 1 at a time, beating at low speed untilblended. Add the sweet tea slowly. Add lemon zest and lemon juice. Scrape down the sides of the bowl with a rubber spatula. Add the 2 tablespoons flour, cornmeal, and salt and mix well.
  • Pour the mixture into the prepared crust.
  • Add the lattice pie crust (Optional)
  • Bake until set, about 45 minutes. Cool completely on a wire rack, and then chill for 2 hours before serving.
  • Sprinkle powered stevia on the pie if you wish and enjoy!

2 cups white sugar
8 ounces sweetened condensed milk
½ cup unsalted butter, softened
2 eggs
2 teaspoons all-purpose flour
1 pinch ground cinnamon, or to taste

1 pinch ground allspice, or to taste
1 pinch ground cloves, or to taste
2 (9 inch) pie crusts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a pot of water to a boil; add sweet potatoes and boil until soft, 20 to 30 minutes. Remove and discard skin; mash potatoes in a bowl until lumps are removed.
  • Mix 1 cup mashed sweet potatoes, sugar, condensed milk, butter, eggs, flour, cinnamon, nutmeg, allspice, and cloves together in a bowl. Divide batter evenly between the 2 pie crusts.

Serve slightly warm or cold, topped with whipped topping, alongside a warm beverage like hot tea, coffee, hot chocolate, or apple cider. So awesome!

2 sweet potatoes, peeled and cut into chunks
1 pastry for a 9-inch deep-dish pie crust
1 ½ cups milk
1 cup white sugar
2 eggs
1 tablespoon butter, melted
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain well and let cool.
  • Preheat oven to 425 degrees F (220 degrees C). Line a 9-inch pie plate with pastry.
  • Mash sweet potatoes with a potato masher or fork. Measure 1 3/4 cup of the mash into a large bowl. Add milk, sugar, eggs, butter, salt, cinnamon, nutmeg, and ginger. Beat with a rotary beater until mixture has the consistency of cake batter. Pour into the pastry-lined plate.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool until center is set, about 15 minutes.

The Pink Tea Cup is a soul food restaurant that has been in Greenwich Village for more than five decades. I was sad to read recently that Greenwich Village is going to lose a little bit of its soul because the Pink Tea Cup has announced it is closing. Third-generation owner Lisa Ford said the eatery will close Jan. 3, 2010 because of a weak economy and rising costs. Ford began working at the restaurant after graduating from college 20 years ago. Her great-aunt, Florida native Mary Raye, opened The Pink Tea Cup in 1954. The restaurant, which seats 42 people, is painted pink inside and out, and is known for its fried chicken, smothered pork chops and catfish. Ford said business has been declining since the Sept. 11 attacks. One of their famous desserts is their Sweet Potato Pie. I had clipped the recipe for this delight some 25 years ago. I am now posting it here for posterity, since it won't be available to enjoy at the restaurant.

2 lbs yams, peeled and cut into chunks
1/2 cup butter
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt

3 large eggs, separated
1/2 cup orange juice
1 tablespoon grated orange rind
1/2 cup evaporated milk
1 unbaked pie shell
whipped cream

Steps:

  • Peel and boil yams until mashable.
  • Preheat oven to 450°F Add butter, spices, salt, and sugars to hot yams. Beat until light and smooth.
  • Beat egg yolks until light and add to mixture. Stir in orange juice, rind, and milk.
  • Beat egg whites until stiff and fold into egg yolk mixture. Pour mixture into unbaked pie shell.
  • Bake at 450°F for 10 minutes, reduce heat to 350°F and bake for 30 minutes, or until pie puffs up and is firm in the middle.
  • Cool on rack, and add whipped cream, if desired.

Steps:

  • Heat 4 cups of the water to boiling. In large heatproof bowl, place tea bags; pour boiling water over tea bags. Cover with foil; let steep 15 to 20 minutes. Remove and discard tea bags.
  • Add sugar to tea; stir until sugar is dissolved. Pour into large heatproof pitcher. Stir in remaining 4 cups cold water. Refrigerate until chilled.
  • Serve tea well chilled over ice, garnished with lemon and/or mint.
