FRESH BLACK BEAN SALAD



Fresh Black Bean Salad image

This Southwestern black bean salad recipe is healthy and delicious! This fresh black bean salad is perfect for potlucks, parties and busy weeks. Recipe yields 4 large or up to 8 side servings.

3 cans of black beans (15 ounces each) or 4 1/2 cups cooked black beans, rinsed and well-drained
2 ears of corn, shucked, or 1 cup of canned corn (drained) or defrosted frozen corn
1 orange, yellow or red bell pepper, chopped
1 cup quartered cherry tomatoes
1 cup chopped red onion (from 1 small onion)
1/2 cup finely chopped fresh cilantro (about 1/2 medium bunch)
1 medium jalapeño, finely chopped (keep the seeds for heat if you'd like, or remove them for mild flavor) or 2 tablespoons finely chopped pickled jalapeño
1/2 teaspoon lime zest (from 1 lime, preferably organic)
2 tablespoons lime juice (about 1 lime), to taste
1/4 cup extra-virgin olive oil
1/4 cup white wine vinegar
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt, to taste
Optional garnishes: sliced avocado, crumbled feta, lime wedges

Steps:

  • In a large serving bowl, combine all of the ingredients and toss to combine. Taste, and adjust as necessary until the flavors really pop-I usually add another teaspoon or two of vinegar (you can use lime juice instead, for more mild flavor) and another 1/4 teaspoon salt.
  • Cover and chill to enhance the flavors-preferably for at least 2 hours, or overnight. Serve in individual bowls as is, or with any of the garnishes listed. Leftovers keep well for up to 4 days or so; you might want to wake up the flavors with an extra squeeze of lime juice or tiny splash of vinegar.

Steps:

  • Make the dressing: In a small container, combine the lemon or lime juice, olive oil, salt and pepper, and chili pepper.
  • Make the salad: In a large bowl, combine the beans, corn, onions, and peppers. Shake up the dressing, pour it over the salad and toss to combine.
  • If you want to serve it right away, gently mix in the avocado. If you have time, this salad is better if you make it a day ahead, refrigerate it, and then just add the avocado right before serving.

1 can (16 ounces) black beans, rinsed and drained

1 cup frozen corn, thawed
DRESSING:
3/4 cup thick and chunky salsa
1/4 cup canola oil

  • Gather the ingredients.

3-4 cobs fresh sweet corn
2 cans black beans
1 bell pepper
1-2 avocados
3/4 cup Kemps® sour cream
3 Tbsp. lime juice
2 cloves garlic
1/2 tsp. honey
1/2 tsp. cumin
1 heaping cup cilantro
generous pinch kosher salt (adjust to taste)
extra lime and cilantro for garnish (optional)

Steps:

  • Shuck 3-4 cobs of fresh sweet corn.
  • Bring a large pot of water to a boil. Add the sweet corn, cover, reduce heat to medium and boil for 5 minutes or until corn is tender. Drain and let the corn cool. Once it has cooled cut kernels off with a knife. Set corn aside. Alternately, prepare 1 bag of frozen sweet corn.
  • Dice 1 large bell pepper.
  • Drain and rinse 2 15 oz. cans of black beans.
  • Cut 1-2 avocados in half. Dice the avocados into small pieces.

1 medium-sized red pepper, minced

2-3t whole cumin seeds
1/2C minced fresh cilantro
1/2C minced fresh parsley
1t crushed red pepper (adjust to your taste)
a moderate amount of freshly ground black pepper
3-4 corn tortillas

Steps:

  • 1. in large bowl, combine beans, cooked corn, minced hardlic, red onion, bell pepper, salt, 1/2C olive oil and lime juice 2. roast the whole cumin seeds in a cast iron skillet over med heat, stirring for several minutes. Add the toasted seeds to the salad, along with the cilantro, parsley, and red and black peppers, and mix thoroughly but gently. 2. lightly brush both sides of each tortilla with olive oil and cut tortillas into strips appx. 1/4" wide and 1 1/2" long. Cook the strips lightly by toasting them in a 350 oven for 2 minutes, or heavy skillet over med. for 2-3 mins. Ideally, they should be partly crispy, partly chewy.
