Southwest Crockpot Egg Noodle Casserole is a creamy and easy Mexican inspired chicken dinner! This meal is totally family-friendly.

1 medium yellow onion (diced)
1 small green pepper (diced)
1 small red pepper (diced)
4.5 oz diced green chiles (mild)
1 lb chicken tenders
1 1/2 teaspoons ground cumin
salt & pepper (to taste)
8 oz cream cheese
12 oz wide egg noodles (cooked and drained)

Steps:

  • In the bowl of a crockpot, add onion, peppers, green chiles and chicken tenders. Sprinkle with cumin, salt and pepper. Top with cream cheese and cover.
  • Cook on high for 4 hours or until veggies are tender and chicken can easily shred.
  • Stir all ingredients together, shredding chicken as you go. Stir in egg noodles and toss to coat in sauce. Add in a splash of water or chicken stock to get sauce to the consistency you like (optional).
  • Taste, add salt and pepper if needed and serve hot.

2 cups (8 ounces) uncooked elbow macaroni
2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, drained
1-1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded Monterey Jack cheese
2 jalapeno peppers, seeded and chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.

6 ounces dry extra-wide egg noodles, uncooked
1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

2 (16 ounce) packages breakfast pork sausage
16 eggs
1 ¼ cups milk
1 tablespoon dry mustard
¾ tablespoon garlic powder
¾ tablespoon onion powder
1 pinch salt and ground black pepper to taste
1 (24 ounce) package frozen hash brown potatoes, thawed
24 ounces shredded Cheddar cheese

Steps:

  • Line a slow cooker with a slow cooker liner and spray with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Whisk together eggs, milk, dry mustard, garlic powder, onion powder, salt, and pepper in a bowl.
  • Spread 1/3 hash browns, 1/3 cooked sausage, and 1/3 Cheddar cheese into the bottom of the prepared slow cooker. Repeat layers in that order with remaining hash browns, sausage, and Cheddar cheese. Pour egg mixture on top.
  • Cook on Low until eggs are set, 6 to 8 hours.

1/2 cup all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
4 cups shredded Monterey Jack cheese
2 cups (16 ounces) 4% cottage cheese
1/2 cup butter, melted
2 cans (4 ounces each) chopped green chiles

Steps:

  • In a large bowl, beat eggs. Combine flour, baking powder and salt; stir into eggs (batter will be lumpy). Add cheeses, butter and chiles. Pour into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 30-40 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

1 lb bulk breakfast sausage (cooked and drained)
1 onion, chopped
1 green bell pepper, chopped

2 1/2 cups grated monterey jack cheese
18 eggs
sour cream (optional)
salsa (optional)

Steps:

  • Grease inside of crock pot with butter. Starting with sausage, layer meat, onions, peppers, chilies, and cheese.
  • Repeat the layering process until all ingredients are used.
  • In large mixer bowl, beat eggs with wire whisk or eggbeater until combined, then pour over mixture in the crock pot.
  • Cover and cook on low 7-8 hours.
  • Serve with sour cream or fresh salsa.

1 Tbsp olive oil
1 Tbsp clarified butter
1 c red onions, chopped
1/2 c red peppers, chopped
1/2 c orange peppers, chopped
1 large jalapeño pepper (about 1/3 cup), seeded, ribs removed and chopped
3 large cloves garlic, pressed
1 1/2 lb (750 g) lean ground beef
1 Tbsp chili powder
1 Tbsp taco seasoning
1 tsp ground rosemary
1 tsp worcestershire sauce
1/2 tsp cayenne pepper, or to taste
1/2 tsp garlic salt, or to taste
ground himalayan sea salt, to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)
1 can(s) (12 oz.) corn kernels, drained
1 can(s) (28 oz.) crushed tomatoes
1 can(s) (10 oz.) cream of tomato soup
1 can(s) (4 oz.) diced green chiles
1 Tbsp brown sugar, such as demerara
1 1/2 c grated sharp cheddar cheese, divided
1 1/2 c grated monterey jack cheese, divided
12 oz (340 g) extra broad egg noodles, cooked al dente
1 1/2 Tbsp fresh parsley, finely chopped or more to taste

Steps:

  • 1. Preheat oven to 400ºF and lightly greased a 9x13" baking dish. Cook egg noodles in salted boiling water, according to directions, about 10 minutes. Drain and set aside.
  • 2. In a large deep skillet over medium heat, add oil. When hot, add onion and sauté until translucent, about 3 minutes. Add red and orange peppers; cook for 2 minutes. Add jalapeño pepper and sauté for another 2 minutes. Stir in garlic and sauté for 1 minute.
  • 3. Add ground beef and cook until no longer pink, breaking it up into small pieces. Half way thru cooking, season with chili powder, taco seasoning, ground rosemary, Worcestershire sauce, cayenne pepper and garlic salt. Stir and cook until the beef is done.
  • 4. Season beef mixture with ground sea salt, freshly ground black pepper before adding corn kernels; stir well. Add crushed tomatoes, cream of tomato soup and diced green chiles; combine well. Add brown sugar to the mixture and cook for 2 minutes.
  • 5. Add ½ cup sharp Cheddar cheese and ½ cup Monterey Jack; blend cheeses with the ingredients. Add cooked al dente egg noodles, stir and transfer to the prepared baking dish.
  • 6. Sprinkle the remaining cheese on top and transfer to preheated oven; bake for 10 minutes or until cheese is melted. Remove from heat and sprinkle with parsley. Makes 8 servings
