- Sprinkle pork chops with pepper blend. In a large skillet, brown chops in oil. Remove and keep warm., In the same skillet, combine pineapple and salsa. Bring to a boil. Return chops to the pan. Reduce heat; cover and simmer until tender, 15-20 minutes. Sprinkle with cilantro.

SOUTHWESTERN PORK CHOPS
This recipe came out of necessity! I love to cook but hate to grocery shop, and one day I found myself with nothing but some pork chops, canned black beans and canned tomatoes. This is the dish I came up with, and my husband loved it.-Vicki L. Blaine, Plymouth, Michigan

- In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with salt and pepper. Pour tomato mixture over chops. Cover and simmer for 10-15 minutes or until a thermometer reads 160°. Using a slotted spoon, serve over rice. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

WW SOUTHWESTERN PORK CHOPS - 4 PTS.
Out of an old 1998 WW cookbook called "15 Minute Cookbook" I have this marked as "great". If you don't care for the strong lemon like flavor of cilantro you can substitute parsley if you prefer. This is great served with black beans, pineapple wedges and fresh strawberries. Hope you enjoy!

Steps:
- Coat a large nonstick skillet with cooking spray; place over high heat until hot.
- Press chops with palm of hand to flatten slightly; add to skillet and cook 1 minute on each side or until browned.
- Reduce heat to medium-low.
- Combine salsa and lime juice; pour over chops.
- Simmer, uncovered, 8 minutes or until chops are done.
- If desired, sprinkle chops with cilantro.

Steps:
- Season chops on both sides with garlic powder, salt and pepper.
- In a large skillet heat olive oil and butter. Brown chops on both sides.
- Remove chops and pour off all but 1 to 2 tablespoons of fat. Stir in flour, breaking up browned bits.
- Place chops back into the skillet and add 1/4 cup of water, cover and cook on low heat for about 30 minutes. Add remaining ingredients. Cover and cook for 15 minutes longer. Season with salt and pepper to taste.

Steps:
- 1. Heat 12-inch nonstick skillet over medium-high heat. Sprinkle pork chops with 1/4 teaspoon of the salt and 1/2 teaspoon of the seasoning. Cook pork chops in skillet 4 to 6 minutes, turning once, until brown.
- 2. In 3- to 4 1/2- quart slow cooker, mix remaining 1/4 teaspoon salt, remaining 1/2 teaspoon seasoning, the salsa, corn and beans until well blended. Top with pork chops, overlapping as necessary, pressing gently into bean mixture.
- 3. Cover; cook on Low heat setting 4 to 5 hours.
- 4. Remove pork chops to serving platter. Cover to keep warm. With fork or potato masher, mash beans slightly until slightly thickened. Serve pork chops over beans. Sprinkle with chopped cilantro.
