This recipe uses southwest ingredients to make a tasty and tender porkchop that is still low in calories. It is also easy to put into the marinade in the morning and simply cook later in the day for dinner.

2/3 cup fat-free Italian salad dressing
2/3 cup salsa
2 tablespoons lime juice
2 tablespoons fresh cilantro, minced
6 garlic cloves, minced
1/2 cup red onion, minced
4 teaspoons lime zest
1/2 teaspoon hot pepper sauce (to taste)
6 boneless pork loin chops
1 avocado, chopped

Steps:

  • In a bowl, combine the first eight ingredients. Pour 1/2 cup into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade.
  • Drain and discard marinade from chops. Place on a broiler pan rack. Broil 4 inches from the heat for 7 minutes on each side or until juices run clear. Baste with reserved marinade.
  • Serve topped with remaining marinade and garnished with avocado and cilantro.

4 (4 ounce) boneless pork loin chops, lean and trimmed
1/3 cup salsa (I like hot)
2 tablespoons fresh lime juice
1/4 cup fresh cilantro, chopped (or parsley)

Steps:

  • Coat a large nonstick skillet with cooking spray; place over high heat until hot.
  • Press chops with palm of hand to flatten slightly; add to skillet and cook 1 minute on each side or until browned.
  • Reduce heat to medium-low.
  • Combine salsa and lime juice; pour over chops.
  • Simmer, uncovered, 8 minutes or until chops are done.
  • If desired, sprinkle chops with cilantro.

Very quick and easy, but tastey dish. Prepare it ahead of time, cover and put in the fridge. When you get home from work, pop it in the oven and you have a great meal in an hour or so!

2 tablespoons vegetable oil
4 bone in pork chops (1/2" to 3/4" thick)
3/4 cup uncooked long grain rice
1 teaspoon kosher salt
fresh ground black pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder
2 teaspoons fresh cilantro, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon taco seasoning
1 (8 ounce) can chopped green chilies
1 (8 ounce) can corn, drained
1 1/2 cups chicken stock (broth)
1 (8 ounce) can tomato sauce (I use Mission Pride Mexican Hot Style Tomato Sauce, Salsa de Chile Fresco) or 1 can rotel tomatoes and green chilies, if you prefer chunky tomatoes in your dish (hot or mild)
1 small red bell pepper, chopped
2 serrano chili peppers, diced (if you like it hot) (optional)
1/2 cup colby-monterey jack cheese or 1/2 cup monterey jack pepper cheese

Steps:

  • Heat the oil in a large skillet.
  • Brown the pork chops on both sides.
  • Season the chops with a pinch of salt and pepper.
  • In a greased dutch oven or baking dish combine rice, chicken stock, tomato sauce, corn, green chiles, bell pepper, serrano peppers and spices.
  • Place the chops over the rice mixture.
  • Cover and bake at 350 degrees for 1 hour 15 minutes.
  • Uncover and sprinkle with cheese.
  • Return to the oven uncovered until the cheese melts (2-3 minutes).
  • Serve with cilantro garlic bread.

4 bone-in pork loin chops (3/4 inch thick and 7 ounces each)
1/4 teaspoon pepper
2 teaspoons olive oil, divided
1 large onion, halved and sliced
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (4 ounces) chopped green chilies
1/3 cup water
2 tablespoons enchilada sauce mix
4 tablespoons sliced ripe olives, divided
1 small green pepper, sliced into eight rings
1/2 cup reduced-fat sour cream
2 cups hot cooked rice

Steps:

  • Sprinkle pork chops with pepper. In a large nonstick skillet coated with cooking spray, cook chops in 1 teaspoon oil over medium heat for 2-3 minutes on each side or until browned. Remove and keep warm. , In the same skillet, saute onion in remaining oil until tender. Stir in the tomatoes, chilies, water, sauce mix and 2 tablespoons olives. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Return chops to the pan; top with green pepper rings. Cover and simmer for 9-12 minutes or until meat is tender. , Remove chops and pepper rings; keep warm. Stir sour cream into sauce until blended. Serve with pork and rice. 4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter, divided
1 tablespoon olive oil
1/2 small red onion, sliced
1 jalapeno pepper, seeded and finely chopped
1/2 cup frozen corn, thawed
3 tablespoons lime juice
1/4 cup sliced ripe olives or green olives with pimientos, optional

Steps:

  • Sprinkle pork chops with salt and pepper. In a large skillet, heat 1 tablespoon butter and oil over medium-high heat. Brown pork chops on both sides. Remove from pan., In same skillet, heat remaining butter. Add onion and jalapeno; cook and stir 2-3 minutes or until tender. Return chops to skillet. 1 tablespoon vegetable oil
1 teaspoon ground cumin
1/4 teaspoon salt

Steps:

  • Mix all ingredients except pork.

1 (15 ounce) can chicken broth
2 tablespoons taco seasoning, divided
2 cups uncooked instant rice
4 boneless pork loin chops (approx 1 pound)
1/2 bell pepper, chopped
1/4 cup green onion, sliced and divided
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained
1 1/2 cups shredded part-skim mozzarella cheese
sour cream, sliced black olives, salsa, cilantro, optional garnishes

Steps:

  • Preheat oven to 450 degrees.
  • Place uncooked rice in bottom of 9x9 baking dish or casserole dish with a lid. Sprinkle 1 tablespoon taco seasoning over rice.
  • Place pork chops on rice; sprinkle chops with remaining 1 tablespoon seasoning. Arrange green pepper slices and 1/2 the sliced green onions over pork chops.
  • Drain corn, drain and rinse black beans; spoon beans and corn on pork chops; pour chicken broth over all ingredients.
  • Cover and bake 20-30 minutes or until pork is cooked through. Remove cover and sprinkle with shredded cheese; return to oven and bake until cheese is melted.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.
