SPAGHETTI SQUASH PANCAKES



Spaghetti Squash Pancakes image

These savory little Pancakes are great with a little salt, pepper, sour cream and even apple sauce for a side dish, appetizer or even brekfast dish. They remind me of potato pancakes, except without the starch.

Number Of Ingredients 7

6 cups spaghetti squash, cooked by your favorite method and separated into strands (See How to Cook Spaghetti Squash)
1/3 cup all-purpose flour
1/2 cup grated parmesan cheese
4 tablespoons butter or 4 tablespoons olive oil
salt and pepper, to taste
sour cream, for garnish
applesauce (to garnish)

Steps:

  • Add flour& cheese to the strands of the cooked spaghetti squash.
  • Mix well, using a couple of forks.
  • Depending on the flavor you wish, or your dietary preferences, melt 1 tablespoon butter in a large skillet over medium-high heat or heat olive oil in skillet instead.
  • Spoon 1/4 cup squash mixture into prepared skillet.
  • With a fork, press to form an evenly thick cake.
  • Repeat to fill skillet.
  • Cook cakes until bottoms are lightly browned, turn over and brown second side.
  • Continue until you've used all the squash mixture (keep the cakes already made warm in an oven set at its lowest temperature until you are ready to serve).
  • Use additional butter or oil as necessary for cooking.
  • Sprinkle pancakes with salt and pepper and serve with sour cream and/or apple sauce.

This easy Spaghetti Squash Savory Pancake is full of flavor, nutrition ... and it's quick to make! Eat it as-is, or top it with protein, like prosciutto or bacon, broken into pieces, and/or a fried egg.

2 cups spaghetti squash
1 egg (beaten lightly)
2 T. parsley (fresh, chopped finely)
2 T. avocado oil (, rendered animal fat or ghee)
sea salt and freshly ground black pepper (to taste)

Steps:

  • Combine spaghetti squash and egg in a medium size bowl.
  • Heat 1 Tablespoon fat in a small skillet, preferably cast iron, about 5"-6" in diameter. Coat the bottom of the pan with the fat; then pour the squash in, spreading it out to the full diameter of the pan. Salt and pepper lightly and sprinkle half the parsley. Fry for 5 minutes over medium heat.
  • Top the pancake with the final 1 Tablespoon of fat and flip, loosening it from the pan first with a good metal spatula. Lightly salt the second side. Top with remaining parsley. Cook the second side 5 minutes. Serve.
  • Top with optional additional protein such as a slice of prosciutto, broken into pieces, or a fried egg.

cooking spray
¼ cup water
1 spaghetti squash, halved lengthwise and seeded
⅓ cup Parmesan cheese
¼ cup heavy cream
1 egg, beaten
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon ground black pepper
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly spray an 8x8-inch baking dish with non-stick cooking spray.
  • Sprinkle 2 tablespoons water into each squash half. Place squash, cut side down, in a microwaveable dish. Microwave on high until soft, about 10 minutes.
  • Scrape out squash strings with a fork and place in a mixing bowl. Add Parmesan cheese, cream, egg, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly. Transfer mixture to prepared baking dish. Sprinkle with shredded Cheddar cheese.
  • Bake in preheated oven until browned and set, about 30 minutes.
