GRANDMAS CHEDDAR CHEESE SPAGHETTI
My Grandmother made this for us some 50 years ago. I have found it to be a great kid pleaser, even the fussy ones! It is affordable and simple to make. I like it better reheated for two minutes in the microwave and it freezes well.

Steps:
- Prepare spaghetti pasta according to package directions.
- While spaghetti is cooking; in a separate saucepan add butter or olive oil, chopped onion and salt.
- Cook onions until they are soft (careful not to burn your onions).
- Add the tomato juice and bring to a slight boil.
- Add the cheese and blend until the cheese is almost melted.
- Drain spaghetti and place in an oven proof dish.
- Pour the sauce over spaghetti and mix together.
- Place in a 350 F oven for about 10 - 15 minutes to allow the noodles to absorb the sauce.

- Cook spaghetti in boiling water until done.
- Drain.
- Put spaghetti back into pot.
- Add tomato juice.
- Add cheese.
- Cook until cheese is small bits not big chunks or melting chunks.

V-8 SPAGHETTI
This is one of those recipes that came about during the Depression. My Grandma and Mom have been making this for me for as long as I can remember. To this day it it my favorite foods, and I make it by the bowl and eat it a few times a week.

Steps:
- Boil pasta and drain.
- Place pasta back in pot on warm burner.
- Add just enough tomato juice so your noodles won't stick to the pot.
- Add salt and butter, stir until butter is melted.
- In a separate bowl mix sour cream with tomato juice by adding a few tablespoons of tomato juice at a time until sour cream and tomato juice mixture is runny and well mixed through (this is done so the sour cream does not curtle when mixed with the hot pasta).
- Add mixture and remaining tomato juice to pasta, stir and serve immediately (when left to sit, the pasta will soak up the juice and it will taste slightly different). I like mine best fresh, that's why I make it a bowl at a time. I also never measure anything for this recipe. All amounts can be adjusted to suit your personal preference. These measurements are simply a baseline.

Steps:
- Heat oil in a large pot over medium heat. Saute onions and garlic until lightly browned. Season with allspice, cloves and cayenne. Stir in wine, and cook until liquid is reduced. Add tomato juice, tomato paste and sugar. Season with oregano, salt and pepper; bring to a boil. Reduce heat, and simmer 90 minutes, or until thickened.

- In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. In a 4- or 5-qt. slow cooker, combine the tomato sauce, tomato juice, tomatoes, tomato paste, sugar, seasonings and beef mixture. , Cover and cook on low for 5-6 hours or until heated through. - After straining, pour in the tomato juice,.
- Turn the temperature down to med., put in rest of butter, cook for 1 to 2 minutes, then salt and pepper to taste.
- On the dish you can place parmesan cheese if you like.
