EASY CHEESY SPAM®-WICHES
I have been making these for my family for years. Not exactly gourmet, but tasty none-the-less. Great for a quick lunch, or even for dinner when you're feeling pressed for time and in the mood for comfort food. We love these as leftovers.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Stir together the luncheon meat, Cheddar cheese, and salad dressing in a bowl. Spread the filling onto the cut side of each hamburger bun, and place onto a baking sheet, filling-side up.
- Broil the open-faced sandwiches in the preheated oven until the tops are browned and bubbly, about 5 minutes.

These sandwiches are made with SPAM®, Velveeta®, relish, and mayonnaise. Very simple and easy, but very good.

- Preheat an oven to 350 degrees F (175 degrees C).
- Stir together the luncheon meat, processed cheese, relish, and salad dressing in a bowl. Spoon the filling into the sandwich buns, and wrap each sandwich individually in aluminum foil. Place the sandwiches onto a baking sheet.
- Bake in the preheated oven until the filling is hot, and the buns have toasted, 10 to 15 minutes.

Spam lovers of the world, unite! Celebrate your fondness for the estimable potted meat by whipping up a couple of these delicious and easy to prepare sandwiches. Serve with potato salad and perhaps some fatfree tater chips.

- On a griddle or frying pan, fry the cut sides of the buns until they are nice and crispy brown.
- Spread mustard on buns, put onion on the bottom bun.
- Fry the spam until done on one side.
- Then flip them over and arrange them in two sets of two slices with one side in each pair touching each other.
- Put two slices of cheese on each pair and leave it until the cheese melts.
- Put each pair of spam slices on one of the bottom buns, scatter pickle slices over the top of the spam, put the top slice of bun on the sandwich and plate it up.

These sandwiches are an old family favorite. We used to BEG my mom to make these for us. For proper melting use only Longhorn cheese. These are great reheated or even cold the next day.

- -Ina large mixing bowl cut spam into bite size cubes; add chopped onion and cut up Longhorn cheese-Add miracle whip to coat generously and blend thoroughly.
- -Tearoff 8 pieces of foil large enough to individually wrap each bun in.

BISCUIT BREAKFAST SANDWICHES
This is the pleasure of brunch at home: a cozy sandwich that you eat as soon as you finish stacking it. Nice and hot, it's pure joy with a cup of coffee. Crunchy brown tops give way to tender, buttery bread in these biscuits, which cradle fluffy scrambled eggs draped with melted cheese. Whether you slip in some bacon, sausage or ham is up to you, but you definitely want to slather jam all over the biscuits. It's a salty-sweet combination inspired by the chef Jonathan Whitener and the pastry director Thessa Diadem of All Day Baby, a restaurant in Los Angeles, where they make thousands of biscuit sandwiches each week.

- Make the biscuits: Position a rack in the center of the oven and heat the oven to 425 degrees. Butter a small baking sheet. (Keep the cubed butter cold.)
- Whisk together the flour, sugar, baking powder and salt in a large bowl. Add the cold butter and toss to coat, then cut the butter into the flour using a pastry cutter or rub and pinch it in with your fingers until the mixture resembles coarse sand with no bits larger than the size of gravel.
- Add the milk all at once and quickly stir with a fork until the dough comes together in a shaggy mass. Use the fork to scoop and drop 4 even mounds of dough onto the prepared sheet, spacing apart. Gently pat the tops and sides to form round pucks; it's OK if the tops are a little craggy.
- Bake until golden brown, 20 to 23 minutes. Let cool on the pan on a rack while preparing the fillings.
- Make the fillings: Beat the eggs in a medium bowl until well mixed but not frothy. Season very generously with salt and pepper and beat again. Heat a medium nonstick or well-seasoned cast-iron skillet over medium until hot, 2 to 3 minutes. Add the butter, turn the heat to low and swirl the butter to evenly coat the bottom of the pan. When the butter has melted about halfway, add the eggs all at once. Cook, stirring gently, until mostly set but still a little wet, 1 to 2 minutes, then spread in an even layer.
- Once the bottom and edges are fully set, turn off the heat and cut the egg pancake in quarters using the spatula. Set a slice of cheese over each quarter. Slice each of the biscuits in half and spread jam on both halves. If you want bacon, sausage or ham, place them over the bottom halves. Slide the cheesy egg quarters over the bottom halves (or meat) and fold over any corners that stick out. Sandwich with the top halves and serve warm.

Had these for Breakfast...funny thing is IT TURNED OUT TO BE GOOD!!! I like Spam anyway, so this was a fun challenge. Try it, you might just like it. P.S. I USED SPAM® Less Sodium ON THIS SPAMWICH It is not my photo...a friend sent it to me, I do not know where she got it.

- Fry the two spam slices in butter. When done, lay provolone slices on each and place lamb slices on top. Slide pan off the fire, cover with lid (letting cheese melt).
- Poach your two eggs (I poached these in my 'microwave egg poacher'). While the eggs are poaching, mix the dressing ingredients together and set aside.
- Divide the english muffin into and toast the slices in a toaster (or in toaster oven).
- Building your open-faced Spamwiches: Lay toasted muffin slices on two plates, spread dressing on both slices. Lay the spam, provolone an lamb layer on top of each slice of english muffin. Lay poached egg on top...sprinkle with salt & pepper if desired.
- Serve open faced with thick slices of tomato on the side. Also good served with watermellon slices on the side.

- Italian Deli Mix 3 tablespoons olive oil with 2 tablespoons white wine vinegar, 1 grated small garlic clove and 1/2 teaspoon each Italian seasoning and sugar.
- Italian BLT Cook 4 thin slices pancetta in a skillet over medium-high heat until crisp, 5 minutes. Mix 2 tablespoons mayonnaise with 1 tablespoon chopped basil; spread on 2 slices country bread.
- Broccoli Rabe with Lemon Ricotta Heat 2 tablespoons olive oil and 1 smashed garlic clove in a large skillet over high heat. Add 3 cups trimmed broccoli rabe, season with salt and cook, stirring, until charred and tender, 4 minutes.
