Quick-Seared Short Ribs With Charred Scallion Salsa image

Typically used for long braises, short ribs are insanely flavorful and have excellent marbling, which means you can and should cook them as you would a more expensive cut: seared on all sides until medium-rare. To serve, thinly slice the meat and top it generously with a mixture of fresh and charred scallions and tomatillos. Set it out with warmed tortillas and hot sauce for a D.I.Y. taco experience, though it's also great over a bed of peppery greens or crunchy romaine.

Number Of Ingredients 11

1 1/4 to 1 1/2 pounds boneless short ribs, at least 1-inch thick
Kosher salt and ground pepper
1 large bunch scallions or spring onions (either red or green spring onions work)
4 ounces tomatillos (6 to 8 tomatillos)
1/4 cup fresh lime juice (from 2 limes), plus 1 lime, quartered
2 tablespoons canola oil
2 teaspoons cumin seed or 1/2 teaspoon ground cumin
1/4 cup olive oil
1 cup cilantro, leaves and tender stems
Tortillas, for serving
Hot sauce, for serving

Steps:

  • Season short ribs with salt and pepper.
  • Thinly slice half the scallions and half the tomatillos and combine in a medium bowl along with lime juice. Season with salt and pepper and set aside. Leave the remaining scallions and tomatillos whole.
  • Heat oil in a large skillet (preferably cast iron) over medium-high heat.
  • Sear short ribs until deeply golden brown on both sides, about 3 to 4 minutes per side. Transfer to a cutting board or platter to rest.
  • Without wiping out the skillet, add remaining whole scallions and tomatillos to the skillet and season with salt and pepper. Cook, turning occasionally, until totally tender and lightly charred in spots, 4 to 6 minutes. Add cumin and toss to coat, lightly toasting the seeds. Remove from heat and, using tongs, transfer the vegetables to a cutting board.
  • Coarsely chop the scallions and tomatillos and place in a small bowl; add olive oil and season with salt and pepper.
  • Thinly slice short ribs crosswise and place on a large serving platter or plate. Spoon charred scallion sauce over the meat. Serve with remaining fresh scallion mixture, cilantro, tortillas, hot sauce and lime wedges for squeezing over the top.

The basics of this recipe came from my mom, and it was passed down to her from her mother and Oma. I changed it a little, and you can too. You can braise in basically any liquid you want. The short ribs come out so delicious and tender, and there is not an overwhelming sauce to overpower them.

1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons all-purpose flour
1 tablespoon olive oil
1 tablespoon butter
1 onion, sliced
1 clove garlic
1 (12 fluid ounce) can or bottle stout beer
1 cup beef stock

Steps:

  • Season the short ribs with salt and pepper, then dredge in flour until coated. Shake off the excess flour.
  • Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat. Cook the ribs until browned on each side, about 5 minutes per side. Remove from the skillet and set aside. Add the onion and garlic to the skillet; cook and stir until onion is tender, about 5 minutes. Return the ribs to the skillet and pour in the beer. Stir, scraping the bottom of the pan, until all of the browned bits have mixed in with the liquid. Pour in the beef stock, cover and simmer over low heat until very tender, about 2 hours.

1 (14.5-oz.) can diced tomatoes, undrained
1/2 cup beef broth
1/2 cup Zinfandel wine or cranberry juice
1/4 cup all-purpose flour
1/4 cup chili sauce
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried marjoram leaves
1/2 teaspoon salt
1/2 teaspoon garlic-pepper blend
2 cups fresh baby carrots
1 medium onion, halved, thinly sliced

Steps:

  • Heat oven to 325°F. Spray 12-inch nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add short ribs; cook 6 to 8 minutes or until browned on all sides.
  • In ungreased 13x9-inch (3-quart) glass baking dish, combine tomatoes, broth, wine, flour, chili sauce, thyme, marjoram, salt and garlic-pepper blend; mix well. Add browned ribs, carrots and onion; stir gently to mix. (Baking dish will be full.) Cover with foil.
  • Bake covered at 325°F. for 2 hours.
  • Uncover baking dish, bake an additional 20 to 30 minutes or until ribs are tender and liquid is slightly thickened.

If you're pressed for time and don't want to bother with fussy ingredients and complicated steps, then this quick & easy short ribs recipe is for you!

6 beef short ribs
Kosher salt
3 tablespoons olive oil
2 medium yellow onions (diced)
4 cloves garlic (sliced into rounds)
1 teaspoon ground black pepper
1 teaspoon dried rosemary
1 teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon chipotle powder ((optional))
3-4 cups beef stock
1 bunch fresh parsley (chopped (for garnish))
2 pounds red or yellow potatoes (skins on and quartered)
1 pound parsnips (peeled and cubed)
1/4 cup butter
1/4 cup sour cream
enough milk to make the puree smooth ((about 1/2 cup))
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees.
  • Combine all the herbs and spices in a bowl and set aside.
  • Heat a large Dutch oven over medium high heat. When it's hot, add the oil.
  • Liberally season the ribs with salt and then brown them in batches and set aside.
  • Reduce heat to medium low and add the onions.
  • Cook the onions for a few minutes until they just start to brown.
  • Add half of the garlic and cook for another minute.
  • Return short ribs to the pot. Try to keep the bone-side facing down.
  • Sprinkle the spice mixture over the meat. If you don't mind getting your hands dirty, you can rub the mixture evenly over each rib.
  • Sprinkle remaining garlic over the top of the ribs.
  • Add enough beef stock to cover the ribs about 1/2 to 2/3 the way up their sides.
  • Cover, place in the oven and braise for 2-2 1/2 hours.
  • While the ribs are cooking, make the potato and parsnip puree. Fill a medium pot with cold water and add some salt.
  • Add the potatoes and parsnips and set on the stove over medium high heat.
  • When the potatoes have cooked, drain off the water, add the butter, sour cream and milk and puree with an immersion blender. You could also do this in a food processor. Mashing by hand works too, but the parsnips require a bit more elbow grease to get properly mashed.
  • Season with salt and pepper. Cover and set aside.
  • Test the ribs with a fork to see if they are done. They should be very tender and just about falling off the bone. You should be able to easily slide the rib off the bone, but you don't want to cook it so much that the connective tissue surrounding the bone completely dissolves.
  • Place the ribs on a platter and cover with foil.
  • Strain the cooking liquid into a large measuring cup and skim off the fat.
  • Add the sauce to a small pot. You have a few choices here. If you are satisfied with the flavor and viscosity, you can leave the juice as is and adjust the seasoning. If you prefer a more concentrated flavor, you can reduce the sauce by boiling. If you like a thicker sauce, you can whisk in a bit of flour while reducing until you get the sauce thickened to your liking.
  • To serve, make a bed of the pureed potatoes and parsnips on a large plate or in a shallow bowl. Place one rib, with bone, in the middle of the bed. Pour sauce over the meat and sprinkle with parsley for garnish.

Steps:

  • Cook ribs in pressure cooker on medium-high heat 4 min. on each side or until browned on both sides. Remove ribs from cooker; cover to keep warm. Add onions and mushrooms to cooker; cook and stir 5 min.
  • Blend A. 1. and chiles in blender until smooth; pour into medium bowl. Add 1 drained can beans, 1 undrained can beans, and tomatoes; mix well.
  • Add ribs to vegetables in cooker; top with bean mixture. Lock pressure cooker lid in place; cook on medium-high heat until pressure vent locks in place and regulator begins to rock gently. Reduce heat gradually to maintain slow steady rocking motion; cook 30 min. Remove from heat. Let stand 10 min. or until pressure vent drops. Remove regulator, then lid; stir in parsley.

1 tablespoon sesame oil

6 cloves garlic, roughly chopped
1 medium onion, roughly chopped
1 medium Asian pear, peeled, cored and roughly chopped
2-inch piece fresh ginger, peeled and finely chopped
2 teaspoons white sesame seeds
3 pounds boneless beef short ribs, cut 1/4-inch-thick (3 to 4 inches long)
Kosher salt
Olive oil, for drizzling
1/4 cup granulated sugar
1/4 cup rice vinegar
1/2 teaspoon red chile flakes
Juice of 1 lime
Kosher salt and freshly ground black pepper
2 cups finely sliced savoy cabbage
1/2 cup torn fresh cilantro leaves
1/2 cup torn fresh mint leaves
1 scallion, finely sliced on the bias

Steps:

  • For the short ribs: Whisk together the soy sauce, rice wine, brown sugar, sesame oil, gochujang and black pepper in a large bowl. Puree the garlic, onion, Asian pear and ginger in a food processor until smooth. Whisk into the soy mixture, then thin down with 1/3 cup water. Stir in the sesame seeds. Submerge the beef in the marinade and refrigerate for 2 hours or up to overnight, if time allows.
  • Remove the beef from the marinade and discard the marinade. Let the chill come off the beef for 30 minutes prior to grilling.
  • Preheat a grill or grill pan over high heat. Sprinkle the short ribs with salt and pepper and drizzle with olive oil. Place on the grill and cook until deeply charred on both sides, 1 to 1 1/2 minutes per side. Remove to a platter to rest while you make the salad.
  • For the banh mi salad: Whisk together the granulated sugar, rice vinegar, chile flakes and lime juice in a large bowl. Season well with salt and pepper, then add the cabbage, cilantro, mint and scallions, tossing to thoroughly coat.
  • Pile the salad up on one side of a platter. Shingle and stack the charred short ribs along the other side. Serve.
