1 cup apple juice
1 cup chunky applesauce
1 cup low-fat vanilla yogurt
¼ cup caramel ice cream topping
2 tablespoons smooth peanut butter
1 tablespoon caramel ice cream topping

Steps:

  • Pour the apple juice into a plastic container and freeze until hard, about 2 hours. Remove from container and break into pieces.
  • Place the frozen juice into the bowl of a blender along with the applesauce, yogurt, 1/4 cup of caramel topping, and peanut butter. Puree until smooth, then pour into 3 glasses; swirl in the remaining tablespoon of caramel topping before serving.

6 tablespoons caramel ice cream topping, divided
1 tablespoon turbinado sugar
1 teaspoon kosher salt
⅛ teaspoon apple pie spice
1 ½ cups spiced rum
8 cinnamon sticks

Steps:

  • Stir together apple cider and 4 tablespoons caramel ice cream topping in a 3 1/2- or 4-qt. slow cooker until smooth. Cover and cook on Low for 3 to 4 hours or on High for 1 1/2 to 2 hours.
  • Mix together sugar, salt, and apple pie spice in a small shallow bowl. Pour remaining 2 tablespoons caramel topping into a small saucer.
  • Dip the rims of 8 mugs or heatproof glasses into caramel topping, evenly coating the rim; then dip into spice mixture. Ladle hot cider into mugs. Add 1 1/2 fluid ounces (3 tablespoons) spiced rum to each mug and garnish with a cinnamon stick.

10 medium tart apples
10 Popsicle sticks
2-1/4 cups packed brown sugar
2 cups half-and-half cream
1 cup light corn syrup
1 cup butter, cubed
1 teaspoon vanilla extract
2 tablespoons sugar
1 tablespoon ground cinnamon
2-3/4 cups white baking chips
3 tablespoons shortening

Steps:

  • Wash and dry apples; remove stems. Insert Popsicle sticks into the bottoms of apples. Place on a buttered baking sheet; refrigerate until ready to use., In a large heavy saucepan, combine the brown sugar, cream, corn syrup and butter. Bring to a boil over medium-high heat. Cook and stir until a candy thermometer reads 248° (firm-ball stage), about 50 minutes. Remove from the heat; stir in vanilla. Dip apples into the hot caramel to completely coat. Place on prepared pan; let stand until set., In a small bowl, combine sugar and cinnamon; set aside. In a microwave, melt white chips and shortening; stir until smooth. Dip one caramel apple into the warm white chip mixture and immediately sprinkle with cinnamon-sugar. Place on a waxed paper-lined baking sheet. Repeat.

2/3 to 3/4 cups apple juice
2 tablespoons firmly packed light brown sugar
1 stick cinnamon (2 inches)
1/2 teaspoon black peppercorn
1 whole star anise
1 1/2 cups peeled and diced Golden Delicious apples
1/2 cup caramel or favorite vanilla ice cream

Steps:

  • Preheat the oven to 400°F. Lightly coat a glass baking dish (such as a 9-inch pie plate) with a nonstick vegetable spray. Line a baking sheet with freezer paper. Set aside.Combine the butter, 2 tablespoons apple juice, brown sugar, cinnamon stick, peppercorns, and star anise in a medium bowl and blend well. Add the apples and toss to coat all over. Transfer the apple mixture to the prepared baking dish and bake for 30 minutes, or until the apples are tender, stirring occasionally. Remove the dish from the oven and place it on a cooling rack. When the apple mixture is cool (remove and discard the spices), transfer it to the prepared baking sheet and freeze for 1 hour or more.When you are ready to make the smoothie, place the remaining 8 to 10 tablespoons apple juice, the apple mixture, and ice cream in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. I've been drinking these every day for the past week and I thought I'd share it with everyone. I'm addicted to my immersion blender and I hope you enjoy the latest concoction. It's like a caramel apple without the stick, or the sticky!

  • Core and peel your apple (s), I use two if the apples are small.
  • Cut apple into chunks and add to blender.
  • Add remaining ingredients.
  • Blend until smooth.
  • Serve immediatly.
