Spiced Caramel Roulade with Ginger Cream image

Vegetable oil
1 1/2 cups all-purpose flour, plus more for dusting pan
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon fine salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
2 (2 1/2-ounce) jars sweet potato baby food (about 1/2 cup)
1/3 cup buttermilk
2 teaspoons vanilla extract
8 tablespoons (1 stick) unsalted butter, softened
1 cup sugar
3 large eggs, at room temperature
Confectioners' sugar, for dusting
1 1/2 cups heavy whipping cream
1 tablespoon confectioners' sugar
1/3 cup thinly sliced (or chopped) crystallized ginger
1/4 cup caramel sauce
Ground cinnamon, for dusting, optional

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Lightly grease, then line a 13 by 18-inch jelly-roll pan with parchment or waxed paper. (Let the paper come up the long sides by about 2 inches - this will make it easier to form the roll.) Brush paper with oil or butter, dust with flour, tap out excess.
  • Cake: Whisk together 1 1/2 cups flour, baking soda, baking powder, cinnamon, cloves, salt, ginger and cardamom together in a medium bowl. In another bowl, combine sweet potato, buttermilk, and vanilla until smooth.
  • Beat butter and sugar in the bowl of an electric mixer on high speed until light and fluffy, about 4 minutes. Reduce to low; add eggs 1 at a time, beating well after each addition. Add flour mixture in 3 parts, alternating with the wet mixture in 2 parts, beginning and ending with flour. Beat until just blended. (If needed, fold batter together with a rubber spatula.)
  • Spread batter evenly in prepared pan. Bake until cake springs back when pressed lightly, about 15 minutes.
  • Run knife around cake edge, and invert cake onto a cotton tea towel (100 percent cotton works best and keeps the cake from sticking) generously dusted with confectioners' sugar. Carefully pull back parchment paper to release, and then place it back on top of the cake. Gently roll up the cake and towel together, starting from the narrow end to make a fat roll.
  • Meanwhile for the filling, whip cream and confectioner's sugar to soft peaks. Fold in crystallized ginger.
  • Carefully unroll the cake and remove the towel. Drizzle caramel over the cake. Spread gingered cream evenly over the cake. Using the short edge of parchment as guide, roll the cake up into a fat, loose cylinder. Transfer to a long platter. Dust with more confectioners' sugar and cinnamon in a Halloween pattern if desired. Serve, now or refrigerate until ready to serve.

SPICED CARAMEL SYRUP



Spiced Caramel Syrup image

While this syrup was created by the pastry chef Daniel Skurnick to pour over his Franco-Chinese steamed ginger-milk custard, it's a good recipe to have handy when you want something to pour over cooked fruit, ice cream or pudding - I like it paired with vanilla, chocolate or butterscotch. It's a quickly made syrup flavored with peppercorns, cloves, nutmeg and ginger. Mr. Skurnick says you should cook the caramel until its color is "Irish-setter red" before adding the spices - it's a perfect description of what you're looking for.

1/2 cup (100 grams) sugar
10 black peppercorns
4 whole cloves
1 slice nutmeg (about 1/4 of a whole nutmeg)
1 1-inch piece fresh ginger, peeled
1/4 cup (60 milliliters) water

Steps:

  • Pour the sugar into a heavy-bottomed medium saucepan set over medium-high heat. Once the sugar starts to color, swirl the pan so that it melts and colors evenly.
  • When the caramel is a light reddish-brown color, or as Mr. Skurnick says, "Irish-setter red" (it takes about 5 minutes to reach this stage), drop in the spices and, standing away from the pan, carefully pour in the water. When it boils, reduce the heat to very low and cook for 2 minutes.
  • Strain the caramel into a heatproof container (discard the spices or use them for tea), and cool completely. You can keep the syrup covered in the refrigerator for up to 1 week. It will thicken; warm gently to reliquefy.

4 cups (2 pints) heavy cream
2 cups light corn syrup
4 cups granulated sugar
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces
1/2 cup unsulfured molasses
1 teaspoon pure vanilla extract
3/4 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves

Steps:

  • Lightly coat a 12-by-17-inch rimmed bakingsheet with cooking spray. Line with parchmentpaper, leaving a 2-inch overhang on shortsides; spray paper.
  • In a large pot over high heat, bring cream,corn syrup, sugar, butter, and molasses to a boil,stirring until sugar has dissolved. Continue tocook over medium-high heat, stirring frequently,until mixture reaches 248 degrees (firm-ball stage)on a candy thermometer, about 20 minutes.
  • Remove from heat, and stir in vanilla, salt, and spices. Immediately pour onto prepared sheet, without scraping pot. Let stand, uncovered, 24 hours at room temperature (do not move pan).
  • Generously coat a large cutting board with cooking spray. Lifting it by the parchment overhang, invert caramel onto the cutting board; use a sharp knife to loosen parchment, and remove. Cut into 1-by-1 1/4-inch pieces. Wrap each in cellophane or waxed paper.

125 g butter, chopped and slightly softened
3/4 cup brown sugar
1 egg
1/4 cup honey
1 1/4 cups self-raising flour
1 cup plain flour
3 teaspoons ground ginger
2 teaspoons mixed spice
1/4 teaspoon bicarbonate of soda
1/3 cup brown sugar
40 g butter
1 1/2 tablespoons milk
1/2 cup icing sugar

Steps:

  • Preheat oven to 180C (350F).
  • Lightly grease and line two baking trays with silicone paper.
  • In a medium bowl, using an electric mixer, beat butter and sugar together until creamy.
  • Beat in egg and honey.
  • In a separate bowl, sift flours, ginger, spices and bicarb soda together.
  • Now, tip the dry ingredients into the creamed mixture and using a flat wooden spoon or long spatula or similar, lightly fold together until the mixture changes from a breadcrumb consistency and forms doughy clumps.
  • Roll tablespoons or heaped teaspoons of the mixture into balls.
  • Arrange on prepared trays 3cm (about 1") apart.
  • Use two fingers to flatten biscuits slightly.
  • Bake for 12-15 mnutes until lightly golden brown.
  • Allow biscuits to sit on trays for a few minutes to firm, before transferring to cooling racks.
  • Caramel Icing:.
  • While the biscuits are cooking, sift icing sugar into a small bowl and set aside.
  • Now, combine brown sugar and butter in a small saucepan.
  • Stir over a medium-low heat until sugar dissolves.
  • Add milk and bring to a boil.
  • Pour caramel mixture into the icing sugar and whisk until smooth.
  • Allow to cool until icing is of spreadable consistency.
  • Using a knife, spread icing over the tops of cold biscuits and set biscuits aside until the icing sets.
  • (It may look like there's not a lot of icing for so many biscuits, but it is sufficient as long as you don't slather it on really thickly).
  • Store in an airtight container.

1/2 stick (1/4 cup) butter, melted
1 egg
1/4 cup all-purpose flour, if needed
1 (17-ounce) jar caramel topping, chilled
1 (14.5-ounce) jar dark chocolate ice cream fudge topping

Steps:

  • Preheat oven to 350 degrees F.
  • Combine the gingerbread mix according to package instructions. Using a tablespoon, roll dough into balls. Place on an ungreased cookie sheet. Slightly flatten each cookie. Bake for 10 minutes. Transfer cookies to a cooling rack and cool completely.
  • Place a scant 1/2 teaspoon of caramel topping on each cookie center. Top with 1/2 teaspoon chocolate topping. Carefully work chocolate to within 1/4-inch of the edge of the cookies. Place in freezer for 20 to 25 minutes to set. Serve immediately.

8 ramekins (small baking dishes)
3 cups heavy cream
1 cup whole milk
1 vanilla bean, split lengthwise and scraped
1 cinnamon stick
4 cardamom pods, cracked
Zest of 1 orange
2 teaspoons freshly grated gingerroot
1 cup sugar
2 tablespoons water
10 egg yolks
½ teaspoon kosher salt
1 cup whipped cream
¼ cup chopped pistachios
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 300 degrees F. Place the ramekins in a deep oven-safe pan or dish. Set aside.
  • In a small saucepan, heat the heavy cream, whole milk, vanilla bean and scrapings, cinnamon stick, cardamom pods, orange zest and ginger over medium heat. Cook until it comes to a simmer. Turn off heat and let it steep for 10 minutes.
  • While the heavy cream is steeping, place the sugar and water in a medium saucepan with tall sides. Before turning on the heat, gently mix until the sugar turns the consistency of wet sand. Then cook the mixture, stirring occasionally, over medium-high heat until the sugar starts to melt and turns deep amber. Turn off the heat and slowly whisk in the warm heavy cream mixture.
  • In a large bowl, whisk together egg yolks and salt. Slowly stir in the warm caramel mixture. Strain this custard through a fine sieve and discard spices.
  • Pour the custard into the ramekins and fill the baking pan with boiling water to halfway up the sides of the ramekins. Be careful not to let the water enter inside the ramekin. Cover the baking pan with Reynolds Wrap® Aluminum Foil and place inside the oven.
  • Bake for 60-75 minutes until the center of the custard is set but still jiggles slightly. Remove from oven and let the ramekins sit in the pan until cool enough to handle. Dry the bottoms of the ramekins and refrigerate for at least 4 hours. Serve with whipped cream and chopped pistachios.
