1 tbsp ghee / clarified butter
1 tsp mustard
1 tsp cumin / jeera
½ tsp saunf / fennel
pinch asafoetida / hing
few curry leaves
½ tsp ginger garlic paste
1 green chilli (slit)
½ onion (finely chopped)
1 tomato (finely chopped)
½ carrot (chopped)
2 tbsp peas / matar
3 beans (chopped)
¼ capsicum (chopped)
¼ tsp turmeric
¾ tsp kashmiri red chilli powder
1 tsp coriander powder
½ tsp garam masala
2 cup cooked rice
1 tsp salt
2 tbsp coriander (finely chopped)

Steps:

  • firstly, in a large kadai heat 1 tbsp ghee and splutter 1 tsp mustard, 1 tsp cumin, ½ tsp saunf, pinch asafoetida and few curry leaves.
  • now add ½ tsp ginger garlic paste, 1 green chilli and ½ onion. saute well.
  • additionally, add 1 tomato and saute till tomatoes turn soft & mushy.
  • further add chopped vegetables and cook for 5 minutes.
  • now add ¼ tsp turmeric, ¾ tsp red chilli powder, 1 tsp coriander powder and ½ tsp garam masala.
  • saute until the spices start to release oil.
  • furthermore, add 2 cups cooked rice and 1 tsp salt.
  • mix gently without breaking rice grains.
  • cover and simmer for 4 minutes.
  • finally, add coriander leaves and serve masala rice with raita or pack to a lunch box.

Masala Rice or spiced rice is a medium spicy dish made with leftover rice, onions, tomatoes, spices and herbs. Makes for a hearty meal with some raita or salad.

2 cups leftover rice (or steamed rice - ensure that the cooked rice is completely cooled)
½ teaspoon black mustard seeds
1 sprig curry leaves (- 10 to 12 curry leaves)
½ teaspoon cumin seeds
1 green chili (- chopped)
1 onion (- medium sized, finely chopped)
1 tomato (- medium sized, finely chopped)
1 pinch asafoetida ((hing) - optional)
¼ teaspoon turmeric powder ((ground turmeric))
¼ teaspoon red chili powder
¼ teaspoon Garam Masala
½ teaspoon coriander powder ((ground coriander))
½ teaspoon fennel powder ((ground fennel))
2 tablespoons oil
salt (as required)
2 to 3 tablespoons coriander leaves (- optional)

Steps:

  • Heat oil in a frying pan or skillet. Fry the mustard seeds on a low heat till they splutter.
  • Add the cumin seeds and fry till they crackle.
  • Now, add the onions and sauté stirring often till they soften and become translucent. Sauté onions on a low heat or medium-low heat.
  • Add the curry leaves, green chili and sauté for 20 to 30 seconds on low heat.
  • Add the tomatoes and sauté stirring often till they turn mushy.
  • Now, add all the ground spice powders and asafoetida along with salt. Sauté the masala or spice mixture for a minute on low heat taking care that the ground spices do not burn.
  • Add the leftover cooked rice. Stir gently and mix well so that the masala coats the rice grains.
  • Sauté for 2 to 3 minutes more, continuously stirring the rice gently on a low heat.
  • Lastly, add coriander leaves and mix with the masala rice or you can even garnish the masala rice with the coriander leaves when serving.
  • Serve masala rice hot or warm with raita or with a salad, pickle and papad.

1 large onion, finely sliced
4 ounces margarine
2 cups basmati rice
1/2 pound fresh peas
1/4 cup golden raisins
1 hot green chili, finely minced
1 clove garlic, finely minced
1/2 inch piece fresh ginger, finely minced
1/2 cup chopped cashew nuts
2 ripe medium tomatoes, seeded and coarsely chopped
Salt to taste
1/2 teaspoon sugar
4 cups boiling water
Grated meat from 1/4 of fresh coconut
1/4 cup blanched almond slices, toasted
1 1/2 teaspoons chopped fresh coriander leaves

Steps:

  • In 2 ounces of margarine saute onions until golden brown.
  • Remove onion and add remaining margarine to pan. When it is hot return half of the onion to the pan with rice, peas, raisins, chili, garlic, ginger and cashews. Saute over low heat, stirring constantly, for about one minute.
  • Add tomatoes, salt to taste, sugar and boiling water; raise heat and bring to boil. Cook until about 1/2 cup of liquid remains in pan. Lower heat, cover and simmer until rice is cooked.
  • Sprinkle with grated coconut, toasted almonds, remaining onion and coriander.

  • Wash the Basmati rice well and soak it in water for around 30 minutes. Soaking helps the rice to cook faster.
  • Dry roast the coriander seeds, cumin seeds and dried red chilli until you get a nice aroma (for around 1 minute on medium heat). Add them to a food processor. Dry roast some coconut and add it to the food processor. Add some water and grind to a smooth paste.
  • Meanwhile, heat some oil in a pan with high sides. Add the cinnamon, star anise, cloves, bay leaf and chilli and fry for a minute. Add the veggies and fry for 3-4 minutes or until they’ve turned translucent.
  • Add the coconut paste, goda masala and turmeric powder to the veggies and mix well. Fry on medium heat for 2-3 minutes or until the coconut paste has cooked and dried up a little. You’re looking for the raw smell to go away.
