1 (16 ounce) can sliced peaches (no sugar added), drained, juice reserved
½ teaspoon ground ginger
½ teaspoon salt
½ teaspoon pepper
¼ cup brown sugar
⅓ cup chopped pecans

Steps:

  • Heat oven to 350 degrees F.
  • Place Bruce's® Yams Cut Sweet Potatoes in a bowl and cut into slightly smaller pieces.
  • Drain the peaches (reserving 4-5 slices for the top of the casserole) and add to the yams along with 1/2 cup peach juice, ground ginger, salt and pepper; stir to mix.
  • Transfer to a 2 quart baking dish; set aside.
  • In a separate bowl, stir together the brown sugar and pecans.
  • Sprinkle over top of casserole and place reserved peach slices in a line down the center.
  • Bake for 35-40 minutes until hot and bubbly.

6 sweet potatoes, peeled and sliced 1/2 inch thick
1 (16 ounce) package frozen unsweetened peach slices, thawed
4 tablespoons butter, sliced into pats
1 tablespoon lemon juice
½ cup brown sugar
½ teaspoon ground ginger
salt
¼ cup coffee flavored liqueur
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer with half of the peach slices and dot with half the butter. Repeat layering with remaining sweet potatoes and peach slices and sprinkle with lemon juice. Combine the brown sugar, ginger, and salt and mix well.
  • Sprinkle the sugar mixture over the potatoes and peaches. Dot the casserole with remaining butter, and pour in the liqueur (see Cook's Note). Cover pan with aluminum foil.
  • Bake in the preheated oven until sweet potatoes are tender, about 1 hour. Remove foil, sprinkle with pecans, and continue baking 10 to 15 minutes, until pecans are toasted and fragrant.

2 tablespoons pure maple syrup, room temperature (if it's cold, the coconut oil will solidify on contact)
1/2 teaspoon ground cinnamon

1 medium sweet potato, scrubbed and cut into one-inch chunks
2 medium peaches, pitted and sliced into4 wedges each
1 medium sweet onion, peeled and quartered

Steps:

  • Preheat oven to 450 degress F.
  • In a bowl, whisk the coconut oil, syrup, cinnamon and salt. Put the potato and peaches in 2 separate bowls. Pour 3/4s of the syrup mixture over the sweet potato and 1/4 over the peaches and toss each. Spread the potato in an even layer in a large baking dish and roast for 10 minutes. Toss the potato and roast for 5 minutes more. Add the onion and roast for 15 minutes. Toss the potato and onion, add the peaches in an even layer, and roast 10 minutes, or until the potato and onion are fork tender and the peaches have caramelized.

Candied sweet potatoes have long been a celebrated side dish during the holiday season but we have removed some of the sweetness (no marshmallows!) and made them even easier by cooking them in a slow cooker. We cut the potatoes into thick rounds so they hold up during the cooking process. The resulting tender sweet potatoes glazed with butter and spices are just sweet enough to make them the perfect accompaniment to your favorite poultry or pork dish.

3/4 cup packed dark brown sugar
1 teaspoon ground cinnamon
Kosher salt
1 stick (8 tablespoons) unsalted butter, melted
1 teaspoon vanilla extract
5 pounds medium sweet potatoes (about 7), peeled and sliced into 1-inch thick rounds
2 tablespoons cornstarch
1/4 cup orange juice
1 cup pecan halves

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Stir together the dark brown sugar, cinnamon and 1/2 teaspoon salt in a small bowl. Stir together the melted butter and vanilla extract in another small bowl.
  • Toss the sweet potatoes with the cornstarch in a large mixing bowl. Put 1 layer of the sweet potatoes on the bottom of a 6-quart slow cooker. Drizzle with a third of the butter mixture then sprinkle with a third of the brown sugar mixture. Repeat to make 2 more layers. (If there are not enough sweet potatoes to make a complete third layer, that is okay.)
  • Cover the slow cooker and cook on low until the sweet potatoes are tender but not mushy, about 4 hours.
  • Meanwhile, spread the pecans out on a baking sheet and bake until very golden brown, 10 to 12 minutes. Let cool and finely chop.
  • When the sweet potatoes are tender, gently stir in the orange juice. Transfer the potatoes to a shallow serving dish and allow to sit for 10 minutes (the sauce will thicken as it sits). Toss the potatoes in the sauce to coat, sprinkle with the chopped pecans and serve.

Salt and pepper
2 tablespoons vegetable oil

  • Heat oven to 450 degrees F and arrange rack in the middle.

1/2 cup pecans, finely chopped

2 teaspoons pumpkin pie spice
1/4 teaspoon cayenne pepper
3 cups miniature marshmallows

Steps:

  • Coat a 5-quart slow cooker with cooking spray. In a large bowl, stir together the sweet potatoes, pecans, butter and orange juice concentrate until combined. 6 small peaches, preferably freestone, peeled, halved, and pitted

Steps:

  • Combine vinegar, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with peaches. Add boiling brine to cover completely. Let cool completely. Cover, label, and refrigerate at least 1 week before serving, or up to 3 months.

  • In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
  • Increase heat & boil until mixture is slightly reduced, about 5 minutes, then remove from heat & whisk in the cinnamon, nutmeg & salt.
  • Arrange1/3 of the potato slices in the prepared baking dish, then top with half of the pear slices, & then with another 1/3 of the potato slices. Finally, arrange the remaining slices of potato & pear on top & on their edge, alternating potato & pear, & overlapping slightly.

2 large sweet potatoes (about 500g/1lb 4oz each)
4 tbsp olive oil
2 tbsp fresh thyme leaves, plus 2 sprigs of fresh thyme
1 red scotch bonnet chilli , seeded and finely chopped

Steps:

  • Peel the sweet potatoes and cut crossways into slices 2.5cm thick. Lay each potato on a large sheet of foil, keeping the slices together.
  • Drizzle each potato with the olive oil, sprinkle with the thyme leaves, about half of the chopped chilli and season with plenty of salt and pepper. With your hands, massage the flavourings into each slice. Replace the slices in their original positions. Lay a thyme sprig across the top of each potato and sprinkle with the remaining chilli. Wrap the foil securely round the potatoes to make two parcels. (You can prepare to this stage up to 24 hours ahead.)
  • Put the foil parcels on the rack over the hottest part of the barbecue and cook for 45 minutes until the potatoes are buttery and softened. (Unwrap and test with the point of a knife to check if they're ready).

These are refrigerator pickles, meant to be kept in the refrigerator, where they will keep for up to two months; so you could pull them out for Thanksgiving, though I doubt you will be able to resist them for that long. Although this recipe calls for a lot of sugar, you will not be consuming the syrup so don't be alarmed by it.

8 medium-size or large ripe-but-firm peaches
Juice of 1 large lemon
1 tablespoon plus 16 cloves
1 1/2 teaspoons allspice, cracked or coarsely ground in a spice mill
1 cinnamon stick
1 vanilla bean, cut in half
1 cup cider vinegar
1/2 cup water
1 cup raw brown (turbinado) sugar

Steps:

  • Bring a large pot of water to a boil and drop in peaches. After 30 seconds, transfer to a bowl of ice water, then drain and skin. Place in a bowl and toss with lemon juice.
  • Tie 1 tablespoon cloves, the allspice and the cinnamon stick in a cheesecloth or muslin bag. In a pot large enough to accommodate all the peaches, combine vinegar, water, sugar, spice bag and vanilla bean and bring to a boil. Reduce heat and simmer 5 minutes. Skim off any foam that rises. Add peaches to the pot and continue to simmer 3 to 5 minutes, until a toothpick can easily penetrate down to the pit. Remove from heat.
  • Using tongs, carefully remove each peach from pot and transfer to a bowl. When cool enough to handle, cut in half and remove pits. Stud each half with a clove and return to pot. Cover and refrigerate overnight.
  • The next day return pot to stove and flip over the peach halves. Squeeze spice bag over the pot to extract fragrant brine, and discard bag. Bring peaches back to a boil and turn off the heat.
  • Pack peaches into hot, sterilized jars. Pour in syrup, leaving 1/2 inch of headspace. Cut vanilla bean into halves or thirds and put a piece into each jar. Seal jars, allow to cool and refrigerate for up to 2 months.

4 medium sweet potatoes (about 2 1/2 pounds), scrubbed well
3 tablespoons extra-virgin olive oil
2 teaspoons ground cumin
1 teaspoon hot paprika
1 teaspoon ground ginger
1/4 teaspoon cayenne pepper
Coarse salt and freshly ground white pepper
Lime wedges, for serving

Steps:

  • Preheat oven to 400 degrees. Slice sweet potatoes in half lengthwise; slice each half into 3 wedges. Place in a medium bowl, and toss with oil, cumin, paprika, ginger, and cayenne pepper. Season with salt and white pepper.
  • Arrange sweet potatoes in a single layer on a baking sheet. Transfer to oven; roast until potatoes are crisp and golden on the bottom, about 15 minutes. Turn, and continue roasting until golden all over, about 15 minutes more.
  • Remove from oven; season with salt and pepper. Serve with lime wedges.

1/2 cup packed brown sugar
1/3 cup coarsely chopped cashews
1/2 teaspoon salt

1 can (15-1/4 ounces) sliced peaches, drained
3 tablespoons butter

Steps:

  • Place sweet potatoes in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 30-45 minutes or just until tender. Drain and cool slightly; peel and cut into cubes. , In a small bowl, combine the brown sugar, cashews, salt and ginger. Place half of the sweet potatoes in an ungreased 11x7-in. baking dish; top with half of the peaches and brown sugar mixture. Repeat layers; dot with butter. , Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until bubbly and heated through.

Place sweet potatoes and peaches in a shallow 2-qt. broiler-proof baking dish. Sprinkle with pecan mixture. , Bake, uncovered, at 350° for 35 minutes. Sprinkle with marshmallows. Broil 4-6 in. from the heat until marshmallows are golden brown.
