SPICY TEQUILA SUNRISE

1 cup gold tequila
1 small jalapeno, halved
3 ounces orange juice
1 1/2 ounces spicy tequila
1/2 ounce grenadine syrup
1 orange slice, for garnish
1 jalapeno slice, for garnish
1 maraschino cherry, for garnish

Steps:

  • For the spicy tequila: Pour the tequila into a small jar and add the jalapeno. Cover and let sit overnight or up to 2 days if you want it really spicy. Strain, discarding the jalapeno. Cover and store in a cool, dark place.
  • For the spicy tequila sunrise: Fill a tall glass with ice. Pour in the orange juice and spicy tequila. Slowly pour in the grenadine and watch it sink to the bottom; do not stir. Garnish with the orange and jalapeno slices and a cherry.

1 quartered jalapeño

Steps:

  • Transfer 1/2 cup reposado tequila (from a 750-milliliter bottle) to a measuring cup. Add 1 quartered jalapeño and let sit for at least 8 hours (for mild) and up to 24 hours (for spicy).
  • Discard jalapeño and return infused tequila to the bottle.

1 splash club soda
1 1/2 ounces Cazadores reposado tequila
1/4 ounce allspice dram
4 dashes orange bitters
Garnish: lemon twist

Steps:

  • Combine the sugar cube and 1 small splash (about 1 1/2 tsp) of club soda in a mixing glass.
  • Using a muddler, pulverize the sugar cube into the club soda to create a paste.
  • Add the tequila, allspice dram and bitters, plus ice, and stir 25 to 30 times until well-chilled.
  • Strain into a rocks glass over fresh ice.
  • Express the oil of a lemon twist over the top of the drink, and garnish with the twist.
