Talk about dorm food, this got me through a lot of studying. I usually serve it over wagon wheel pasta but it will probably go fine over any large pasta or even a chicken breast.

1 teaspoon canola oil
1 onion, chopped
2 garlic cloves, crushed and minced
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can diced tomatoes and green chilies (with chilies and onions such as Del Monte's Diced with Zesty Mild Green Chilies)
1 teaspoon ground red pepper (to taste)
monterey jack pepper cheese, grated (for garnish) (optional)

Steps:

  • Heat the oil over medium heat in a large frying pan.
  • Add the onion and garlic.
  • Stirring constantly, cook until softened. About 2 minutes.
  • Add black beans, tomatoes, and ground red pepper.
  • Simmer until sauce thickens and the ingredients are heated through, about 5-10 minutes.
  • Garnish servings with grated cheese if desired and serve over pasta.

1 (15-ounce) can refried black beans
1/2 cup sour cream
1/2 cup salsa verde
Pinch salt and freshly ground black pepper, plus coarse sea salt and cracked black pepper, for tomatoes
3 medium tomatoes, sliced into 1/2-inch slices
2 teaspoons chili powder
4 jalapenos, sliced
1/4 cup chopped cilantro leaves
3 limes, juiced
2 tablespoons olive oil

Steps:

  • Warm the refried beans in a small pot over low heat.
  • In a small bowl, mix together sour cream, salsa verde, and a pinch of salt and pepper. Set aside.
  • Arrange the sliced tomatoes on a sheet pan. Season the tomato slices with coarse sea salt, cracked black pepper, and chili powder. Put a heaping tablespoon of black beans on each slice of tomato and spread lightly leaving some room on the edge of the tomato. Top with some sliced jalapenos, cilantro and lime juice. Drizzle each slice with olive oil. Begin stacking slices on top of each other 3 to 4 high. Transfer to a serving platter and drizzle lightly with the sour cream mixture, before serving.

1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

1 cup low-sodium chicken broth
cooking spray
1 small onion, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, undrained

⅓ cup plain yogurt
4 teaspoons lime juice
2 teaspoons ground cumin
¼ teaspoon red pepper flakes

Steps:

  • Place 1 can black beans and chicken broth into a blender. Cover and puree until smooth.
  • Heat a large saucepan coated with cooking spray over medium-high heat; cook and stir onion and garlic until onion is tender, about 5 minutes. 1/2 lb ground beef
1/2 cup red onion, chopped
2 garlic cloves
3/4 cup orange juice
8 ounces tomato sauce
1/2 teaspoon red pepper flakes
1 tablespoon cumin
1/4 teaspoon salt
1 tablespoon sugar
16 ounces black beans, drained
16 ounces diced tomatoes, drained
1 cup cilantro, snipped
12 ounces penne pasta
1/2 cup shredded cheddar cheese

Steps:

  • Crumble ground beef in skillet and drain. Add onion and garlic and cook until aromatic.
  • Add orange juice, tomato sauce, garlic, red pepper flakes, cumin, salt, and sugar. Simmer for ten minutes.
  • Meanwhile cook pasta according to package directions and drain.
  • Add black beans and tomatoes to beef mixture until heated through.
  • Dish pasta onto plate and top with beef mixture. Sprinkle with cheese.
