GRANDPA'S BRAISED BEEF

Steps:
- Preheat the oven to 325 degrees F.
- Heat a large skillet over medium heat with a thin layer of extra-virgin olive oil. Add the onions, and garlic to the hot oil and sweat them until very soft and very light caramel in color, 20 to 30 minutes. Turn off the heat and reserve.
- Heat a large Dutch oven over medium-high heat. Add a thin layer of oil to the pan. Pat the meat dry and season very liberally with salt and pepper. Brown the meat to a deep brown all over, 12 to 15 minutes.
- Peel the potatoes and very thinly slice them lengthwise into planks. Slice the tomatoes working over a bowl to catch their juices.
- Arrange 1/2 the onions over top of the meat, season with salt, pepper and 1 tablespoon thyme. Arrange 1/2 the potatoes over the onions and dress the potatoes with a liberal drizzle of extra-virgin olive oil, about 1 tablespoon, salt, pepper, rosemary, and a handful freshly grated cheese. Top the potatoes with 1/2 the tomatoes and their juices, and season with salt and pepper. Scatter a few leaves of torn basil. Repeat the layers. Do not add basil to the top layer of tomatoes.
- Cover the pan and roast the meat in the oven until very tender, 4 hours. Cool and store for make-ahead meal.
- To reheat: Reheat, covered, in a preheated 325 degree F oven until warmed through, 45 minutes to 1 hour. Take off the lid of the pot, drizzle the top of the meat with oil, sprinkle with cheese, and broil to lightly crust the top. Cut down through the layers of the potatoes, tomatoes, and onions to portion the meat, serve in shallow bowls with crusty bread and pan juices.
BEEF WITH SPICY BLACK BEAN SAUCE
Steps:
- Gather the ingredients.
- Cut the beef into bite-sized chunks. Add the soy sauce and wine and then the cornstarch.
- Marinate beef for 20 minutes.
- While marinating beef, prepare the sauce and vegetables. In a small bowl, mix the soy sauce, sugar, chicken broth, and chile paste. In a separate small bowl, dissolve the cornstarch in the water. Set aside.
- Rinse the black beans and let sit for a few minutes to soften. Use a cleaver or knife to chop finely. Mince the garlic and mash with the black beans.
- String the celery and peel the carrots. Cut on the diagonal into thin slices. Cut the green onion into thirds.
- Heat the wok and add 2 tablespoons of oil . When oil is ready , add the scallion. Stir-fry briefly, then add the carrot and celery. Stir-fry until tender and crisp. Remove vegetables from the wok and set aside.
- Reheat the wok and add 3 tablespoons of oil. When the oil is hot, add the mashed garlic and black beans. Stir-fry until fragrant. Add the marinated beef. Stir-fry until there is no redness in the beef.
- Add the sauce in the middle of the wok. Give the cornstarch-water mixture a quick stir and add in the middle of the wok. stirring quickly to thicken. When the sauce is boiling add the cooked vegetables. Mix well. Remove from the heat and stir in the sesame oil. Serve hot.

SLOW-COOKER BRAISED BEEF, PORK AND BLACK BEANS
Brazilian Feijoada is the inspiration for this satisfying slow-cooker meal. Inexpensive cuts of beef and pork are combined with earthy black beans and cooked until perfectly tender. Sautéed greens, white rice and orange segments make this dish a memorable meal.

- Soak beans in cold water 8 hours or overnight.
- Spray 6-quart slow cooker with cooking spray.
- Heat 12-inch skillet over medium heat. Add bacon; cook until crispy and brown. Using slotted spoon, transfer bacon to slow cooker. Season pork shoulder with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Increase heat to medium-high. Cook pork in bacon drippings 3 minutes on each side or until well browned. Transfer pork to slow cooker.
- Season chuck evenly with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Add to skillet; cook about 3 minutes on each side or until well browned. Place in slow cooker. Reduce heat of skillet to medium; add onions to skillet. Cook about 4 minutes or until softened. Add 4 cloves garlic; cook 1 minute. Transfer to slow cooker. Stir to combine.
- Drain beans; add beans, broth and ham hock to slow cooker. Cover; cook on Low heat setting 8 hours or until beans and meat are tender.
- Remove ham hock; let cool enough to handle. Remove meat from hock; shred into small pieces, and return to slow cooker. Stir in vinegar.
- Meanwhile, cut away tough stalks and stems from collard greens. Wash collards thoroughly. Stack up several leaves, and roll up lengthwise in a bundle; cut them into 1-inch strips. Repeat until all leaves are shredded.
- In 12-inch skillet, heat oil over medium heat. Add 4 cloves garlic; cook about 2 minutes or until starting to brown. Add the greens; toss well with oil and garlic. Cook 2 to 4 minutes or until wilted. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Serve beef, pork and beans over white rice with collard greens and orange segments.

SPICY BRAISED BEEF WITH FERMENTED BLACK BEANS

- Season the beef with salt and pepper. Heat 1 tablespoon of the oil in a medium-size Dutch oven over medium-high heat. Working in batches, brown the beef on all side, removing the cubes as they brown to a bowl and adding more oil to the pan as needed; do not crowd the pan. When all the meat has browned, add the remaining tablespoon of oil to the pan. Reduce the heat to medium. Add the onion and black beans, and saute until the onion starts to turn translucent and the beans become fragrant. Add the garlic and cook 15 to 30 seconds longer. Deglaze the pan with the wine, then simmer until reduced by half. Stir in broth, tomatoe puree, bay leaf, thyme and chipotles in adobo suace. Return the beef to the pan. Add water to cover the beef. Bring to a slow simmer, partially cover, and cook until fork-tender, about 1 1/2 hours, depending on the cut of meat and size of the cubes. Stir occasionally. Uncover the pan, and if needed, simmer until the sauce is reduced to desired consistency. Taste and adjust seasoning. Serve on a roll with salad on the side, or serve like a stew with mashed potatoes and a vegetable.

- Cut asparagus on a diagonal into 2" pieces. Cut steak lengthwise into 3" wide strips and cut strips crosswise into 1/4" slices. In a bowl, toss steak with soy sauce, sherry and cornstarch. Rinse black beans to remove excess salt. In a small bowl, mash black beans with garlic and 2 teaspoons oil. In a wok, heat remaining oil over medium heat. Add asparagus and stir fry until tender but still crisp, about 3 minutes. With a slotted spoon, remove to a plate. Return wok to high heat until smoking. Add ginger, scallions, and black bean mixture. Stir fry until aromatic, about 30 seconds. Add beef and cook until browned around the edges but still pink inside, 2-3 minutes. Add stock, oyster sauce, sugar, and asparagus. Stir fry over high heat until sauce is hot and blended, about 1 minute. Remove from heat. Sprinkle with sesame oil and serve.

- Prepare ahead: with a cleaver or large, sharp knife, separate spareribs and chop them crosswise into 1 1/2" lengths. Have spareribs, oil, soy sauce, sugar, fermented black beans and water within easy reach. To cook: Set a 12" wok over high heat for 30 seconds. Pour in oil, covering the bottom of the pan and heat for another 30 seconds. Reduce heat if oil begins to smoke. Add spareribs and stir fry for 3-4 minutes until lightly browned on both sides. Add garlic, soy sauce, sugar, beans and water, stirring to coat spareribs with the mixture. Bring to a boil; cover the pan with a lid and reduce heat to low. Simmer undisturbed for about 1 hour. To serve, arrange spareribs on a heated platter. Skim and discard surface fat from the sauce and remove garlic. Dissolve cornstarch in broth or water and add to pan mixture. Cook, stirring for a few seconds until sauce thickens and clears. Pour over ribs and serve at once.

- Soak the beans in liquid. Put the oil in a large skillet, and turn the heat to high. When the oil is hot, add the onions, and cook, stirring, until they just begin to wilt, 2 to 3 minutes. Remove the onions.
- Immediately add the beef. Cook, stirring occasionally, until the meat loses its redness, about 3 minutes. Add the garlic or ginger or both and lots of black pepper. Turn the heat to medium, and then stir in the black bean mixture, the onions and the soy sauce.
- Taste, and adjust seasoning. If mixture is dry, add a few tablespoons water or stock. Serve with white rice.

- Heat the oil in a small saucepan. Add the Sichuan peppercorns and cook over moderate heat until darkened, about 4 minutes. Strain the oil into a small bowl.
- Heat 2 tablespoons of the strained oil in the saucepan. Add the chiles, garlic and ginger and cook, stirring, over moderate heat until the chiles darken, about 3 minutes.
